DOUBLE FUDGE COCA COLA CAKE

chocolate fudge cake mix

(4 oz) (small box) instant chocolate pudding

eggs

Coca-Cola

salted butter, ((1/2 cup))

tbsp unsweetened cocoa

heavy cream

sugar

tsp vanilla extract

Preheat oven to 350F degrees.

Spray 9 x 13 baking pan with nonstick cooking spray.

In a large bowl, with an electric mixer, stir together cake mix, dry pudding mix, eggs, oil and Coke for about 2 minutes on medium speed.

Pour batter into prepared baking dish and bake according to package directions (usually 35-40 minutes). Note: The cake will have a slight dip in the center. This is normal. When it is done, a toothpick will come out clean.

For the cake:

In a medium saucepan, over medium-low heat, start melting butter.

Add in cocoa powder and heavy cream (or milk, if using) and stir.

Then whisk in confectioners sugar. Stir briskly with a whisk to get all the lumps out.

Take mixture off heat and stir in vanilla extract.

Pour frosting over cake and evenly spread it out over cake.

Sprinkle chopped nuts on top, if using. I think this cake is best served warm with a scoop of vanilla ice cream.&nbsp;

oz Coca Cola (1 ½ cups (354 milliliters))

unsalted butter ((226 grams), cubed)

natural unsweetened cocoa powder ((50 grams) see note)

all-purpose flour ((250 grams))

Preheat oven to 350F (175C) and spray a 9x13” (23x33cm) baking pan with baking spray.

Combine 12 oz cola, butter, and cocoa powder in a medium-sized saucepan and heat over medium-heat until butter has melted (the mixture may separate in the saucepan, that is OK). Bring to a boil, stirring frequently then remove from heat and allow to cool while you prepare your dry ingredients.

In a large bowl, whisk together flour, sugar, cornstarch, baking soda, baking powder, and salt.

Pour cola mixture into the dry ingredients and stir until smooth.

Add sour cream, eggs, and vanilla extract and stir again until the batter is smooth.

Pour batter into prepared 9x13 (23x33cm) baking pan and transfer to 350F (175C) oven. Bake for 28-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs or clean. Baking time given is for a metal baking pan, glass or ceramic will take longer to bake (approximately 35-38 minutes).

While cake is in the oven or is cooling you can prepare the frosting.

Pour cola into a clean medium-sized saucepan and cook over medium-high heat until it has reduced in volume so that it is between ⅓ and ½ cup (79-118ml). You will need to carefully pour the cola into a heatproof liquid measuring cup to check if it has been reduced enough.

Once cola has been reduced enough, add butter and salt and continue to cook over medium/low heat until the butter is melted (if the mixture looks a bit separated this is fine, it will come together in the next step).

Remove from heat and add cocoa powder, whisking until smooth.

Add powdered sugar and whisk again until frosting is smooth and lump free and immediately pour/spread over warm cake.

Allow cake to cool and frosting to set before slicing and serving. This cake is great served by itself or with vanilla ice cream!

Combine sugar, flour and cinnamon in a large bowl and mix well using a wire whisk.  Combine butter, the 1 cup of coca cola and cocoa in a pot on the stove and bring to a boil stirring often.

Remove from heat and pour over flour mixture. Mix with a spoon.  Mix buttermilk and baking soda together and pour into cake mixture.  Add marshmallows and continue stirring.(Your marshmallows will not melt)   Add in eggs and vanilla extract.

Pour into a sprayed 9 x 13 inch pan and bake in preheated 350 degree oven for 30 to 35 minutes, testing for doneness.  Frost.

Bring margarine, cocoa and coca cola to a boil on top of the stove. Remove from heat and add vanilla and powdered sugar until frosting is of spreading consistency.  You can either stir in nuts or sprinkle on top of the cake. Spread over hot cake.

Preheat the oven to 350 degrees. Place in a saucepan butter, coke, semi-sweet baking square and bring to a boil remove from heat and add marshmallows and stir until all is blended and the marshmallows are disappear. Set aside to cool enough to tepid or room temperature.&nbsp;

In mixing bowl blend the shortening, oil, vanilla, and sugar until fluffy. Add eggs and buttermilk and beat until smooth. In another bowl mix flour with baking soda, cocoa, baking powder and salt, add half of the flour mixture to shortening, egg mixture, and beat. Set pan on top shelf in a preheated 350 degrees oven for 35 - 40 minutes. Check for completed baking time with a toothpick. If the toothpick comes out clean by sticking in the middle of the cake its time to come out of the oven and cool.

&nbsp;Frosting In a bowl cream together margarine, cocoa, confectioners' sugar. Slowly add the 6 tablespoons of cream or milk. Add in vanilla. Frost warm cake. Serve with natural vanilla bean ice cream and enjoy.

Preheat the oven to 350°F (180°C), or 160°C for a fan oven. Spray a 9x13 inch (22x33 cm) baking dish with non-stick baking spray.

Let the cake cool completely and allow the frosting to set before serving.

Oh my goodness this cake is delicious! This is a keeper for sure. Hubby had  bought a 2 liter cola (I use a little in my baked beans) and I was hunting the recipe for the coca cola icing and found this recipe for cake/icing. I am so glad I was looking for icing recipe.

The cake was super easy and delicious.  I used a slightly different icing.  (1 stick of butter, 1/4 c. cocoa powder and 1/4 c. coke.  Bring to slight boil and whisk in 3 c. 10x sugar and 1 t. vanilla)

Position a rack in the middle of the oven. Then preheat the oven to 350°F. Spray a half sheet pan with nonstick spray and then line it with parchment paper for good measure. Then set aside.

In a large mixing bowl, combine the flour, both sugars, cocoa powder, baking soda, salt, and espresso powder. Stir the dry ingredients well to thoroughly combine.

Make a well in the middle of the bowl and add the eggs, buttermilk, cola soda, oil, vanilla essence, and ground allspice. Whisk the mixture until the batter is fully combined and smooth- the batter should be runny. Then pour the cake batter into the prepared sheet pan and gently tap the pan on the counter to release any air pockets, ensuring the cake reaches the edges and fills the pan.

Bake the cake for 18-22 minutes, rotating the pan at the halfway mark&#8211; or until a toothpick inserted into the center of the cake comes out clean. 

Let the cake cool completely before frosting. 

In a saucepan over medium heat, combine the heavy cream and brown sugar. Whisk the mixture together and bring to a simmer. When the mixture starts to boil, remove the pan from the heat.

Place the chopped chocolate into the saucepan and let it stand for 1-2 minutes. Then use a rubber spatula to stir the chocolate into the cream until a fully melted, smooth ganache forms. Add in the cubed butter, espresso powder, and salt and continue stirring until the butter melts and everything is well combined.

Refrigerate the ganache until chilled but spreadable, about 1 &#8211; 1 ½ hours. You can also cover and refrigerate the ganache overnight. Note: the ganache will harden the longer it&#8217;s chilled; as such, it will need to sit out for about 1 hour to come back up to room temperature to achieve a spreadable consistency for frosting.

After chilling, stir the ganache frosting and then use an offset spatula or rubber spatula to frost the cake, creating swoops with the back of a spoon. Garnish the cake with chocolate shavings, if desired. Slice the cake into wedges and serve immediately. Enjoy!
