This twist on the classic bolognese has a gorgeous, deep and smoky flavour. It&#039;s an easy and delicious hearty dinner ready and waiting!

Red Wine Chorizo Bolognese

Dried Spaghetti

/ 500 milliliters Beef Stock

/ 300 milliliters DRY Red Wine ((see notes))

Whole Sun Dried Tomatoes, (finely diced)

tbsp Tomato Puree

Celery, (finely diced)

Carrots,

White Onion, (finely diced)

Garlic, (finely diced/minced)

Bay Leaves

tsp Sugar, (or to taste)

Salt & Pepper, (to taste)

Olive Oil, (as needed)

Parmesan, (to serve)

Basil Leaves, (to serve (optional))

Beef

Beef: Add a drizzle of olive oil to a large pot over medium high heat and add in beef. Fry and break up with your wooden spoon until it begins to brown. Season with a pinch of salt &amp; pepper and continue frying until fully browned. Remove from pot and place in a side dish. Reduce heat to medium.

Chorizo

Chorizo: Add a drizzle more oil if needed, then add in chorizo, celery, carrot and onion. Fry until the chorizo begins to crisp and release oil with the carrot, onion celery just beginning to brown. Add in garlic and fry for 1-2mins longer.

Red Wine

Red Wine: Add in 2 tbsp tomato puree and fry off for a couple of minutes. Pour in red wine, deglaze the pan with your wooden spoon then leave to simmer and reduce for 5mins.

Cook

Cook: Add back in cooked beef, then pour in beef stock and tomato passata. Add sun dried tomatoes, bay leaves, rosemary and seasoning to taste. Give it all a good stir then pop on the lid and simmer for AT LEAST 1 hour 30mins. This is important to tenderize the beef and marry all the flavours together. Take off lid and stir once or twice during.

Pasta

Pasta: Add spaghetti to heavily salted boiling water and cook until al dente. Reserve a mug of starchy pasta water before draining.

Reduce

Reduce: Once you&#039;ve simmered the beef with the lid on, take it off and allow it to reduce down for 10mins or so. I recommend adding a splash of starchy pasta water to help emulsify the fats in the sauce. You won&#039;t need much, no more than 1/4cup.

Serve

Serve: Serve bolognese over spaghetti and top with tiny basil leaves and parmesan. Enjoy!

Spicy Chorizo Bolognese is off the charts delicious. From now on, bolognese should always be made with chorizo. It's an easy to make and healthy dinner recipe that is naturally gluten-free and can easily be made paleo + Whole30 compliant.

Spicy Chorizo Bolognese Recipe

dry spaghetti, linguini, or fettuccini (gluten-free, if needed)

olive oil oil

onion (finely minced)

anchovies

garlic (finely minced)

tomato paste

chorizo

beef

tomatoes

balsamic vinegar

Sea salt (to taste)

Optional toppings: fresh mozzarella, grated parmesan, black pepper, parsley, chili flakes

boil pasta

Bring a large pot of salted water to a boil. Add the pasta and cook for 8-9 minutes, until al dente. Drain the pasta using a colander then put the pasta back into the pot. Drizzle the pasta with olive oil and toss to coat.

saute ingredients

While the pasta water is heating, begin making the chorizo bolognese. Heat the oil in a large skillet over medium-high heat. Add the onion and let it cook until it is golden brown, about 6-7 minutes. Add the anchovies (if using) and the garlic and cook for 1 minute. Add the tomato paste and cook, stirring constantly, for 3 minutes to let it caramelize.

Add the chorizo and ground beef and let them cook through. Add the crushed tomatoes and balsamic vinegar and let the pot simmer gently for 10 minutes. Season to taste with sea salt.

serve

Serve the chorizo bolognese over the cooked pasta and top with any or all of the optional toppings.
