This classic blend of corn, green bell pepper and red bell pepper is jazzed up with some taco seasoning. It&#039;s a great easy side dish with loads of variations!

Homemade Mexicorn (Fiesta Corn)

corn kernels

red bell pepper

green bell pepper

taco seasoning (homemade

unsalted butter (plus extra to add at the end if desired)

salt and pepper (to taste)

Melt the 2 tablespoons of butter in a large skillet over medium heat.

Add the bell peppers and saute for 3 minutes until they begin to soften.

Stir in the corn and taco seasoning. Allow the vegetables to cook until cooked through (about 10 minutes).

Salt and pepper as desired before serving.

Extra Virgin Olive Oil

red onion (chopped)

red bell pepper (diced)

green bell pepper (diced)

butter

corn (fresh

salt and pepper

garlic (finely minced (optiona)l)

scallions (sliced)

Heat olive oil in a skillet over medium heat until warm

Add peppers, onions and garlic (if using) to skillet and cook until bell peppers are tender and onions are translucent

Melt butter and then add corn to skillet

Season with salt and pepper (to personal taste) combine contents of skillet together

Turn heat to low and simmer for 10 minutes stirring occasionall
