Crazy Crust Pie is a hassle-free way to create a pie crust from a homemade cake batter. As it bakes, it forms a crust around the fruit and becomes the perfect dessert to cure both a cake and pie craving.

Crazy Crust Pie

all purpose flour

baking powder

salt

salted sweet cream butter (softened)

sugar

vanilla extract

egg (room temperature)

¾ cup half and half

coarse sanding sugar (optional garnish)

Preheat the oven to 375*.

Add the flour, baking powder and kosher salt to a small bowl. Whisk to combine.

Add the softened butter to a medium size mixing bowl. Use a handheld mixer on medium high speed to beat the butter for 1 minute.

Add the sugar and vanilla. Continue mixing on medium high	speed for another 1 - 1 ½ minutes until well combined.

Lower the mixer speed to low. Add the egg and continue mixing until no yellow streaks remain.

Add the flour mixture and increase the speed to medium until the flour is well incorporated and no longer crumbly.

Continue mixing on medium speed and drizzle in the half and half. Continue to mix just until the half and half is completely incorporated.

Spray a 9 inch deep dish pie plate with baker’s spray (Baker’s Joy or a generic version)

Spoon in all but 2 - 3 tablespoons of the crust batter around the outer edges of the pie plate. Smooth a thin layer of the crust batter in the center of the pie plate.

Spoon the pie filling into the center of the crust batter. Be sure the filling stays at least 1 inch away from the edge of the pie plate. Dollop the reserved crust batter around the center of the pie filling.

Sprinkle the coarse sanding sugar over the entire pie. Bake for 35 - 40 minutes or until the top of the crust is golden brown. Allow the pie to cool before serving.

The perfect dessert when you're craving pie but are short on time and energy! Mix up a simple batter and fill the center with homemade apple pie filling. As it bakes, the batter turns into a crust in the oven!

Crazy Crust Apple Pie

apples (about 3/4 inch thick slices)

unsalted butter

cinnamon

brown sugar

all-purpose flour

unsalted butter, softened

egg, room temperature

water (can substitute milk)

Heat the 2 tbsp. butter over medium heat in a large skillet. Once melted, add the peeled, sliced apples, brown sugar, cinnamon and pinch salt. Cook for 3 - 4 minutes, stirring frequently, or until the brown sugar is fully dissolved and the apples have released some moisture.

Sprinkle 1 tbsp. of flour over the top of the apples and stir to evenly combine the flour with the apple filling. Cook, stirring frequently, for an additional 1 - 2 minutes, or until the apple pie filling has thickened. Turn the heat down if necessary to avoid the sugar burning.

If the filling is still watery, add up to an additional 1 tbsp. of flour and cook for an additional minute, stirring frequently. (Mine took about 1 and 3/4 tbsp. to properly thicken - for a visual reference of what the thickness of filling should look like, see the photo in the blog post.)

Make the apple pie filling

Add the 10 tbsp. of softened butter, 2 tbsp. brown sugar and 2 tbsp. granulated sugar to a large bowl or the bowl of a stand mixer. Beat with hand beaters or the whip attachment of a stand mixer on medium speed until evenly combined and slightly fluffy, about 1 minute.

Add the egg and beat again until the mixture is smooth, about 30 seconds.

Add the flour, baking powder and salt. Beat on low speed just for a few seconds to moisten the flour, then on medium speed until the flour is fully combined and the mixture is smooth, about 1 minute. 

While continuing to beat the mixture on medium speed, drizzle the water slowly into the batter and mix until smooth, about 1 minute.

Make the crust batter

Pour the batter into a greased 9 inch pie dish, making sure to spread the filling all the way out to the edges. Carefully spoon the apple pie filling into the center of the batter. If the fruit is mounded, gently smooth out the top, but do not stir. Leave 1 inch of batter around the edge of the dish (this is what will form the crust).

Bake in the preheated oven for 35 - 40 minutes, or until the crust is deep golden brown (see note).
