DOUBLE FUDGE COCA COLA CAKE

chocolate fudge cake mix

(4 oz) (small box) instant chocolate pudding

eggs

Coca-Cola

salted butter, ((1/2 cup))

tbsp unsweetened cocoa

heavy cream

sugar

tsp vanilla extract

pecans

Preheat oven to 350F degrees.

Spray 9 x 13 baking pan with nonstick cooking spray.

In a large bowl, with an electric mixer, stir together cake mix, dry pudding mix, eggs, oil and Coke for about 2 minutes on medium speed.

Pour batter into prepared baking dish and bake according to package directions (usually 35-40 minutes). Note: The cake will have a slight dip in the center. This is normal. When it is done, a toothpick will come out clean.

For the cake:

In a medium saucepan, over medium-low heat, start melting butter.

Add in cocoa powder and heavy cream (or milk, if using) and stir.

Then whisk in confectioners sugar. Stir briskly with a whisk to get all the lumps out.

Take mixture off heat and stir in vanilla extract.

Pour frosting over cake and evenly spread it out over cake.

Sprinkle chopped nuts on top, if using. I think this cake is best served warm with a scoop of vanilla ice cream.&nbsp;

Coca Cola Cake

oz Coca Cola (1 ½ cups (354 milliliters))

unsalted butter ((226 grams), cubed)

natural unsweetened cocoa powder ((50 grams) see note)

all-purpose flour ((250 grams))

cornstarch

baking soda

baking powder

salt

sour cream ((190 grams))

eggs (lightly beaten. room temperature preferred)

vanilla extract

unsalted butter

Tablespoons natural unsweetened cocoa powder

sugar ((500 grams))

Preheat oven to 350F (175C) and spray a 9x13” (23x33cm) baking pan with baking spray.

Combine 12 oz cola, butter, and cocoa powder in a medium-sized saucepan and heat over medium-heat until butter has melted (the mixture may separate in the saucepan, that is OK). Bring to a boil, stirring frequently then remove from heat and allow to cool while you prepare your dry ingredients.

In a large bowl, whisk together flour, sugar, cornstarch, baking soda, baking powder, and salt.

Pour cola mixture into the dry ingredients and stir until smooth.

Add sour cream, eggs, and vanilla extract and stir again until the batter is smooth.

Pour batter into prepared 9x13 (23x33cm) baking pan and transfer to 350F (175C) oven. Bake for 28-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs or clean. Baking time given is for a metal baking pan, glass or ceramic will take longer to bake (approximately 35-38 minutes).

While cake is in the oven or is cooling you can prepare the frosting.

Pour cola into a clean medium-sized saucepan and cook over medium-high heat until it has reduced in volume so that it is between ⅓ and ½ cup (79-118ml). You will need to carefully pour the cola into a heatproof liquid measuring cup to check if it has been reduced enough.

Once cola has been reduced enough, add butter and salt and continue to cook over medium/low heat until the butter is melted (if the mixture looks a bit separated this is fine, it will come together in the next step).

Remove from heat and add cocoa powder, whisking until smooth.

Add powdered sugar and whisk again until frosting is smooth and lump free and immediately pour/spread over warm cake.

Allow cake to cool and frosting to set before slicing and serving. This cake is great served by itself or with vanilla ice cream!

Combine sugar, flour and cinnamon in a large bowl and mix well using a wire whisk.  Combine butter, the 1 cup of coca cola and cocoa in a pot on the stove and bring to a boil stirring often.

Remove from heat and pour over flour mixture. Mix with a spoon.  Mix buttermilk and baking soda together and pour into cake mixture.  Add marshmallows and continue stirring.(Your marshmallows will not melt)   Add in eggs and vanilla extract.

Pour into a sprayed 9 x 13 inch pan and bake in preheated 350 degree oven for 30 to 35 minutes, testing for doneness.  Frost.

Bring margarine, cocoa and coca cola to a boil on top of the stove. Remove from heat and add vanilla and powdered sugar until frosting is of spreading consistency.  You can either stir in nuts or sprinkle on top of the cake. Spread over hot cake.

Preheat the oven to 350 degrees. Place in a saucepan butter, coke, semi-sweet baking square and bring to a boil remove from heat and add marshmallows and stir until all is blended and the marshmallows are disappear. Set aside to cool enough to tepid or room temperature.&nbsp;

In mixing bowl blend the shortening, oil, vanilla, and sugar until fluffy. Add eggs and buttermilk and beat until smooth. In another bowl mix flour with baking soda, cocoa, baking powder and salt, add half of the flour mixture to shortening, egg mixture, and beat. Scrape bowl time to time to clean the sides off so ingredients are blended in the batter. Add cooled coca-cola mixture and beat. Add remainder of flour and beat until completely smooth about 3 - 4 minutes. The batter will be thick. Place batter into a 13" x 9" x " 2 greased and floured baking pan. Set pan on top shelf in a preheated 350 degrees oven for 35 - 40 minutes. Check for completed baking time with a toothpick. If the toothpick comes out clean by sticking in the middle of the cake its time to come out of the oven and cool.

&nbsp;Frosting In a bowl cream together margarine, cocoa, confectioners' sugar. Slowly add the 6 tablespoons of cream or milk. Add in vanilla. Frost warm cake. Serve with natural vanilla bean ice cream and enjoy.

Preheat the oven to 350°F (180°C), or 160°C for a fan oven. Spray a 9x13 inch (22x33 cm) baking dish with non-stick baking spray.

In a large bowl, combine the dry ingredients: flour, sugar, baking soda, baking powder, and salt until well combined. Set aside.

In a medium saucepan, over medium heat combine a can of Coca-Cola with cocoa powder, butter, and salt. Let the butter melt completely, then bring to a boil and remove from heat. Allow it to cool for a few minutes.

After the Coca-Cola mixture has cooled, pour it into the dry ingredients and whisk until combined. Add the eggs, sour cream, and vanilla extract. Mix well using a whisk until all ingredients are well incorporated. The batter will be relatively thin.

Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.

While the cake is baking, prepare the frosting. In a separate saucepan, add the Coca-Cola. Simmer over medium heat until it is reduced to half.

Add the butter, salt, cocoa powder, and vanilla extract. Set over medium heat, whisking continuously until the butter is fully melted and the mixture is smooth. Remove from heat.

Gradually add the powdered sugar, whisking in between each addition until the sugar is fully dissolved.

Once the cake is done baking, allow it to cool for a few minutes, then pour the frosting over the warm cake. If the frosting has thickened, you can add a splash of milk and warm it up while whisking on the stovetop over medium heat to become spreadable.

Let the cake cool completely and allow the frosting to set before serving.

Preheat the oven to 350 degrees fahrenheit.

In a mixing bowl, add in the sugar and flour then set aside.

Add the butter, oil, coca cola and coca powder to a saucepan and heat over medium heat.

Let the mixture melt and come to a boil, stirring constantly.

To make the frosting, heat the cocoa powder, butter, salt and coca cola over medium heat. Whisk continuously until it begins to steam, but before it boils.

Pour this melted mixture into a bowl that has the powdered sugar and mix together until combined.

Poke holes with a toothpick all over the cooling chocolate cake to allows some of the frosting to seep into the cake when coated.

Pour the frosting all over the cake pan and spread evenly. Allow the cake to cool for another 10 minutes.

Cut and serve with vanilla ice cream and chocolate syrup!

Oh my goodness this cake is delicious! This is a keeper for sure. Hubby had  bought a 2 liter cola (I use a little in my baked beans) and I was hunting the recipe for the coca cola icing and found this recipe for cake/icing. I am so glad I was looking for icing recipe.

The cake was super easy and delicious.  I used a slightly different icing.  (1 stick of butter, 1/4 c. cocoa powder and 1/4 c. coke.  Bring to slight boil and whisk in 3 c. 10x sugar and 1 t. vanilla)
