Here is an oooold family recipe. I found the measurements on my blog. I haven't made it in so long, I think it will be my mothers day lunch. Its unusual, but if you have grown up with it, it is the ultimate comfort food. I am having trouble copying my image. See the whole recipe with pictures here:

Milk Dumpling Soup

cup(s) milk

tablespoon(s) butter

cup(s) all purpose flour

teaspoon(s) salt

Zuppa Toscana is a soup we love to get at Italian restaurants. This hearty made from scratch recipe is better than what you'll find at that chain restaurant. It's creamy with bits of crunchy, fresh kale in every bite. The sausage adds a spicy kick and there's a hint of smoky flavor from bacon. Serve with garlic bread and you have a comforting Italian meal. We opted to test this recipe in a Crock Pot, but a Dutch oven would be just as easy and delicious.

Zuppa Toscana (Thick)

pound(s) regular or sweet Italian sausage

cup(s) real bacon (chopped)

onion

garlic

chicken broth

water

potatoes

ADD THE FOLLOWING IN THE LAST 30 MINS BEFORE SERVING

kale (or Swiss chard), de-stem & cut/torn into bite-sized pieces

all-purpose flour

heavy cream

salt and pepper,

Using a leftover ham shank we smoked with mesquite wood, this is smokey, cheesy heaven.

can(s) fat free evaporated milk, undiluted

ounce(s) cheddar cheese, shredded

thyme

This Rich and Flavorful Ukrainian Mushroom Soup Is Made with Sautéed Mushrooms, Onions, Carrots, Woodsy Herbs, Potatoes, and Vegetable...

Ukrainian Mushroom Soup

Olive oil 2 tbsp

Onion 1

Carrots 1

Button mushrooms 8 oz

Vegetable broth 4 cups

Potatoes 2

thyme 1 tsp

Salt 1 tsp

Black pepper ¼ tsp

Saute onions and carrots

In a large non-stick pan over medium heat, heat 2 tablespoons olive oil and add 1 finely diced onion and 1 diced small carrot. Sauté, stirring occasionally, until the onions are translucent, about 5 minutes.


Cook mushrooms

Transfer the cooked onions and carrots to a plate and add 8 ounces sliced mushrooms to the same pan. Cook, stirring occasionally, until the liquid evaporates and the mushrooms start to brown, about 5-7 minutes.


Cook potatoes

In the meantime, to a large stockpot, add 4 cups vegetable stock and bring to a boil. Then add 2 diced potatoes, reduce the heat to medium-low, and cook for about 10 minutes.


Add onions, carrots, mushrooms, and seasonings

Add in the sautéed onions and carrots, ¾ of mushrooms, 1 teaspoon thyme, 1 teaspoon salt, and ¼ teaspoon pepper and cook until the potatoes are tender, about 5 more minutes.


Add half-and-half and garlic

Pour in 1 cup half-and-half and bring the soup to a boil. Then add in 3 minced garlic cloves and remove the soup from the heat.


Puree

Use an immersion blender to purée the soup.


Serve

To serve, ladle the soup among bowls and top with the remaining mushrooms and cracked black pepper. Enjoy!
