In her book, “Poilâne, The Secrets of the World-Famous Bread Bakery,” Apollonia Poilâne, who heads the legendary Parisian boulangerie, describes the sweets in her shop as pâtisseries boulangères, bread-bakers’ pastries, which are typically less sweet, less fussy and less fussed over. These corn shortbread-style cookies, known as sablés in French, fit into that category perfectly. They’re made with all-purpose flour and corn flour – corn ground so fine that you can barely feel a bit of grit when you rub a little between your fingers. (Do not use cornmeal or cornstarch.) Baked, the cookies have the characteristic sandiness of sablés and the beautiful golden color of corn. To get the best texture, make sure your butter is soft and creamy. The dough is a pleasure to work with and, because it holds its shape when baked, a good choice for fanciful cutouts. At Poilâne, the cookies are always cut into simple rounds, so that, as Apollonia says, “they look like minisuns.”

Poilâne’s Corn Sablés

In a large bowl, working with a mixer on medium speed, beat the sugar, egg and egg yolk until pale and creamy, about 2 minutes. Add the butter, and beat until well blended, about 2 minutes. Add the corn flour and all-purpose flour to a medium bowl, and whisk until combined. Reduce the mixer speed to low, add the flour mixture and mix until just incorporated.

Lightly flour a work surface, and turn the dough out onto it. Divide the dough in half, and shape into 2 discs. Wrap in plastic, and refrigerate for 30 minutes. (The dough can be frozen for up to 3 months; thaw for at least 3 hours at room temperature before rolling.)

Line two baking sheets with parchment paper.

Lightly flour a work surface and a rolling pin. Working with 1 piece of dough at a time, roll the dough out 1/4-inch thick, reflouring the surface and pin as needed. Cut out 2-inch rounds, and place 1/2 inch apart on the baking sheets. Gather the scraps, reroll and cut out more cookies. Refrigerate the cookies on the baking sheets for 30 minutes before baking. (Alternatively, you can stack the cut-out rounds between sheets of parchment or wax paper, cover and refrigerate; place on baking sheets when you’re ready to bake the cookies.)

Position racks in the upper and lower thirds of the oven, and heat to 350 degrees. Bake the cookies until the centers are set and the edges are very lightly browned, 17 to 19 minutes. Rotate the pans from top to bottom and front to back halfway through the baking time. Immediately transfer the cookies to a wire rack, and let cool completely. Store the cookies in an airtight container for up to 1 week.

Slowly add the warm water to the dry masa flour in your bowl, stirring the masa to incorporate evenly by hand (or in a standup mixer with paddle extension).

Knead until the water is evenly incorporated and no dry, powdery spots remain. Tortilla masa should be moist to the touch, but not tacky (leaving bits of wet masa on your hand and fingers).

Once masa is well combined, add optional salt, spices and seasonings to taste, evenly incorporating throughout finished masa.

Heat Comal or nonstick skillet on the stove to low-medium heat.

Roll masa into ping pong sized balls, placing them back into the bowl once rolled.

Once all masa is rolled into balls, turn Comal or skillet up to medium/medium-high heat.

Open tortilla press and place the first sheet of plastic down. Place one ball of masa on the plastic, and press down slightly to flatten. Add second piece of plastic on top of the masa ball. Close the tortilla press, applying pressure to flatten the dough, aiming for a tortilla 1/16&quot; thick.

Open press, removing the top sheet of plastic and placing the uncooked tortilla on your palm before removing the second piece.

Gently lay the tortilla on the hot Comal or Pan (no oil is required), searing for 20-30 seconds on the first side. Flip the tortilla to allow the other side to sear for the same amount of time. One last flip, to land back on the first side, is where the tortilla will finish and where you may see the elusive tortilla puff! Continue cooking all tortillas.

Store tortillas in a clean dish towel once cooked, which will allow them to steam and soften slightly. Serve immediately.

Preheat oven to 350F/180C. Spray loaf pan with oil and lightly sprinkle with flour. (This will help to stop the bread from sticking when inverted).

In a small mixing bowl add the cornmeal, flour, cane sugar, ground chia, and baking powder. Mix to combine.

In a medium mixing bowl whisk together avocado oil, coconut milk and almond milk. Slowly add the dry ingredients and fold together with a spatula until just combined.

Pour the mixture into a prepared pan. Gently tap on the counter to remove air bubbles. Bake for 40 to 50 minutes, or until the edges of the loaf are lightly browned and a toothpick inserted into the middle of the loaf comes out clean.

Let the loaf cool on a cooling rack for 10 minutes, then invert onto the cooling rack.

The Best Vegan Cornbread from Scratch! - Two Spoons

Corn bread loaf, the way you would find it in a French bakery.

Corn Bread Loaf - The French Way

+ 1 tbsp corn flour (50 g)

¼ tsp salt (1 g)

+ 1 tsp water (70 ml)

bread flour (250 g)

salt (5 g)

½ tsp instant dry yeast (2 g)

+ 2 tbsp water (150 ml)

In a small bowl, put together the corn flour and the salt. Bring the water to a boil and stir it in the corn flour. Refrigerate while you make the dough.

In the bowl of your stand mixer, put the flour, salt, yeast and water. Mix on first speed with the hook for 4 minutes and on second speed for 6 minutes. Add the cornflour mix to the dough and knead by hand until incorporated - I tried with my stand mixer but the hook couldn&#039;t work the dough properly.The dough is going to be sticky which is completely normal.Leave at room temperature, covered, for an hour. You can also put it in the fridge for 10 hours.

Shape as a ball to give it a bit of strength and let rest for 10 minutes, covered with a plastic.Prepare one dish with water, another one with cornmeal and grease the loaf pan.Shape the dough as a bread loaf, dip the top part in the water and in the cornmeal.Slice with a blade or a serrated knife and place in the loaf pan. Cover and proof for one hour.

Halfway through proofing, preheat the oven to 480°F - 250°C and place a tray in the oven, on the bottom rack.

When the bread is proofed, put in the oven, throw a small glass of water on the bottom tray to create some humidity and bake for 16 minutes. Remove the bread from the pan and finish baking for 10 more minutes on the rack to dry it out. If the bread is getting to dark, put a parchment paper sheet on top.Allow to cool down completely on a rack before cutting.

Masa Harina &amp; Bay Leaf Gelato with Masa Shortbread

(440 grams) whole milk

(230 g) heavy cream

½ Tbsp (80 g) sugar

(30 g) Heirloom Yellow Corn Masa Harina

sea salt

bay leaves (not dried)

Butter

½ Tbsp (200 g) unsalted butter,

lemon

(95 g) Heirloom Yellow Corn Masa Harina

(90 g) all purpose flour

Tbsp + 2 tsp (45 g) potato starch

¾ cups, lightly packed (70 g) freeze-dried sweet corn

(70 g) date sugar (aka date powder)

¼ tsp fine sea salt

nutmeg

In a medium saucepan, whisk together the milk, cream, sugar, masa harina, and salt.

Add the bay leaves and bring the mixture to a simmer over medium heat, whisking frequently (you want to make sure nothing sticks to the bottom of the pan). Once bubbling begins, continue to simmer (not boil!), whisking constantly, for 5 minutes. The mixture will have barely thickened—it will achieve a pudding consistency as it cools.

Remove the pan from the heat and whisk in the honey.

Strain the liquid through a fine-meshed sieve into a storage container with an airtight lid. Let it cool slightly, then chill it in the refrigerator for 2 hours or overnight.

Once it’s chilled, give it a good whisking to make sure it’s smooth, then run it in your ice cream maker according to the manufacturer’s instructions.

Serve it immediately as a soft-serve gelato, or store it in the freezer for up to a month. If you do the latter, let the gelato temper (soften) in the refrigerator for 15 minutes before serving.

Position a rack in the middle of the oven and preheat the oven to 300°F. Lightly grease two 6-inch round metal pans or one 8-inch square metal pan and line the pan(s) with parchment paper.

In a stand mixer (or in a bowl with a hand mixer), beat the softened butter with the lemon zest on medium-high speed until it’s creamy.&amp;nbsp;

In a food processor, combine masa, flour, potato starch, freeze-dried corn, date sugar, salt, and nutmeg. Pulse a few times to break up the corn, then continue to process for about 1 minute to pulverize everything to a fine powder.&amp;nbsp;

Scoop half the dry ingredients into the butter and mix just until all the dry ingredients are moistened. Add the remaining dry ingredients, and mix until it forms an even, loose, sandy texture.

Empty the dough onto your parchment-lined pan(s) and press it very hard (use your body weight) with your fingers and the heel of your hand to form a level surface. Use a fork to gently score cut lines that divide the dough into 16 cookies (8 wedges each if you are using round pans; 16 squares if you are using a square pan).&amp;nbsp;

Bake until golden, 25 to 30 minutes. Just after taking the shortbread out of the oven, with the shortbread still in the pan(s), use a sharp knife to slice along the scored lines. Let cool completely before serving (they are even better after a couple of hours) and store in an airtight container at room temperature for up to 2 weeks.

A crackled top with a soft yet dense centre, Portuguese corn bread (Broa) is perfect served with salted butter. These thin slices are made for dipping into soups or a soft-boiled &#39;dippy&#39; egg.

Portuguese Corn Bread (Broa)

400 g strong white flour (plus extra for dusting)

cornmeal flour

g yeast

salt

350 ml warm water

olive oil

In a medium bowl, mix together the strong white flour with the corn meal flour. Stir in the yeast and salt. 

Immediately pour in the warm water and combine with a wooden spoon until you get a sticky dough.

Dip your hands in the leftover flour and shape into a rough ball with your hands. Place in a clean bowl, sprinkle with a tiny bit of flour and leave to rise in a warm place, until double in size. About an hour but keep checking.

Flour your surfaces by sprinkling some where you&#39;ll be kneading. Knock back your dough by punching it with your hands until it deflates. Tip it out onto the surface and create a rough ball shape again. Cut the dough in half with a d-scraper or knife. Shape into two smaller dough balls, about 15-20cm wide.

Place the two dough balls onto an oiled tray and sprinkle with more flour. This will give the crackled effect. Cover with a tea towel and leave to prove again in a warm place. About 30 minutes.

Once doubled in size, bake in an oven at 200°c for 35 minutes or until hollow when tapped on the bottom. Leave to cool or serve warm.

Once you have home ground grits, you&#39;ll never buy that packaged stuff again. They&#39;re just better. They are packed full of flavor, so nourishing, and because they are freshly milled - much healthier. Grits are a delicious &quot;bed&quot; for savory meats - like braised pork or shrimp. They are also excellent as a breakfast side served with runny or scrambled eggs. And if you&#39;ve never had cheesy grits, you&#39;re in for a treat!

Home Ground Grits

Water

Using your home mill, coarsely grind white or yellow corn into grits. In a heavy bottomed sauce pan, bring 4 cups of water to a boil.

Reduce heat to medium and slowly whisk in grits, breaking up any chunks as you pour. Add salt and butter and stir until thickened, roughly 3 minutes.

Cover and reduce heat to a simmer. Cook for 20-25 minutes. Serve warm.*

"Non-hominy grits" seems to mostly be deceptive marketing for polenta. At least in the Midwest and South of the U.S. grits exclusively refers to ground hominy, with the other kind going by polenta or mush.

Glad this is the first comment! Where I've lived in the U.S. (great lakes region, south, and now pacific northwest) grits are pretty ubiquitous and found at every grocery store, but if you are somewhere that grits aren't common your next best bet is a latino grocery. They'll often sell dried hominy.

Thank you for sharing all this helpful information! I have a mockmill and find that even when I mill the corn on a course setting, much of it comes out too fine. This part of this grits taste like I have boiled cornmeal rather made grits. Do you ever sift or how do you prevent making fine pieces? Thank you!

I’m not sure if these are “true grits” or not   but honestly who cares? This recipe is simply amazing. I don’t even like grits, but I’d eat these with every meal. Do yourself a favor and try this recipe!

I added cheese (probably 2 cups shredded) and served them with fried fish. They were a huge hit!

I'm sorry but what you are describing here is not grits at all.  The corn has to be nixtamalized -- soaked in a lye solution -- before is can really be called grits.  True grits are actually hard to find.  Michael
