This easy and healthy Lemon Basil Chicken Salad recipe is one you will make over and over. Gluten free and full of flavour, this is a great lunch to tote to school or work. Use leftover rotisserie to make it even easier!

Lemon Basil Chicken Salad – Gluten Free

brown rice (*cooked

pepper

½ red onion (diced)

romaine lettuce (torn)

chicken breast (diced)

basil

garlic (minced)

lemon (juiced)

olive oil

sea salt & fresh pepper (to taste)

In a large bowl, combine cooked brown rice, peppers, lettuce, chicken, basil, onion, and garlic and stir well

In a small jar, shake together the lemon juice, olive oil, sea salt and pepper. Pour over the brown rice mixture and stir again to combine.

Serve immediately or refrigerate, covered, until serving

Healthy, tasty Italian styled Rice Salad. Vegetarian friendly as it is or you can add cooked pancetta, tuna or mozzarella in the last step to make it more of a main meal? Great served up as side dish or served up as a sharing BBQ salad.

Italian Style Rice Salad

rice

310 mls Cold water

tbsp Olive oil

lemon (juice)

garlic puree

Sundried Tomatoes (Chopped)

Orange Pepper (Diced)

½ Cucumber (Diced)

Red Onion (Diced)

Cherry

g Sweetcorn (¾ cup) (we used tinned)

60 g Green or/and Black Olives (½ cup)

tbsp Pine Nuts

tbsp Fresh Basil (chopped)

tbsp Fresh Parsley (chopped)

tin Tuna (drained)

Mozzarella (Balls or chopped)

Rice

Cook rice before to give time for it to cool off. Follow instructions in notes below to make sure you cook the rice correctly. If adding Pancetta, cook that off in the sundried tomato oil and allow time to cool.

Dressing

Make the dressing by mixing all the Italian Dressing ingredients together.

Put cooked rice in a mixing bowl and add all the chopped Italian Salad ingredients. Pour the dressing over and mix all in together.

Serve

Serve up in a large bowl or large plate with more fresh herbs.

Here is a great, quick and easy recipe for a rice salad dish. It can be a great addition to any family meal or party, especially in the hot summer months.

Easy Rice Salad Recipe

raw, long grain white rice

onion, sliced thin

scallions, chopped

red bell pepper, chopped

fresh parsley, chopped

Tablespoons fresh mint, chopped

Tablespoon white wine vinegar

lemon juice

mayonnaise

sour cream

salt and black pepper,

Cook long grain white rice according to package instructions.

Place on a large sheet pan to cool.

In a large bowl, combine cooled rice, celery, onions, scallions, red bell pepper and herbs.

In a small bowl, stir together vinegar, lemon juice, mayo and sour cream.  Slowly add olive oil while whisking. Add salt and black pepper, to taste.

Combine to rice mixture with the dressing.

Place lid on bowl or cover tightly with plastic wrap. Refrigerate for a minimum of 4 hours before serving.
