Coronation Chicken Salad is a timeless British classic that got an facelift! A winning combination of the savoury, sweet and spicy this salad is a hit!

Coronation Chicken Salad

chicken

tbsp spring/green onions (sliced)

apricots (chopped)

tbsp sliced almonds (toasted)

tbsp fresh coriander/cilantro (chopped)

tbsp black sesame seeds (or nigella seeds)

salt (to taste)

80 milliliters/1/3 cup plain yogurt

mayonnaise

curry powder

mango chutney

tsp smoked paprika

lemon juice

In a mason jar mix yogurt, mayonnaise, curry powder, mango chutney, smoked paprika and lemon juice. Stir with a fork to combine and set aside.&nbsp;

Toast sliced almonds in a dry frying pan over low heat until they just about to start to colour. Immediately take off the heat and cool.&nbsp;

Take the chicken flesh off the bones and remove skin, chop into bite sized chunks.&nbsp;

In a large bowl combine chopped chicken, sliced spring onions, dried apricots, toasted sliced almonds, coriander/cilantro and rocket/arugula. 

Add the salad dressing and salt to taste, mix gently and sprinkle with black sesame seeds.&nbsp;

500 g (1lb) chicken breasts ((alternatively use shredded rotisserie chicken))

tsp salt

tsp pepper

bay leaf

lemon peel

sour cream

salt

tbsp chutney

pepper

almonds

peaches (roughly chopped)

salad leaves

If cooking your own chicken, combine water, salt, bay leaf, pepper and lemon peel in a saucepan.

Bring to a gentle simmer then add chicken breasts. Poach for 8-10 minutes or until the chicken is just cooked, remove and allow to cool then shred. 

Whisk together mayonnaise, sour cream, curry powder, chutney, salt and pepper together.

Combine the chicken with the dressing then add chopped peaches, flaked almonds and spring onion. Mix well.

Add salad leaves of your choice to a serving bowl then top with the Coronation chicken.

Sprinkle with chopped parsley and almonds then serve as is or as a filling for sandwiches.
