Made completely from scratch, these Funfetti Cookies are beloved by all! They're made from pantry staples and are super easy to make.

Funfetti Cookies

all purpose flour ((180 grams))

cornstarch

½ tsp baking soda

salt

unsalted butter (room temperature (113 grams))

sugar ((150 grams))

egg (room temperature)

tsp vanilla extract

½ cup sprinkles (jimmies)

Combine the flour, salt, cornstarch, and baking soda in a bowl then whisk together and set aside.

Cream the butter and sugar in the bowl of your stand mixer fitted with a paddle attachment, mix on high until light and fluffy. Mix in the egg and vanilla then scrape the bowl down and mix once more until well combined.

Add the dry mixture to the butter mixture and mix on low until almost combined. Scrape down the bowl then add the sprinkles and mix in low until just combined.

Use your spatula to fold in any extra flour hanging about then portion out two tablespoon-sized pieced of dough (40g), roll into balls and top with some more sprinkles.

Place about 2 inches apart on baking sheets lines with silicone mats or parchment paper then chill the dough balls for at least an hour.

Towards the end of your chill time preheat oven to 350F, then bake for about 11 minutes or until the edges are set and cookies are puffed. They will continue baking after removed from oven so allow to cool on the baking sheets for about 5 minutes.

Soft and chewy cookies are jam-packed with white chocolate chips, confetti sprinkles, and a buttery, vanilla flavor thanks to the pudding mix.

Confetti Vanilla Pudding Cookies

All-Purpose flour

baking soda

unsalted butter (softened, do not melt!)

sugar

brown sugar

vanilla pudding mix (dry, instant type)

eggs (room temperature)

vanilla extract

chocolate

rainbow sprinkles (Funfetti / confetti sprinkles)

In the bowl of a stand mixer add the softened butter, and both sugars. Cream until fluffy, and combined.

Add the vanilla pudding mix, eggs, and vanilla extract; continue to beat until combined.

In a small bowl whisk the flour and baking soda together. On low speed, slowly add the mixture to the batter. Combine until dough is thick.

Fold in the white chocolate chips and sprinkles. Once they are mixed into the dough, remove the dough, form it into a ball, and place it in plastic wrap. Chill the dough for one hour minimally, or longer for best results.

Once dough feels firm, preheat the oven to 350°F. Use a 2 tablespoon-size cookie scooper, scoop out the dough balls. Place them on a parchment-lined baking sheet (2 inches apart as they do not spread).

Bake for 10 minutes. The bottom edges will be slightly golden brown and the cookies will firm up as they cool. Transfer cookies to a cooling rack and repeat until all cookies have been baked.

Preheat oven to 385 degrees. Start by creaming the butter and sugars with a stand mixer, like a KitchenAid, or a hand mixer for 4 minutes, or until light and fluffy. Scrape the sides of the bowl to ensure even mixing. Add eggs and vanilla extract. If using birthday cake flavoring, add it in now.

Fold in flour, baking soda, and salt. Be careful to not overmix the flour or it will create too much gluten in the dough. Once the dry ingredients are incorporated, fold in the sprinkles and white chocolate chips.

Roll into balls. Place on a parchment paper lined baking sheet. I suggest using parchment paper sheets on light-colored baking sheets. Bake for 9-11 minutes, just until the edges start to become a light golden color. The cookies will continue to bake once they are removed from the oven, so be careful not to over bake them. Let set up for several minutes.

To make cookies look more gourmet, set aside some white chocolate chips to lightly press into the cookies as soon as they are removed from the oven. You can also sprinkle with extra sprinkles, even though they may not stick well.

They look delicious, but then all cookies look delicious to me.  I haven't had   a bad one yet.  I make a big batch for The Firehouse and extra for me.  I know the guys will love them, they all have a sweet tooth I think...
