classic shepherds pie recipe

Shepherd's pie is traditionally made with a ground-lamb filling, but we make ours with ground beef. The sauce is really simple and flavorful, but the best part is the insanely fluffy mashed potato topping. The whole dish is pretty much the definition of comfort food.

Shepherd's Pie

c. milk

sour cream

black pepper

olive oil

onion,

carrots,

garlic,

thyme

beef

c. frozen peas

corn

tbsp. all-purpose flour

chicken broth

tbsp. parsley,

I like them as smooth as possible—no skin please!

Bulletproof! I’m a rookie in the kitchen, and this has been a hit every time I’ve made it! I added a beef bouillon cube to the beef mixture to kick it up with some thyme, and I added some green onions and cheddar on top of the mash to spice it up a bit. To each their own but this a great foundation to follow! Thanks!

Actually, if you use ground beef instead of lamb it's called Cottage Pie.
I've always used ground beef. I added Worcestershire sauce because it adds a great flavor. Also used frozen peas and carrots. Since this is a recipe using beef I used beef stock not chicken, also added a little Knott beef bouillon for the extra richness. 
It was very tasty. We probably have Cottage Pie once every few months.

I used vegan beef and added soya cheese on top still 10/10 though.

Great recipe.  A little bit of history, if you make it with Lamb it’s called Shepherd’s Pie and if using beef, it’s called Cottage Pie.

We thought this was very good, but I do agree with others that it could use a little more flavor. I followed the recipe to the T, and might consider the following next time ... Add a T of worcestershire sauce, replace chicken broth with beef broth and perhaps use a full C, as opposed to 2/3 -- the liquid didn't make much gravy in my dish. That's it. It was nearly perfect!

I would definitely omit the thyme.  1 tsp. Overwhelming.  Otherwise would have been good. I think the Worcestershire makes sense.

we usually just use instant potatoes, beef mixed with corn and cheese for on top of the potatoes. It is still really good.

This was really good - easy to follow instructions. The fam loved it! I did add a few dashes of worchestershire and a glug of red wine to the broth mixture.

Amazing recipe!! I agree it was a bit bland on its own but I spiced up the potatoes with garlic powder and added some tomato paste and worcestershire sauce and it was perfect!! Will make again!

Delicious!  Added garlic powder when cooking beef, a dollop of tomato paste and a splash of Worcestershire and sprinkled a little shredded cheese on top.

Shepherd's Pie Is The Definition Of Comfort Food

The key to a great shepherd's pie is quality ground lamb. Plus, there should be plenty of aromatics, tender veggies, and fluffy mashed potatoes on top.

ground lamb (or

salt

all-purpose flour

tomato paste

beef broth

Worcestershire sauce

rosemary

peas

corn kernels

russet potatoes, peeled and cut into 1-inch pieces

milk

unsalted butter,

salt and black pepper,

Parmesan cheese

Make the meat filling. Warm the olive oil in a large skillet over medium-high heat. Add the onion and carrots and sauté until softened, about 5 minutes.

Add the garlic, ground lamb, salt and pepper. Cook, breaking up the meat with a wooden spoon, until browned, about 8 minutes.

Sprinkle the flour over the top and cook for 1-2 minutes, stirring constantly, until combined. Add the tomato paste, stir well, and cook for 1 minute. Then, add the beef broth, Worcestershire, rosemary, and thyme.

Bring to a simmer, then reduce the heat to low and cook, stirring often, for 30-40 minutes or until the sauce is thick. Stir in the peas and corn and adjust the seasoning to taste.

Make the mashed potatoes. While the meat cooks, place the potatoes in a large pot and cover with cold water. Add a large pinch of salt and bring to a boil, then reduce heat and simmer until tender, about 15 minutes. Drain well.
