Cochinita Pibil

Salt

Roast the banana leaf, if you bought it from the frozen section of the supermarket, wait until it is completely defrosted.

To roast the banana leaf, place it directly over a medium-high heat of your stove, it will start changing color and getting shiny when it gets in contact with the fire. Make sure not to burn the leaves; we just want them to be pliable.

Line your roasting pan with the oven bag and arrange the banana leaves overlapping and leaving some of the leaves hanging. You can also use aluminum foil instead of the oven bag.

The banana leaves give a lot of flavor to the dish, but if you can&#39;t find them use aluminum foil instead of the banana leaves or use an oven bag.

Prepared you banana leaves

In your blender, mix the Achiote (annatto) paste seasoning, garlic, black ground pepper, bitter orange juice or vinegar, cumin, and salt to season.

Achiote Sauce Marinade

Cut the pork meat into medium size pieces (about 2 ½ to 3inches). Place pork meat on the leaves, then pour the Achiote mixture over it. And add the lard to give it more flavor. Marinade for 2-4 hours or overnight.

Add the sliced onion, oregano, &amp; Allspice berries. Fold the ends of the banana leaves over the pork. Wrap tightly with the banana leaves and cover with the roasting pan lid. SEE NOTES above if using alummium foild or an oven bag.

Mix sauce and pork

Bake for 2 1/2 hours in a preheated oven at 350 degrees.

Remove roasting pan from oven and uncover the meat. The meat should be tender. If it isn’t ready, cover it again and return to the oven for another 30 minutes.

Oven-Roasted Cochinita Pibil (Yucatán-Style Pulled Pork)

pork shoulder,

tbsp kosher salt

cloves

(3-inch) Ceylon cinnamon stick

black peppercorns

whole cumin seeds

tbsp whole allspice berries

white vinegar

(70 grams) achiote paste

tbsp Mexican oregano

½ white onion, thinly sliced

Season pork all over with 1 tbsp kosher salt and let sit at room temperature for at least 30 minutes while you make the marinade.

Heat a comal or heavy skillet over medium-high heat. Char the garlic, turning occasionally, until blackened and softened, about 20 minutes.

In the same pan, toast the cloves, cinnamon stick, peppercorns, cumin, and allspice until fragrant, 1–2 minutes.

Transfer the spices to a blender. Add the vinegar, charred garlic, achiote paste, oregano, citrus juice, citrus zest, and 1 tbsp salt. Blend until smooth.

Toast the banana leaves directly over a gas flame or on a hot comal until softened and pliable, about 30 seconds per side.

Line a large Dutch oven with 2–3 overlapping banana leaves. Arrange the pork inside. Pour the marinade over the meat, spreading to coat evenly. Add slices of white onion in between and on top of pieces of pork. Add 2 tablespoons of lard, if using. Cover with additional banana leaves, then top with the lid. Refrigerate at least 4 hours, or up to overnight.

Remove the Dutch oven from the refrigerator and allow the pork to come to room temperature, about 1 hour.

Preheat oven to 300°F. Bake the pork, covered, until tender and shreddable, about 3 to 3 1/2 hours.

Shred the pork directly in the pot, mixing with the marinade and juices. Serve warm with corn tortillas and pickled red onions with habanero.

Cochinita Pibil al Horno (Carne de Puerco Jalada al Estilo Yucateco)

Sazone la carne de cerdo por todas partes con 1 cucharada de sal kosher y déjela reposar a temperatura ambiente durante al menos 30 minutos mientras prepara el adobo.

Calentar un comal o una sartén pesada a fuego medio-alto. Asar el ajo, dándole la vuelta de vez en cuando, hasta que se ennegrezca y se ablande, unos 20 minutos.

En la misma sartén, tueste los clavos, la canela en rama, los granos de pimienta, el comino y la pimienta de Jamaica hasta que estén fragantes, 1-2 minutos.

Pasar las especias a una batidora. Añada el vinagre, el ajo carbonizado, la pasta de achiote, el orégano, el zumo de cítricos, la ralladura de cítricos y 1 cucharada de sal. Licuar hasta obtener una mezcla homogénea.

Tostar las hojas de plátano directamente sobre una llama de gas o en un comal caliente hasta que estén blandas y flexibles, unos 30 segundos por cada lado.

Forre un horno holandés grande con 2-3 hojas de plátano superpuestas. Coloque la carne de cerdo dentro. Vierta la marinada sobre la carne, extendiéndola para cubrirla uniformemente. Añadir rodajas de cebolla blanca entre los trozos de carne de cerdo y encima de ellos. Añadir 2 cucharadas de manteca de cerdo, si se utiliza. Cubrir con más hojas de plátano y tapar. Refrigerar al menos 4 horas, o hasta toda la noche.

Saque el horno holandés del frigorífico y deje que la carne de cerdo alcance la temperatura ambiente, aproximadamente 1 hora.

Precalentar el horno a 300°F. Hornee el cerdo, tapado, hasta que esté tierno y desmenuzable, aproximadamente de 3 a 3 1/2 horas.

Deshebre la carne de cerdo directamente en la olla, mezclándola con la marinada y los jugos. Servir caliente con tortillas de maíz y cebollas rojas encurtidas con habanero.
