Cosmic Blondie Protein Bars - Healthy and So Good!

Vanilla Whey-Casein Protein Powder (22 grams)

Vanilla Whey Protein Powder (22 grams)

½ scoop Unflavored Protein Powder (Whey-Casein, 15 grams)

Cashew Butter Powder (32 grams, or PB Powder)

Whole Wheat Pastry Flour (30 grams)

Tbsp Coconut Flour (21 grams)

⅓ tsp Baking Soda

Non-fat Plain Greek Yogurt (168 grams)

Unsweetened Applesauce (120 milliliters)

Almond Milk (120 milliliters)

Tbsp Zero Calorie Brown Sugar Replacement (24 grams)

Tbsp Vanilla Extract

Vanilla Protein Powder (Whey-casein, 30 grams)

1½ Tbsp Cosmic Blondie flavor Cashew Butter (21 grams, Recommendation Below)

Tbsp Candy Coated Chocolate Chips (12 grams)

Preheat oven to 350°F and grease or line an 8” x 8” baking dish with parchment paper.

In a bowl, whisk vanilla protein powder(s), unflavored protein powder, cashew butter powder, flour, coconut flour and baking soda.

In a large bowl, whisk together wet ingredients - yogurt, applesauce, milk, cashew butter, brown sugar and vanilla.

Add dry mix to wet, whisk lightly for 7-8s and then gently fold with spatula until just combined.DO NOT OVER-MIX or protein powder will make the bars gummy.

Pour into baking pan; Bake for about 25-30 minutes.Top should be set and toothpick inserted into the center should come out mostly dry - just a bit moist (will cook in pan as cooling).

Let cool in pan for 10 minutes, then transfer to cooling rack to cool completely.

Let bars cool completely.

In a bowl, mix Greek yogurt, protein powder, cashew butter, until smooth.Spread over cooled bars.

Sprinkle candy coated chocolate bits on top.Cut into 16 bars and serve!

These came out very yummy! The cake was soft and the frosting delicious! Will definitely be on a rotation for me!
