So much faster than drop cookies and just as festive, these tasty and decadent Christmas cookie bars have a chewy cookie base and are loaded with festive M&amp;Ms and white chocolate chips. They are a must-make during the busy holiday season!

M&amp;M Christmas Cookie Bars

bread flour

baking powder

baking soda

salt

unsalted butter (at room temperature)

dark brown sugar

white sugar

eggs (at room temperature)

vanilla extract

Christmas M&M’s (plus more for topping)

white chocolate chips (plus more for topping)

holiday sprinkles (plus more for topping)

Preheat the oven to 350°F and line a 9x13 baking dish with parchment paper. Set aside.

In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, cream together the softened butter, brown sugar, and white sugar with a hand mixer until light and fluffy.

Add in the eggs, one at a time, mixing until incorporated.

Add in the vanilla and mix until just combined.

Gradually add in the flour mixture, scraping down the sides as needed. The dough will be thick.

Use a spatula to fold in the M&Ms, white chocolate chips, and sprinkles until evenly distributed.

Press the dough evenly into the prepared pan, topping with additional M&Ms, white chocolate chips, and sprinkles.

Bake for 22-28 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.

Move the pan to a wire rack to cool for at least 30-60 minutes before slicing into bars.

Sugar Cookie Bars

unsalted butter (softened)

all-purpose flour

Christmas nonpareils sprinkles

heavy cream (plus more as needed)

Preheat your oven to 375 degrees F. Line a 9-inch x 13-inch metal pan with parchment paper, use enough paper so that it&#39;s hanging over the sides. (This will make it easier to remove the cookie bars from the pan later.) Set aside.

In the bowl of a stand mixer, mix butter, sugar, and powdered sugar for 3 minutes on medium speed. Add the eggs and vanilla and mix again until combined.

In a medium mixing bowl, stir together the all-purpose flour, salt, and baking powder. Add the dry ingredients to the wet ingredients and mix for about 1 minute on medium.

With a rubber spatula, fold in the sprinkles. (I find adding 2 TBSP at a time can allow for an easier distribution. Just don&#39;t mix too much of the colors will start to bleed into the cookie dough.)

Trasnfer the cookie dough to the prepared pan and press into an even layer.

Bake for 12-15 minutes or until the edges are just starting to lightly brown.

Remove from the oven and allow to cool completely in the pan, about 2 hours.

Once the cookies are cooled, beat the butter, sugar, and salt together until combined. Add in 1 tablespoon of heavy cream and mix medium-high for about 2 minutes. (You can add another tablespoon of heavy cream to thin out the frosting if needed.)

Spread the frosting over the cookie bars, edge to edge, and then top with more sprinkles. Cut into 24 bars and enjoy!

Soft and Chewy Christmas Sugar Cookie Bars Recipe

unsalted butter (softened (but still cold))

almond extract

flour

red jimmies (divided)

green jimmies (divided)

Preheat the oven to 350°F.

Prepare a 9 x 13-inch baking pan by lining with parchment paper.Leave some paper hanging over the sides, to hold when removing the bars from the pan. Set aside.

To the bowl of a stand mixer fitted with a paddle attachment (or a large mixing bowl and electric hand mixer), add butter and sugar. Set the mixer to medium-high power and mix until creamy and well combined. Add whole egg, egg yolk, and both extracts, and mix again to combine.

With the mixer running on low power, slowly incorporate flour, baking powder, baking soda, and salt.

Once a cohesive dough forms, mix in 1 tablespoon red jimmies and 1 tablespoon green jimmies. Reserve the rest for garnishing.

Press dough into the prepared baking dish.Bake for 23-25 minutes, or until edges begin to look golden brown.

Remove from the oven and let the cookie bars cool completely in the baking dish, so they finish baking and the center sets up. Meanwhile, prepare the frosting, following the directions shown below.

Add softened butter to a medium mixing bowl. Using a mixing spatula or electric hand mixer, beat well to get rid of any lumps.

To the bowl, add vanilla and salt, and beat again to combine.

Slowly incorporate powdered sugar, mixing very well to thoroughly combine and remove any lumps.

Frosting

Once bars are cool, use your hands to hold two sides of parchment paper and lift the cookie out of the baking dish. Transfer to a large cutting board.

Using an offset spatula, spread an even layer of frosting over the cookie. Garnish with remaining red and green jimmies.

If desired, use a sharp knife to cut off the edges, then cut the remaining cookie into 12 squares.

In a separate bowl, whisk together flour, baking soda and salt. Then pour flour into batter, roughly a ½ cup at a time, folding batter over itself to smooth any ribbons of flour into the batter. The batter will be very thick.

Add in red and green M&amp;M&#x27;s and chocolate chips to batter and gently combine.

Pour into baking pan and spread evenly. Top with additional M&amp;M&#x27;s and chocolate chips if desired. Bake at 350ºF for 26 minutes.

Remove parchment paper from pan and set on a cooling rack to cool.

Use a knife or bench scraper to divide into 24 squares.
