This super simple chopped caprese salad comes together easily with cherry tomatoes, fresh mozzarella and pesto. This is great way to use your juiciest and tastiest cherry tomatoes, and with the pesto infusing basil flavor through the salad, it&#39;s OK to make this without fresh basil!

Chopped Caprese Salad with Cherry Tomatoes &amp; Pesto

oz cherry, grape and other baby tomatoes (quartered)

basil pesto (see notes)

extra virgin olive oil (see notes)

salt and pepper

Chop your tomatoes. To get them as uniformly sized as possible, I like to do the following:With round cherry tomatoes, I slice them into quarters from the top down.With more oblong shaped grape / baby plum tomatoes, I halve them lengthways and then cut them again widthways.

Chop your mozzarella. If you have a large ball, cut it into thick slices and then into squares. You want the pieces just a little bigger than the tomato chunks, but not too big.

Add the tomatoes and mozzarella into a bowl. Add salt and pepper to taste and mix through.

Whisk together the pesto and olive oil, and drizzle it in. Mix through, give it a taste test and add additional pesto and olive oil or seasoning if desired.

Serve. You can store any leftovers in the fridge for a few days.

Wow, Christine, this was awesome delicious!!!  I hopped right on it when your email arrived.  I had flavor bomb cherry tomatoes that cost the moon, but they taste like the peak of summer.  I also had bocconcini balls and they were yummy.  I let it all soak awhile before eating.  And I had fresh basil that needed using before tomorrow.  Must be some flavor ESP going on here.  Thank you so much for this winner of a recipe.  I can't wait to get to the store so I can make it again!  Looking forward to your bean recipes.  I am all stocked up with a variety of Rancho Gordo beans and am always looking for new ways to use them.

This Chopped Caprese Salad recipe is always loved by all. Double or triple the recipe to serve at a family get-together or work BBQ. It’s so versatile and delicious with so many foods.

Chopped Caprese Salad Recipe

balsamic vinegar

honey

cherry tomatoes (chopped in half)

Mozzarella Ciliegine ("cherry-sized" whole milk fresh mozzarella)

basil

salt and black pepper (to taste)

Simmer

Add the balsamic vinegar and honey to a small saucepan over high heat. Bring to a boil and then reduce to a simmer. Once it&#39;s reduced by approximately half and thickened to your liking (about 10-15 min), remove from the heat. Be careful it doesn&#39;t get too thick, but a bit syrupy is good.

Toss

Toss all ingredients except for the reduction in a bowl. Drizzle with the reduction, adding a little at a time, tossing, tasting, and then adding more to your liking.

Hey there, stumbled upon this recipe when looking for caprese salads and this was such a winner! I made it pretty much as instructed; the only difference was I added chopped and skinned cucumbers as per another recipe which just added more crunch. Seriously, that balsamic honey reduction? My favorite.  Here is a suggestion I take a inexpensive bottle of balsamic vinegar and pour I the whole bottle in a saucepan and cook to reduce by half when cool pour back in to the bottle and use that on my career salad give a whole new taste to the salad. I keep the remaining in the fridge for later use.
