Dinner&#039;s on! My Cowboy Stew recipe combines three types of tender meat with beans &amp; veggies in a one-pot wonder delicious enough to everyone!

Cowboy Stew

bacon, (chopped)

(12-ounce) package kielbasa sausage, (cut into 1/2 inch slices)

beef, (80/20)

onion, (diced)

garlic, (minced)

all-purpose flour

salt

black pepper

chili powder

can petite diced tomatoes, (with liquid)

(16-ounce) cans baked beans, (with liquid)

(7-ounce) can chopped green chilies, (with liquid)

(15-ounce) can sweet corn, (with liquid)

russet potatoes, (peeled and cut into 1/2 inch cubes)

water

parsley, (chopped)

Cook bacon until brown and crispy in a large pot. Using a slotted spoon, transfer bacon to a plate lined with a paper towel to drain.

Add the sausage to pot drippings and brown on both sides, adjusting heat as needed so fond (brown bits on the bottom of the pot) does not burn. Remove to the plate with bacon; set aside.

Add beef, onion, and garlic to the pot and brown until the beef is no longer pink. Sprinkle flour, salt, pepper, and chili powder over beef. Stir and cook for 1 minute.

Add diced tomatoes, baked beans, green chilies, sweet corn, potatoes, bacon, sausage, and water. Bring to a boil then immediately reduce heat and simmer, covered, for 1 hour, stirring occasionally.

Garnish with parsley.

Add additional water if stew is too thick.

Cowboy Stew Recipe

90% beef

onion (chopped)

green bell pepper (chopped)

garlic (minced)

kidney beans (drained and rinsed (1 can))

black beans (drained and rinsed (1 can))

petite diced tomatoes ((1 can))

whole-kernel corn (drained (1 can))

potatoes

low-sodium beef broth

parsley (optional, for garnish)

Heat a large Dutch oven over medium heat. Add the bacon and fry until crisp. Remove from the pot with a slotted spoon and set aside on a paper towel-lined plate. Leave one tablespoon of bacon grease in the pan and drain off the rest.

Cook

Add the sliced sausage and cook on each side until browned. Remove from the pot and set aside with the bacon.

Add the ground beef, onion, bell pepper, and garlic to the pot. Cook, using a wooden spoon to break up the beef until the beef is cooked through and the onion is translucent.

Stir

Add the flour, chili powder, salt, and pepper, and stir for 1 minute or until no dry flour remains.

Simmer

Stir in the kidney beans, black beans, petite diced tomatoes, corn, potatoes, beef broth, cooked bacon, and sausage. Bring to a boil, reduce to a simmer, cover, and cook for 20-25 minutes or until the potatoes are tender. Garnish with parsley and serve.
