This citrus salad is one of our favorite side dishes! To make it ahead of time, segment the citrus, slice and roast the fennel, and whisk together the dressing up to a day in advance. Assemble it when you&#x27;re ready to eat!

Citrus Salad with Fennel & Avocado

fennel

fennel bulb (very thinly sliced)

radicchio leaves (torn)

satsumas orange (segmented)

pink grapefruit (segmented)

avocado (sliced)

pine nuts

pecorino

mint leaves

Sea salt and black pepper

olive oil

lemon juice

garlic (grated)

Dijon mustard

Prepare the roasted fennel according to these directions.

Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, garlic, and Dijon mustard.

In a medium bowl, toss the sliced fennel with a few drizzles of the dressing. Set aside for 15 minutes so the fennel softens a bit.

Assemble the salad on a platter by arranging half of the sliced fennel, all the roasted fennel, radicchio, and half of the citrus segments. Drizzle with a few spoonfuls of the dressing and sprinkle with salt. Layer the remaining fennel and the remaining citrus onto the salad. Top with the avocado, pine nuts, pecorino, and mint. Drizzle with more dressing, sprinkle with salt and pepper, and serve.

Prepare the lemon vinaigrette.

Prepare the remaining ingredients. On a plate or bowl, place the pieces of citrus fruit and avocado. Sprinkle with pistachio. Drizzle with the desired amount of dressing. Gently combine or enjoy as is.

Spicy Salmon Bites with Citrus Avocado Salad

white rice (uncooked, yields about 1 cup cooked)

avocado oil (for pan frying)

jalapeno (finely dice, about 1 jalalpeno)

oranges

avocado

shallots (finely dice)

cucumber (mini cucumber if possible)

Italian parsley (or cilantro, chopped small)

lemon juice (fresh squeezed)

salt (to taste)

black pepper (to taste

furikake (sprinkled over the bowls)

Cube the salmon into bite sized pieces.

Toss it with the spice blend of garlic powder, onion powder, dried oregano, salt, cracked black pepper, paprika and cayenne powder. Toss until the salmon is well coated. Set aside.

In a large mixing bowl, combine finely diced jalapeno, segmented orange, cubed avocado, chopped Italian parsley or cilantro, finely diced shallots, sliced mini cucumbers, lemon juice, olive oil, salt and cracked black pepper. Toss until well combined. Set aside.

Heat avocado oil in a non-stick pan over medium high heat. Add the seasoned cubed salmon to the pan. Cook to your liking.

Assemble the bowls. Add cooked rice to the bottom of both bowls. Top with spicy salmon bites, citrus avocado salad, and a pinch of furikake. Option to add some crushed peanuts for texture. Enjoy.
