Plenty of colorful veggies, beans, and a tangy vinaigrette makes this cowboy caviar a tasty dip to serve at gatherings or any time a chip craving arises.

Cowboy Caviar

Roma tomatoes (seeded and diced (3½ cups))

yellow corn (drained)

black beans

avocados (peeled, seeded and diced)

red bell pepper (seeded and diced (1½ cups))

orange bell pepper (seeded and diced (1½ cups))

jalapeño (seeded and finely diced)

red onion (finely diced (½ medium-sized red onion))

sweet yellow onion (finely diced (½ medium-sized onion))

fresh cilantro (chopped)

garlic

lime juice

olive oil (extra virgin)

red wine vinegar

sugar

salt

cracked pepper

Using a large mixing bowl, add the diced tomatoes, canned corn, canned black beans, diced avocados, bell peppers, jalapeno, finely diced onions, chopped fresh cilantro, fresh minced garlic and lime juice. Stir just until all the ingredients are evenly combined.

Salad

Using a small mixing bowl, whisk together the extra virgin olive oil, red wine vinegar, sugar, kosher salt and fresh cracked pepper until well incorporated.

Drizzle the dressing over the salad. Stir just until well incorporated.

Dressing

This Cowboy Caviar recipe is one of my favorite recipes to bring to a potluck or BBQ. Black beans, black eyed peas, avocado, tomatoes, and shoepeg corn tossed in a light zesty Italian dressing.

(15 ounce) can black eyed peas, drained and rinsed

(15 ounce) can black beans,

shoepeg corn (drained and rinsed (see note))

Roma tomatoes (seeds removed and diced or 1 pint grape tomatoes, quartered)

2-3 diced avocados (ripe but still firm)

green onions (sliced thin)

around 1/2 to 3/4 cup Zesty Italian dressing

cilantro (chopped finely)

limes

pepper and kosher salt

Drain and rinse the black eyed peas, black beans, and corn. Add to a large bowl. Add the tomatoes and cilantro to the bowl. Slice the green onions finely and add to the bowl. Dice the avocado and squeeze a little of the lime juice over the avocados so they don't brown as quickly. Squeeze the rest of the lime juice into the bowl. Add the Italian dressing and stir to coat all the ingredients. Add salt and pepper to taste.

Chill in the refrigerator until cold and flavors have marinated together. This is best served the same day as prepared. Serve with tortilla chips.

Cowboy Caviar Recipe

black-eyed peas

sweet corn

cilantro (chopped)

red bell pepper (chopped

orange bell pepper (chopped

red onions (diced)

chili powder

kosher salt

olive oil

white wine vinegar

garlic powder

Drain and rinse the beans

Drain, rinse and pat dry the beans and corn. Transfer to a large bowl. 

Add the ingredients

Add the cilantro and the remaining ingredients to the beans and corn mixture. Stir to combine.

Serve and enjoy!

In a large mixing bowl, add the black beans, black-eyed peas, corn, tomatoes, peppers, onion, and cilantro.

In a small bowl or jar, whisk together olive oil, red wine vinegar, honey, garlic, lime juice, Okie Rub (or cumin), salt, and pepper until well combined.

Pour the dressing over the vegetables and beans. Stir until everything is evenly coated.

Cover and refrigerate for at least 30 minutes (up to 24 hours) to let the flavors meld.

Serve cold with tortilla chips, over greens, or in tacos.
