Cranberry Crumb Bars

Gold Medal™ all-purpose flour

sugar

almonds

baking powder

salt

butter

cinnamon

cranberries

orange (4 teaspoons)

cornstarch

Heat oven to 375°F. Grease 13x9-inch pan with butter or cooking spray.

In large bowl, mix flour, 1 cup sugar, the almonds, baking powder and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse crumbs. Stir in egg. Press 2 1/2 cups of crumb mixture in bottom of pan. Stir cinnamon into remaining crumb mixture; set aside.

In medium bowl, stir all filling ingredients. Spoon evenly over crust. Spoon reserved crumb mixture evenly over filling.

Bake 45 to 55 minutes or until top is light golden brown. Cool completely. Refrigerate until chilled. Cut into 6 rows by 4 rows. Store tightly covered in refrigerator. 

These easy Cranberry Crumb Bars are perfect for the holidays! They are tender, crumbly, perfectly sweet and tart. Makes about 15 squares.

Preheat oven to 375 degrees F. Line a 9x13 inch baking pan with parchment paper, leaving some overhang on the sides in order to make it easier to lift the cranberry bars.

In a saucepan, add the cranberry filling ingredients and bring to a simmer. Simmer for about 3-5 minutes or until the cranberries start breaking down. Remove from heat and transfer to a shallow bowl. Let it cool while you make the dough.

Meanwhile, in another large bowl, whisk flour, sugar, baking powder, cinnamon, and salt. Cut in the butter into the dry ingredients using a pastry blender until you get pea-sized crumbles. You can also rub in the flour and butter with your fingers, but do it quickly so that the butter doesn’t soften too much. Add the egg and mix until a very crumbly dough forms. It will seem dry. Note: you can also use your food processor for this step - simply pulse all the dough ingredients until you get pea-sized crumbles and incorporated.

Place half of the dough on the prepared 9x13 inch pan. Press down to form a firm and even layer. Spread the cranberry filling evenly over the dough. Top with the remaining crumbly dough.

Bake for 45-50 minutes until golden brown. Let cool and cut into squares. Enjoy!

Tart cranberries with orange zest make the best filling in these holiday cranberry crumble bars. The oatmeal crust and crumble is delicious!

Cranberry Crumble Bars

(250 g) all purpose flour

(125 g) old fashioned rolled oats

(55 g) finely chopped almonds (optional)

(100 g) light brown sugar

(100 g) granulated sugar

egg (lightly beaten)

vanilla extract

(150 g) granulated sugar

orange juice

orange zest

Preheat oven

Preheat oven to 350&deg; F. Line a 9x13 baking dish with parchment paper and set aside.

Make crust/crumble mixture

In the bowl of a stand mixer (or using a hand mixer), combine flour, oats, chopped almonds, brown sugar, granulated sugar, baking powder and salt. Mix for 30 seconds until thoroughly combined. With the mixer on low, add the butter and mix until the mixture resembles coarse sand (about 2 minutes). Add egg and vanilla, and mix just until combined.

Bake crust

Transfer half the crumble mixture to prepared pan. Use your hands or the back of a measuring cup to press mixture evenly into the bottom to form the crust. Store the remaining mixture (used for the topping) in the refrigerator while the crust bakes. Bake crust for 20 minutes or until golden (keep the oven on).

Make cranberry filling

In a bowl, toss together cranberries, sugar, orange juice, orange zest, cornstarch and vanilla.

Assemble

Spread filling evenly over the baked crust (it&rsquo;s okay if it&rsquo;s still warm). Sprinkle remaining oat mixture evenly over the cranberry layer.

Bake bars

Bake 350&deg; F for 30 to 35 minutes or until the top is golden brown and berries are bubbling. Allow bars to cool completely before removing from pan and cutting into squares.

These delicious Cranberry Crumb Bars feature a buttery dough and a tart cranberry filling.

all purpose flour

juice of 1 medium-sized orange

half and half or milk

vanilla extract or vanilla bean paste

Preheat oven to 350°F. Line a 9x13 pan with foil and lightly grease the foil.

Instructions:

Using a stand mixer fitted with the paddle attachment, combine granulated sugar, flour, baking powder, and salt. Add orange zest, butter, egg, and vanilla. Beat on low speed until the butter is evenly distributed in small pieces and the mixture is crumbly.

Dump a little more than half of the mixture into the bottom of the prepared pan (reserving the remaining amount, about 2 1/2 cups, for the topping). Use your hand or the bottom of a measuring cup to evenly press the dough into the pan.

Crust and topping:

Gently stir together all ingredients until well incorporated.

Scoop the cranberries onto the crust, making sure the cranberries and juices are evenly distributed over the crust. Crumble the reserved dough over the top of the berries.

Bake for approximately 45-50 minutes, until the top is light golden brown and the cranberries are bubbling in some spots. Transfer pan to a rack to cool completely.

Cranberry filling:

Whisk all ingredients until smooth. Adjust the consistency by adding more powdered sugar to thicken or more milk to thin. Drizzle over the cooled bars.

Vanilla icing:

A delicious cranberry bar recipe made with a shortbread crumble and crust and a fresh cranberry filling.

Cranberry Shortbread Crumble Bars

orange (juiced (about 1/4 cup))

tsp vanilla extract

unsalted butter (3 sticks of butter

oz cranberry citrus sauce (see above for recipe)

brown sugar (firmly packed)

white sugar

powdered sugar (for serving (optional))

Add your fresh cranberries, orange juice, lemon juice and zest, sugar, vanilla and salt to a medium sauce pan.

Simmer on medium heat for 5 minutes.

Reduce heat to low and simmer for another 10-15 minutes or until the cranberries begin to burst and the sauce thickens. To test for the right thickness of the sauce, dip a spoon into the cranberry sauce and coat it well. Remove the spoon from the sauce and run your finger down the back of the middle of the spoon. If the line you made through the sauce on the spoon stays and does not fill up again with the sauce from the sides then it is ready.

Once done, remove from the stove and allow to come to room temperature. The sauce will thicken a bit at this point.

Cranberry Filling

Preheat your oven to 325 degrees.

Spray or butter a 9x11-inch pan well so your shortbread comes out easy after baking.

In a large bowl, using an electric mixer, combine the butter sugar (brown and white) and beat until smooth.

Next, add your vanilla and salt and mix that in.

Now, add your your all purpose flour into the butter mixture and mix on low-speed until the mixture starts to form a ball .

Divide your dough in half and wrap up one half and place in the refrigerator until later. Press the other half of the dough into the bottom of the prepared pan to form the bottom crust.

Bake the crust until it is just beginning to turn light brown, around 20 minutes.

Remove the pan from the oven and let cool for a few minutes.

Place your cranberry sauce over top of the shortbread crust and spread evenly.

Now, take your reserved half of the shortbread out of the refrigerator and crumble the dough over the cranberry sauce to make your crumbled topping, being careful to not have really large pieces.

Return the pan to the oven and continue baking for another 30-35 minutes until the crumble topping turns golden in color. Transfer to a wire rack and let cool completely.
