These cornbread muffins are full of cheese and jalapeno peppers, and are the perfect accompaniment to a giant bowl of chili with some honey drizzled on top.

Jalapeno Cheddar Cornbread Muffins

jalapenos,

sugar

honey

butter

eggs,

tsp baking soda

buttermilk

tsp salt

cornmeal

flour

cheddar cheese

Preheat your oven to 350°. Prepare muffin tins...

Preheat your oven to 350°. Prepare muffin tins by lining and spraying, or if your muffin tin is well seasoned or you have the fancy silicone kind, just spray it with baking spray and skip the liners.

Mix together the sugar, honey, and melted butter...

Mix together the sugar, honey, and melted butter until they are combined. Add in your eggs, baking soda, and buttermilk. Whisk for 1 minute, or until the mixture is well combined. Add in the salt, cornmeal, and flour. Mix only until moistened. Do NOT overmix! Add in the jalapeno and cheddar last and gently stir in.

Place in prepared muffin pan and fill until...

Place in prepared muffin pan and fill until slightly heaped. Bake for 15-20 minutes, or until golden brown and a toothpick comes out with moist crumbs.

Cornbread Muffins Recipe

yellow cornmeal ((190 grams))

all-purpose flour ((120 grams))

baking powder

sugar ((66 grams))

salt

milk ((180 milliliters))

unsalted butter (melted and cooled slightly (113 grams))

egg (lightly beaten)

Preheat the oven to 400°. Lightly spray a 12-well muffin pan with cooking spray or lightly coat with softened butter.

In a large bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt.

In a medium bowl, whisk together the milk, melted butter, eggs, and honey. Create a well in the center of the cornmeal mixture and add the milk mixture. Stir until just combined.

Divide the batter evenly in the prepared muffin pan (about 1/4-cup per well).

Bake for 15 to 18 minutes or until a toothpick inserted into the center comes out clean. Serve warm with honey.

These we always be my go too. I’ve doubled the recipe it it works great too! My best luck has come from over filling the muffin tins and topping with butter!

Fantastic cornbread recipe with a lovely crumb. These muffins really transport me back home to the US. I used a very yellow polenta as my corn meal which I recommend for the most gorgeous yellow hue and added some jalapeño, red chili and cheddar and these were superb. I reduced the sugar by 10 grams but next time will keep to the recipe. John is to be trusted. :)

These were tasty but a little crumbly possibly from the recipe calling for more cornmeal than flour. Still good though!

Thanks for this easy and excellent recipe!  I baked these to go with our traditional Christmas meal (homemade chili) and they turned out fantastic!  I did cut the sugar by half and they were FANTASTIC.  Right out of the oven, I topped with some salted butter and...OMGOSH.

A true test of cornbread, for me, is the texture on day two.  It can frequently be dry...  Well, these hit the ball out of the park!  They were still fluffy and tasted just as good the second day.  Just popped them in the microwave for 30 seconds and had the salted butter at the ready!
