These homemade Chocolate Peanut Butter Christmas Trees are just like your favorite Reese’s Peanut Butter Cups disguised as a fun and festive Christmas dessert!

Chocolate Peanut Butter Christmas Trees

peanut butter

unsalted butter-melted

Tablespoons brown sugar

vanilla extract

Line 8 x 8 inch dish with parchment paper, leaving the paper overhang the sides so you can easily lift it later and set aside.

Then in a mixing bowl stir together peanut butter, melted butter, brown sugar vanilla and salt, until sugar dissolve. Next, gradually mix in powdered sugar.

Press the mixture into prepared dish. Smooth the top with spatula or simply press it with your palms to flatten into about ½ inch thick layer.

Place it in the freezer until firm enough for cutting.

When the mixture is firm enough, line a tray with parchment paper and set aside.

Using Christmas tree cookie cutter cut out the trees and place them on the tray. Place them in the freezer for 45-60 minutes until completely firm.

Then melt the chocolate and line another tray with parchment paper.

Using a fork, dip each tree into melted chocolate to cover completely. Gently tap the fork to drip of the excess of chocolate. (Since the peanut butter mixture softens really fast at the room temperature, I suggest you to take just a few trees at the time from the freezer, because it’s easier to work with the firm trees!!!) Place chocolate covered Christmas trees on the parchment paper lined tray. Refrigerate until chocolate has set.

Store in the fridge or freeze for longer storage.

I made 18 Christmas trees, but the number depends on the size of your cookie cutter. Mine was about 1 ¾  x 2 ¼ inches. Don’t waste any batter, pick up leftovers, kneed, press with your palms and you will be able to cut out at least 2-3 more trees.

Homemade Reese’s Peanut Butter Christmas Tree

This christmas coconut cake is the festive yet chic centerpiece your holiday dessert table is craving. Or just whip up this buttery cake for any occasion :)

Christmas Coconut Cake

eggs,

unsalted butter, room temperature

sweetened cream of coconut (see note!)*

coconut extract, optional

all purpose flour

baking powder

baking soda

buttermilk

cream cheese, room temperature

unsalted butter, softened

coconut

shredded coconut, unsweetened

Preheat the oven to 350°F. Butter and flour two 9-inch cake pans or three 6-inch cake pans and set aside.

In a stand mixer beat the egg whites with the whisk attachment until stiff peaks form, about 3 minutes, but check periodically. You don&#8217;t want the egg whites to dry out, so make sure not to over beat them. Transfer the egg whites to a bowl and set aside so that you can use the mixer for the rest of the batter!

Beat the softened butter and sugar in stand mixer until light and fluffy, about 3 minutes. Add the coconut cream, egg yolks, coconut extract and vanilla extract and beat for another 2 minutes.

In a separate bowl, whisk together the flour, baking powder, baking soda and salt in medium bowl to blend. On low speed, alternate beating in the dry ingredients and buttermilk into the butter mixture until just blended.  Carefully fold the beaten egg whites into batter.

Pour the batter into the prepared pans and bake for about 45 minutes or until a toothpick inserted into the center comes out clean. Allow to cool.

While the cakes are cooling, make the frosting. Beat the butter and cream cheese together with the paddle attachment until light and fluffy, about 2 minutes. Add the coconut cream, vanilla, salt, and powdered sugar, beating until fluffy, about 2 minutes.

When you are ready to assemble the cake, place one layer on a cake stand. Spread a thick layer of frosting over the top of the first layer. Top with the second layer (and third, if doing a 3 tier cake), and spread the rest of the frosting over the top and sides. It&#8217;s okay if it&#8217;s messy&#8211;you&#8217;re going to cover it with coconut. Sprinkle coconut all over the cake, pressing it into the sides gently to get it to stick.

If decorating, top the cake with a few large sprigs of rosemary to form a little &#8220;forest.&#8221; Sprinkle with additional powdered sugar for a snowy finish. Enjoy!

This was your first ever recipe on the blog! I have made this cake so many times and it is incredible! Seriously, the best cake I've ever had, and everyone agrees. I have successfully made it as cupcakes and you're right there isnt a dome top, but still incredible. I think I usually bake for 18 mins at 350.

This was deeelicious! I highly recommend. 

I used unsweetened coconut cream and found that only adding an extra 1/4 c of sugar to substitute for the sweetened coconut cream in the recipe was perfect, for my tastes. 

I ended up baking the sponge for an extra 5-10 minutes before they were cooked in the center.

I’ve made lots of cakes from the website (all turned out good) but this one is by far the best. Something about the coconut cream makes it so moist. Sometimes my cakes turn out a bit dry, but I’ve made this one about 4 times and it always comes out perfect.

I love this cake recipe! It’s always been a hit whenever I’ve made it. I’m wondering if instead of making it a layered cake if I could make it as a sheet pan cake?

Orange and ginger cake trifle

(225 grams) Jamaican ginger cake, cut into 3cm pieces

tbsp triple sec or other orange liqueur

For the jelly

tbsp caster sugar

500 milliliters smooth orange juice,

sachets vege-gel (enough to set 2 pints – check the instructions)

lime

For the panna cotta

double cream

vanilla pod, vanilla

sachet vege-gel (enough to set 1 pint)

white chocolate, chopped

For the Eton Mess cream

meringue nests

For the toppings

orange

tbsp icing sugar

1.5 litre trifle bowl

For the jelly, put all the ingredients in a saucepan and whisk thoroughly until the vege-gel has dissolved. Bring to the boil over a medium heat, stirring occasionally. Once boiling, remove from the heat, allow to cool slightly, then pour the mixture into the trifle dish. Leave to cool then put the dish in the fridge to set (at least an hour).

Meanwhile, make the panna cotta. Put the cream, vanilla (pod and seeds or paste) and vege-gel in a saucepan, whisk thoroughly, then bring to the boil. Add the chocolate, remove from the heat and whisk until the chocolate has melted. Strain through a fine sieve into a jug, then set aside while you wait for the jelly to set. Give the panna cotta a stir every now and then to help it thicken evenly, but don’t chill it – otherwise it’ll set before it goes in the trifle dish.

Once the jelly has set, put the cake in a bowl and sprinkle over the triple sec, tossing it to ensure an even coating, then arrange the cake on top of the set jelly, squishing the pieces against the glass to create a neat layer. Pour the panna cotta over the top, then put the trifle back in the fridge to set once more (for at least another hour).

Meanwhile, finely zest the orange and set the zest aside. Cut the orange into thin wedges, then lay the pieces flat on a small metal tray. Dust with icing sugar, then either pop the tray under a ferociously hot grill for a minute or 2 or use a blowtorch to char them. Set aside.

Whip the double cream and caster sugar to soft peaks, then crumble in the meringue nests, folding to combine. Spoon the eton mess cream on top of the panna cotta, then top with zest, burnt orange segments and sprinkles.
