These Vegan Cinnamon and Macadamia Biscuits with White Chocolate Drizzle are crunchy and snappy, have Christmas spices, chocolate (because it’s Christmas, duh!) and the subtle taste of macadamia nuts. The perfect entertaining or gifting recipe!

Vegan Cinnamon and Macadamia Biscuits with White Chocolate Drizzle

250 g plain flour (plus extra for rolling) ((1 cup))

tsp baking powder

tsp salt

g coconut palm sugar / caster sugar ((3/4 cup))

cinnamon powder

80 ml sunflower oil ((1/3 cup))

vanilla essence

chocolate chocolate

Prepare

Pre heat oven to 180°C / 350°F / Gas Mark 4.

Put the dry ingredients (flour, baking powder, salt, sugar and cinnamon) in a mixing bowl.

Mix the linseed / flaxseed egg, oil and vanilla together in a separate bowl. Then add to the dry ingredients.

Add the macadamia nuts. You should have a dough mixture with all ingredients combined. 

Roll

Sprinkle some flour on a firm flat surface. Roll out the dough to a thickness of around 4mm. Use a cookie cutter of the shape of your choice to cut the dough. It may be easier to divide the dough into 3 or 4 pieces and roll each separately (there&#039;s a lot of dough once all rolled out!). 

Place

Place the cut out dough on baking trays covered with a piece of baking parchment (this ensures they don’t stick to the bottom).

Bake

Bake in the oven for 15-20 mins. The trays may need to be turned around half way through the cooking time. If the trays are on different levels of the oven, those at the top may cook quicker, and those on the bottom may need an extra few minutes. 

Remove

When the cookies are ready, they should be only very slightly browned. They may still have a slight softness to them, but they will harden once cool. Place on a cooling rack once out of the oven.

Decorate

To decorate, melt the white chocolate in a bowl over boiling water. Use a spoon to drizzle the chocolate over the cookies. Wait for them to cool, then enjoy.

These light and very almondy amaretti are crisp on the outside and slightly chewy inside. Whip up a batch for edible presents - you can dust them with icing sugar for a pretty finish.

Baking a batch of these easy Christmas biscuits is a fun way to get into the festive spirit. They can be made into tree decorations, be given as gifts or popped into the treat tin at home.

Equipment and preparation: You will need Christmas-themed biscuit cutters and two flat baking trays lined with non-stick baking paper.

Ghribas are Moroccan cookies that come in various flavours, but this chocolate and almond version is one of our favourites. They have a cracked top and chewy centre, and are deliciously rich and fragrant.

Chocolate and almond ghriba

dark chocolate (70% cocoa solids)

Nadiya's chewy, almond and raspberry amaretti have a fresh raspberry hidden in the middle. They make a lovely gift, but are best eaten straight away.

We discovered that cardamom is a really popular spice in Norway, used in many cake and biscuit recipes. Some say the spice was first brought back to the country hundreds of years ago by Vikings who worked as mercenaries in what was then Constantinople (now Istanbul). Whatever the truth, Norwegians are certainly keen on their cardamom.
We made these cookies on a boat on the Geiranger Fjord – a stunning spot.

Cardamom and lemon cookies

225 grams/8 oz butter, softened

150 grams/5½ oz caster sugar

lemon, zest only

250 grams/9 oz plain flour

Push the boat out with these melt-in-the-mouth biscuits filled with homemade jam and vanilla buttercream.

For this recipe you will need a piping bag, a medium star nozzle, a large star nozzle, 3 baking sheets

These gorgeous chewy, chocolate coated florentines make a beautiful gift, if you can bear to part with them!

Traditionally they have one side covered in chocolate, but that doesn’t agree with me – where am I supposed to hold it without getting melted chocolate all over my fingers? So I like to half dip. No messy fingers and I get to taste the florentines in two different ways. 

Ginger and almond florentines

Lebkuchen are traditional German Christmas cookies. Whether you make traditional circles or cut into stars and hearts, friends and family will love these Christmas biscuits. 

You can decorate them in so many ways as well. My favourites are chocolate covered, closely followed by a thin icing - but if you like thick icing don't let me stop you!

The star here is the buckwheat, not only because it makes these cookies gluten-free, but mainly because I feel it brings its own nutty flavour and unique texture, creating a cookie that has softness and a shortbready bite, as well as a subtle smokiness. Those who like a truly chewy cookie might find these a little cakey, but I like chewiness in a cookie and yet find constant excuses to make these.
