This traditional Russian dessert is rich, milky, buttery, and oh so delicious! It actually reminds me of pound cake. 

Cottage Cheese Cake (Творожный Кекс)

white flour

cottage cheese

butter,

sugar

tsp vanilla extract

eggs

tsp baking soda

tsp white vinegar

salt

raisins

Soak raisins in hot water for 5 minutes, then drain.

For best results, process cottage cheese in a food processor until texture is fine.

In a large bowl with a mixer running on medium, combine butter, sugar, vanilla extract, cottage cheese, and egg yolks until well-mixed.

Combine flour and salt and add to butter mixture a little at a time, mixing with a hand mixer on low until flour is fully incorporated.

Combine baking soda and vinegar and add to flour mixture, mixing well. Set aside.

Gently fold egg whites into flour mixture until it is fully incorporated.

Pour batter into greased baking dish and level the batter.

Bake for 35-60 minutes, until a toothpick comes out clean. Let cool. Remove from baking dish and dust with powdered sugar.

Delicious! The cake has a delightful buttery taste and is perfect with a cup of coffee. Glad  I took your advice and used the raisins - they add a lovely texture to the crumb.

I’ve been making this for a while, I found the recipe when it was introduced and fell in love with the cake, I don’t like raisins so I always substitute blueberries instead and it tastes so good, I just got reminded of it and will make it soon

I made this today! I boiled prunes and blended them with walnuts and brown sugar. I used it as a filling, that very old world and yummy. My daughter was impressed!

g de farine

zeste de citron

g de biscuit sec ou jusqu'à 5

g de beurre fondu

Commencez par préparer par la base de votre cheesecake en écrasant vos biscuits secs dans un saladier et en ajoutant le beurre fondu. Mélangez et déposez le mélange obtenu au fond d&#039;un cercle à pâtisserie ou au fond de votre moule.

Laissez au frais, le temps de préparer la garniture.

Dans un saladier, cassez les oeufs et mélangez avec le sucre.

Ajoutez la farine, le zeste de citron et mélangez. Ajoutez le cottage cheese et mélangez. Les grumeaux sont faits exprès, pour donner la texture rustique au cheesecake.

Versez ce mélange sur la base biscuitée et faites cuire à 170°C pendant 35 à 45 minutes, selon votre four.

Vérifiez la cuisson avec la pointe d&#039;un couteau.
