Cornes de gazelle

cl d'eau de fleur d'oranger

800 g de farine

300 g de beurre

kg d'amandes en poudre

320 g de sucre en poudre

c.à.s de miel (liquide)

pincée de muscade

c.à.c de cannelle

g de beurre

blanc d'oeuf

Préparer la farce : placer les amandes dans un saladier et mélanger avec le sucre, la muscade, la cannelle, le miel et le beurre ramolli, puis ajouter l'eau de fleur d'oranger au fur et à mesure. La pâte doit être bien homogène.

Préparer la pâte : placer la farine dans un saladier, y ajouter le sel et mélanger. Ensuite, y verser le beurre fondu et malaxer la pâte à la main. Il faut quelques minutes pour le la pâte obtienne une consistance convenable.

Ensuite, on y ajoute le blanc d'oeuf tout en continuant à pétrir la pâte et en y ajoutant régulièrement un peu d'eau et une fois sur trois, un peu d'eau de fleur d'oranger.

Arrêter le pétrissage lorsque la pâte est suffisament souple, puis la laisser reposer 10 minutes.

Répartir la pâte en 4 ou 5 pâtons que l'on étend au rouleau pour atteindre 1,5 à 2 mm d'épaisseur. 

En tirer des bandes de pâte carrées de 15 cm environ.

Composer les cornes de gazelle : prendre 1 cuillère à soupe de préparation aux amandes et lui donner une forme de cigare, que l'on place au centre de la bande de pâte. Refermer la bande de pâte sur la préparation et bien souder la pâte avec les doigts.

Supprimer les parties superflues (on doit obtenir une forme de demi-lune) et pincer les extrémités. Recourber l'ensemble pour lui donner une forme de croissant, que l'on place sur une plaque allant au four recouverte de papier sulfurisé. Espacer les cornes de gazelle : elles vont gonfler un peu pendant la cuisson.

Préchauffer le four à 230°C (thermostat 7/8) et baisser à 180°C (thermostat 6) juste avant d'enfourner.

Cuire les cornes de gazelle pendant 15 min environ (à adapter selon votre four). Elles ne doivent pas être trop dorées !

🇩🇿 Algerian Sugar Coated Almond Filled Crescent Cookies - Tcharek Msaker

all purpose flour

unsalted butter, melted

sugar

tsp salt

orange blossom water

vanilla powder

Water

almond flour

tbsp unsalted butter, melted

tbsp orange blossom water

cinnamon powder (optional)

water

Sift the flour, vanilla, salt and powdered sugar.

Add butter and mix with your hands until the butter is well incorporated.

Add orange blossom water and mix it well.

Add water, one tablespoon at the time until the dough gets together and is soft. Make sure to not knead the dough.

Cover the dough with plastic wrap and let rest for at least 20 minnutes on the counter.

Prepare the filling by mixing the almond flour, sugar, vanilla powder, cinnamon and butter.

Add orange blossom water, one tablespoon at the time until obtain a well gathered paste.

Form small balls, the size of walnuts and cover with plastic wrap.

Get back to the dough and form small balls, the size of small tangerines.

Cover the balls of dough with plastic wrap.

Take one ball of dough at the time and roll it into a small log with your hand.

Use a rolling pin and roll out the log into a rectangle ( not perfect though).

Roll a ball of filling paste into a thin log.

Place it in one edge of the rectangle of dough.

Roll the dough over the filling to make a log.

Using your 2 hands, roll the log from the sides to make them thinner than the center.

Form a crescent shape cookie dough.

Continue forming the crescent shape cookies or Tcharek until you deplete all the dough.

Prick the crescents or Tcharek with a toothpick in the bottom.

Place in a baking sheet and bake in a 350°F preheated oven for about 15 to 20 minutes or until slightly golden from the bottom.

Let cool completely.

Prepare the syrup by putting water and sugar in a saucepan over medium heat. Bring to a boil and let simmer for 15 minutes. Add the orange blossom water in the last 2 minutes. Let cool.

Dip the Tcharek in the syrup and let the excess syrup drain.

Place the Tcharak in a bowl of powdered sugar. Make sure it is well coated and  smooth out the surface with hands.

Sift powdered sugar on top to make the Tcharak or crescent cookies look nicer.
