Cauliflower Pizza Crust (Costco Copycat)

tsp yeast

tsp sugar

water

riced cauliflower ((1/4 of a 2lb head of cauliflower, pulsed

brown rice flour

white rice flour

cornstarch

tsp salt

Italian seasoning

garlic powder

mozzarella cheese

Tbsp marinara sauce

TBSP Parmesan cheese

Roasted Vegetables

proof yeast

In a 1-cup measuring cup, mix together the yeast mixture and proof for 2 minutes.

In a separate large bowl combine the riced cauliflower, brown rice flour, white rice flour, corn starch, salt, Italian seasoning, garlic powder, egg, and mozzarella cheese. Add the yeast and mix until well combined. The mixture will be sticky but flexible.

Roll out each piece of dough, on top of parchment paper or in a non-stick pizza pan to an 11-inches circle.

bake crust

Bake each crust for 6 minutes. Cool on wire racks.

Assemble baked crusts with sauce, cheeses, and roasted vegetables. Sprinkle with Italian seasoning and bake for an additional 5 minutes or until cheese just starts to melt nicely.

Just what I’ve been looking for!  I loved it as written and was grateful to locate a recipe similar to the shelf stable crusts I used to be able to get at Costco.  I have done some messing around with amounts flour and types of flour (celiac) and it ends up wonderful.  Thank you so much!
