Salting the cabbage before adding the dressing keeps this coleslaw salad crunchy and brings out so much more flavor than without. The dressing is simple &#8212; lime, honey, and olive oil. Since this is 100% mayonnaise-free coleslaw, it&#8217;s picnic-friendly!

Mayo-Free Cilantro Lime Coleslaw

cabbage

Salt

celery stalks, thinly sliced

scallions, thinly sliced

cilantro

lime

extra virgin olive oil

honey

I am a Slaw Snob and this was delicious and easy to make!  It's fresh, light and not weighed down with mayo.  I had a small head of cabbage, so I adjusted the amount of the other ingredients  to suit my tastes.  It is key to allow the cabbage to be salted and drained before using - yes, it does keep it crunchy.  I served it with some BBQ boneless short ribs.  Would pair well with fish tacos or pulled pork tacos.

It is a really good refreshing salad. I do not use celery as my kid is allergic, but it has a perfect combination of flavours.

This coleslaw salad goes well with any meat based dish, but can be also eaten as is, instead of a dinner, for example.

Simple Coleslaw With Apples And Bacon

half of a medium sized cabbage

carrots

apple

bacon

sour cream

g mayo

juice of 1 lime

salt & pepper

Finely slice the cabbage. Shred the carrots on a grater. Cut apples into small pieces.

Fry the bacon on a pan, then cut into small bits.

Mix everything in a big bowl, don&#039;t forget to add a touch of slat and black pepper.

Add the juice of one lime and mix some more. Make sure the mayo and sour cream are evenly distributed.

Simple coleslaw with apples and bacon... Done! :)
