Prep the chicken. Trim any large pieces of fat from the chicken thighs.  

Make the braising liquid.  In the pressure cooker pot, combine all the ingredients and give a quick stir. Coat the chicken with the braising liquid on both sides when placing the chicken inside the pot.

Cook. Close the Instant Pot with the lid and seal.  Cook on high pressure for 10 minutes.  You can either manually release or natural release.

Chop. Transfer the cooked chicken thighs to a cutting board.  As you slice the chicken with a knife, the meat will shred into pieces.  Serve and enjoy!

Chipotle Chicken Recipe

Place chipotle and ancho chile peppers in a bowl and cover it with water. Cover the bowl and let it sit for 10-12 hours to reconstitute and soften. Drain the water. Slice the peppers open and remove the seeds.

To a food processor or blender, add the peppers, red onion, garlic, salt, cumin, oregano, and black pepper and blitz until a coarse paste is formed. Pour olive oil and blend until smooth.

Place chicken thighs in a Ziploc bag and pound them to 1/2-inch thick with a meat mallet. Add the spice marinade to the bag and seal it. Massage the bag to coat the chicken. Marinate for at least 8 hours.

Preheat a grill with top and bottom plates to medium-high heat. Grill the chicken until no longer pink in the center and the juices run clear, about 5-10 minutes. Use an instant-read thermometer to test for doneness.  Cooked chicken has an internal temperature of 165 degrees Fahrenheit.

Let the chicken rest for 5 minutes. Then, slice chicken into strips, serve, and enjoy!

Place the chicken in a plastic storage bag with the marinade, press out as much air as possible, seal the bag, and squish the chicken around to mix it well with the marinade. Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over MEDIUM-HIGH heat. Add the chicken and cook for 4 minutes, undisturbed. Flip the chicken over and continue to cook for 3 to 4 minutes more, or until well browned on both sides and the internal temperatures reaches 165 degrees F. If chicken is thicker than ½-inch, you'll probably need to reduce heat to MEDIUM and cover the skillet to cook through.

Transfer the chicken to a cutting board to rest for about 5 minutes. Then, slice into bite-size cubes.

Grease the rack of a charcoal or gas grill and prepare the coals or preheat to MEDIUM heat.

Grill the chicken for about 4 minutes per side, or until chicken is cooked through and registers 165 degrees F in the thickest portion,

I loved this receipe for its simplicity.  It is healthy and very satisfying.  We had it for Sunday dinner.and my family enjoyed it.

I'd put the instructions all in one place. At the bottom it never mentions putting the chicken in the marinade.  Not a huge deal but I had to jump around the page to get all of the instructions.

I used a teaspoon chipotle chilli powder in this recipe and it was delicious! Roasted corn with Parmesan cheese and cilantro lime rice as well as cilantro lime dressing!

OMG! I made a quick and dirty version of this by making the seasoning/marinade and sauteeing it with some shredded chicken. It tastes like Chipotle's chicken recipe. The flavor was great, and this is one of the few recipes both of my picky kids loved. I swear they have completely opposite taste buds.
