For each marinade recipe, combine all ingredients together in a bowl or glass measuring cup. Whisk well. Pour marinade over 1-1/5 lbs chicken breast.

Refrigerate and marinate for at least 30 minutes.

If using immediately, discard marinade and cook chicken until done (no longer pink.)

For freezing, add chicken and marinade to a freezer safe bag. Squeeze all air out of the bag. Label and lay flat in freezer. Remove and thaw when ready to use or cook from frozen in the air fryer according to directions above.

Sheet Pan Herbed Salmon with Green Beans and Cherry Tomatoes {Paleo}

lb. green beans, de-stemmed (225 g)

cherry tomatoes (170 g)

salmon

garlic (minced)

sea salt (to taste)

Preheat oven to 400F/200C degrees.

Mix together all chopped herbs, garlic, lemon and olive oil in a small bowl.  Season with salt and pepper to taste and stir.  Set aside.

Line a sheet pan with foil, then add green beans in one even layer, then cherry tomatoes and salmon fillets.  Drizzle olive oil (about 2-3 tablespoons) over green beans and cherry tomatoes.  Sprinkle minced garlic over vegetables, then use your hands to coat everything well.

&nbsp;Add herb mixture evenly between salmon filets. Sprinkle with flaky sea salt and freshly ground pepper. Bake for 20 minutes or until tomatoes have burst, beans are tender and salmon is cooked through. Squeeze lemon juice over top and serve immediately.

High Protein Lemon Chicken

Avocado Spray Oil

- Large Heads Broccoli, Florets & Stems Trimmed

(7.05 ounces)

1kg (2.2lb) - Chicken Thigh, Boneless & Skinless, Diced

½ Cup (125 milliliters) - Chicken Stock or Vegetable Stock

Garlic Cloves, Grated

Lemons, Juiced

Honey

½ Tbsp (30 milliliters) - Low Sodium Soy Sauce

Sesame Oil

Seasoning To Taste

(10.5 ounces)

To Taste

Spring Onions (Scallions), Thinly Sliced ((Optional))

Black and White Sesame Seeds ((Optional))

Lemon Sauce

In a bowl, combine chicken or vegetable stock, grated garlic, lemon juice, honey, onion powder, soy sauce, sesame oil, and corn flour in a bowl. Mix well, season to taste, and set aside.

Basmati Rice

Add washed basmati rice, cold water, and a pinch of salt to a saucepan. Bring to a boil, cover, reduce to low, and cook for 12 minutes. Turn off the heat and let it sit, covered, for 4 minutes—fluff and set aside.

Blanch

Boil a pot of salted water. Blanch broccoli for 1 ½ mins, then add buk choy for 30 seconds. Transfer both to ice water to stop cooking and retain colour.

Saute Vegetables

Heat a large pan over medium-high heat and spray with avocado oil. Sauté the drained veggies for 2 minutes, season with salt and pepper, and remove.

Cook Chicken

In the same pan, spray more oil and add diced chicken thigh. Spread out and cook for 10 minutes until golden. Add lemon sauce and cook for 1-2 minutes until thickened. Add sesame seeds (optional) and adjust seasoning.

Portion

Divide into five 750ml meal prep containers: rice, veggies, then chicken. Garnish rice with black sesame seeds.

Store

Store in the fridge for up to 4 days (5 with a vacuum seal) or freeze for up to 4 months. Enjoy!
