If you're not done with festive flavors, you must try this stunning yet simple cranberry orange bread. It's bright, fruity, zesty, and incredibly moist.

Cranberry Orange Bread (Easy Recipe)

flour

baking soda

cranberries

white sugar

baking powder

salt

unsalted butter,

orange juice

orange zest

walnuts (Optional)

Preheat the oven to 350 degrees Fahrenheit (175°C) and grease a loaf pan with cooking spray. Line with parchment (optional) and set aside.

Mix the flour with the baking soda, half of the sugar, salt, and baking powder.

In a separate bowl, blend the soft butter with the sugar until it looks like a smooth paste. Then mix the egg into the paste until smooth.

Gently stir the sugar paste into the dry mixture.

Add the orange zest and orange juice, and mix until almost fully combined.

Slowly fold in the frozen cranberries and walnuts until they’re evenly distributed throughout the batter.

Bake for around 45-50 minutes, until the bread is golden brown on the top. Test for doneness, then bake in 5-minute intervals until done. Insert a toothpick into the center to test for doneness - it should come out clean or with just a few crumbs.

Cool the loaf in the pan for 5-10 minutes, then turn out onto a wire rack to cool. Slice, serve, and enjoy!

This Cranberry Orange Loaf is a moist, citrusy quick bread with bursts of tart cranberries and a sweet orange glaze. I love a slice with my cup of coffee for a mid-morning snack. It would also be delicious as an afternoon treat!

Cranberry Orange Loaf

unsalted butter, (room temperature)

(150 g) granulated sugar

eggs, (room temperature)

(61 g) whole milk, (room temperature)

½ cups (187.5 g) all-purpose flour

(150 g) cranberries, (fresh or frozen (unthawed), divided)

(125 g) confectioners' sugar

orange juice, (freshly squeezed)

Preheat oven. Spray loaf pan with nonstick cooking spray.

Preheat oven to 350°F (175°C) and spray a 9x5-inch loaf pan with nonstick cooking spray. Set aside.

Cream butter and sugar.

In a large mixing bowl, use a hand mixer to cream together the butter and granulated sugar until smooth.

Add eggs.

Add the eggs one at a time, mixing well after each addition.

Combine milk, orange juice, and orange zest.

In a small bowl, combine the milk, orange juice, and orange zest.

Whisk dry ingredients.

In a medium mixing bowl, whisk together the flour, baking powder, and kosher salt.

Add flour mixture and milk mixture to butter mixture.

Gradually add the flour mixture and the milk mixture to the butter mixture in three additions, starting and ending with the flour mixture. Use the hand mixer on low speed, mixing until just combined after each addition.

Fold in cranberries.

Using a spatula, gently fold in 1 cup of the cranberries, being careful not to crush them.

Pour batter into pan. Top with cranberries.

Pour the batter into the prepared loaf pan and smooth the top with the spatula. Scatter the remaining ½ cup of cranberries evenly over the top.

Bake.

Bake for 50-55 minutes, or until a toothpick inserted into the center of the loaf comes out with a few moist crumbs, but no wet batter. If the top of the loaf begins to brown too quickly, tent it loosely with aluminum foil halfway through baking.

Leet loaf cool.

Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Prepare glaze. Whisk confectioners&#39; sugar and orange juice.

Once the loaf is cool, prepare the glaze. In a medium bowl, whisk together the confectioners&#39; sugar and orange juice until smooth.

Drizzle glaze over loaf.

Drizzle the glaze over the cooled loaf before serving.
