Easy Cottage Cheese Fritters with Salsa

oz potato

Salt

breadcrumbs

onion ((grated))

paprika powder

tsp caraway seeds, ground

5.5 oz cottage cheese

vegetable oil

chili ((chopped))

mint, fresh ((chopped))

tsp honey

tsp apple vinegar

olive oil

pomegranate seeds

Salt and pepper

½ cup lentils, cooked

vegetable broth

Grate

Grate the potato and onion and place on a fine mesh sieve. Sprinkle over the salt and rest on top of a bowl for 10-20 minutes.

Into a bowl add breadcrumbs, egg, paprika, caraway seeds, cottage cheese and mix.

Squeeze

Go back to the grated potato on the sieve and squeeze out as much excess liquid as you can using your hand.

Add the potato into the bowl and mix thoroughly.

Add vegetable oil to a large non-stick pan and fry fritters over medium-low heat until both sides have a deep golden brown colour (about 1 ½ - 2 tbsp of batter per fritter). I recommend squishing the fritters down so that they are thin (½ cm). I also wait a full 8 minutes before flipping. This helps the potato cook and the fritters stay together much better.

Potato Cottage Cheese Fritters

Prepare

Remove the leaves from the stalk of the chard. Roughly chop the green leaves and finely dice the stalk into small pieces. Add to a pot on low heat together with the vegetable broth.

Add the lentils. Let simmer for 5-10 minutes.

Lentil Chard Side

Meanwhile make the salsa. Chop chilli and mint leaves and add to a medium sized bowl with honey, vinegar, olive oil, pomegranate kernels and salt. Mix until incorporated.

Serve

Serve fritters with pomegranate salsa and the lentil chard side. Season with black pepper per taste.

Easy Cottage Cheese Fritters with Salsa: 21g Protein!

Authentic Russian syrniki (cottage cheese pancakes). Fluffy, golden fritters with homemade tvorog, and serve with sour cream, cherry jam, or honey. Perfect for breakfast or dessert.

Russian Syrniki - Cheese Pancakes (Video)

kilogram cottage cheese (tvorog

powdered sugar

all-purpose flour (plus extra for dusting)

vanilla extract

Mix the Ingredients: In a large bowl, combine the cottage cheese, egg yolks, powdered sugar, flour, and vanilla extract. If the cottage cheese is very grainy, press it through a sieve to smooth it out.

Shape: Shape the mixture into small patties, each weighing 50 grams. Dust them with extra flour to make handling easier.

Freeze: For best results, freeze the shaped syrniki for at least an hour to help them hold their shape while frying.

Fry the Syrniki: Heat a non-stick pan over medium heat and add a small amount of oil or clarified butter. Fry each syrnik for about 2 minutes per side until golden brown. After frying, bake them for 6 minutes in a preheated oven at 320°F (160°C).

This perfect recipe for our great syrniki! You have to use tvorog for real syrniki flavor.

Syrniki are traditional Slavic breakfast pancakes from a cheese called tvorog. Similar to cottage cheese, just a touch tangier. It's easy to make, can be frozen cooked dor uncooked and is served with sour cream and cherry jam, although you can skip the sugar and simply make a healthy convenient snack.
