A well-cooked prime rib is juicy, full of flavor, and not at all difficult to make. It will be perfect every time with this technique. 

Perfect Prime Rib

standing rib roast (about 1/2 pound per person)

tbsp. kosher salt

black pepper

rosemary

Excellent, super easy recipe and process! Totally useing this every time I fix a rib roast; at least 3 times a year.

The cooking method in this rib recipe was spot on. My oven, however, cooks very hot so I was concerned about 450 degrees to sear the roast so I only left the temp at 450 for 15 minutes, then I turned it down to 400 for 15 minutes, then as recommended, to 350 for the remaining time. We then let the roast sit with foil over it until before dinner which was about 1 1/2 hours--about 10 minutes before dinner we put it back in the oven at 325 degrees.  The roast was perfectly medium rare. I am glad I read this recipe because I've had a problem in the past knowing how long the roast will take ahead of time so that I know when dinner will be served, but this method allowed me to plan the timing for the Yorkshire pudding to sync with the meat. I did not season the meat per this recipe; we prefer simple salt and pepper and not tons of salt, but this cooking method was really good. The meat was juicy yet there was a lot of juices for the Yorkshire pudding. Perfect!

The cook times here are way too long.  We just cooked a 21 pound rib roast and thank God I set the oven at 325 instead of 350, and I checked it often but actually not often enough.  At 3.5 hours total, 30mins at 450 and 3 hours at 325 it measured 140 internal temp.  Way too done.  The total cook time was actually 10 mins per pound, not 15 to 20 and yes my oven is calibrated and accurate.  Our guests won't arrive for 3 more hours so I guess the thing will have to rest for 3 more hours instead of 30 mins.

This recipe came out wonderfully. This was my first time making prime rib it came out perfectly! I actually made in my Le Creuset and it was perfect.

This was the 1st time I have ever cook a prime rib. I followed this recipe and the results were fantastic. My prime rib was a hit and gladly to say I had no left overs. The only thing I did do different was to add dry and fresh herbs. It made this roast that much better.

Here's How to Make the Perfect Prime Rib No Matter What Holiday You're Celebrating.

This tender Slow Roasted Prime Rib is the perfect centerpiece for a holiday dinner. Using a reverse-sear method creates a juicy and tender roast with a crisp outer crust.

Slow Roasted Prime Rib

standing rib roast ((bone-in prime rib))

Roasted Garlic Horseradish Cream Sauce ((optional, for serving))

For ease in carving, ask your butcher to cut the meat off of the ribs and chine (backbone) and tie it back on.

The day before you plan to roast your prime rib, season it liberally on all sides with salt and pepper. Place the roast on a heavy baking sheet with the fat cap side up and refrigerate, uncovered, overnight (or up to 24 hours).

Remove the prime rib from the refrigerator and let stand at room temperature for 2 hours before roasting.

Preheat oven to 250°F with the rack in the lower third of the oven. Place prime rib on a v-rack in a roasting pan with the fat-cap side up.&nbsp;

Roast until an instant-read thermometer inserted into the thickest part of the meat (away from the bone) reads 120-125°F for rare, 128-130°F for medium-rare, or 132-135°F for medium and medium-well. This will take 3-4 hours.

Remove the prime rib from the oven, tent with foil, and let rest for 30 minutes.

Increase oven temperature to 500°F. Uncover the roast and sear it in the oven for 5-10 minutes, until the exterior is brown with a crisp crust.

Carve the prime rib and serve with Roasted Garlic Horseradish Cream Sauce on the side.&nbsp;

Slow Roasted Prime Rib (Reverse Sear Method)

This Creamy Ham And Potatoes Au Gratin Is A Decadent Side Dish That Is A Perfect Accompaniment To A Special Meal - Be It Thanksgiving,

Creamy Ham and Potatoes au Gratin

Frozen peas 1 cup

Cheddar cheese 1 cup

tbsp

All-purpose flour 2 tbsp

Milk

Chicken broth ½ cup

Italian seasoning 1 tsp

Salt

Black pepper

Heat oven

Layer potatoes

Place half of the sliced potatoes in a single layer at the bottom of a 9x13-inch casserole pan. Sprinkle the potatoes with 2 cups of cubed ham and 1 cup each of peas and onion. Place the remaining half of the potatoes in a layer over the ham and peas. Set aside.


Prepare sauce

Melt 2 tablespoons of butter in a medium saucepan over medium high heat. Add 1 tablespoon of minced garlic. Sauté in the butter for about 1 minute until fragrant. Whisk in 2 tablespoons of flour to form a thick paste, and cook for 1 minute.


Add milk and broth

Whisk in 1 cup of milk and ½ cup of chicken broth. Keep whisking until the sauce is smooth with no lumps. Bring to a simmer over medium heat. Simmer for about 5 minutes until the sauce thickens to the desired consistency. 


Add cheese and season

Stir in 1 teaspoon of Italian seasoning and 1 cup of Cheddar cheese. Season with salt and pepper, to taste.


Pour sauce over potatoes

Pour the creamy sauce over the potatoes in the casserole pan and spread it out evenly.


Bake  

Cover the casserole pan with foil and bake in the oven for 50 minutes.


Sprinkle with cheese

Remove the casserole from the oven and sprinkle with the remaining cup of Cheddar cheese. Continue to bake uncovered for 20-25 more minutes until the cheese on top turns golden brown.


Cool

Remove from the oven and leave to cool for 15 minutes.
