Try this restaurant-style butter chicken right in your Instant pot. The flavors are amazing and the chicken is perfectly melt-in-your-mouth tender. Serve with rice and naan for the best home-cooked meal ever.

Creamiest Butter Chicken in Instant pot

lb (500 gramsram) Boneless Chicken

tbsp Plain Yogurt (thick or hung yogurt/curd)

tsp of Kashmiri Chili Powder

tsp Ginger Garlic paste

Lemon juice

tbsp Unsalted Butter, divided

medium size Onion, chopped

tomatoes

Garlic,

Ginger,

Whole Raw Cashew nuts

Chili powder or Cayenne pepper

Water

tbsp Dried Fenugreek leaves

tsp Garam Masala powder

tsp Refined sugar

Heavy whipping Cream or half and half (or coconut milk

In a bowl take chicken pieces, add yogurt, kashmiri chili powder or paprika, salt, ginger garlic paste, lemon juice and mix well.

Cover and marinate for 15 to 30 mins, or prepare ahead and marinate for overnight in refrigerator.

Chicken Marination:

Set Instant pot to saute mode high, add 4 tbsp of unsalted butter. 

Once the butter stops sizzling, add the marinated chicken pieces, cook until golden brown approximately 5 to 7 minutes.

Switch off the heat and take out the chicken pieces and set aside.

Direction:

To the same pot with left over butter, add onion, tomatoes, garlic, chopped ginger, salt, chili powder or cayenne pepper, Kashmiri chili powder or Paprika, cashews and water. 

Give a good mix and make sure no browning sticking to the pot (do not skip this step).

Close the lid and make sure that the vent is in the sealing position. 

Pressure cook manually for 5 minutes and allow natural pressure release for 10 minutes. Then do quick pressure release.

Add the curry mixture to the blender and grind them into a fine paste. Your Base gravy is ready.

Dump and go Base Gravy:

Turn on sauté mode at low, add heavy cream, 1 tbsp of butter, sugar, cooked chicken pieces, garam masala, dried fenugreek leaves or chopped cilantro. Mix all together. Cook for a minute. 

Switch off the Heat (press cancel).

Final Preparation:

Serve this delicious butter chicken hot and enjoy along with basmati rice, jeera rice, or naan.

Serving:

Crispy chicken pieces are coated in buttery, aromatic, and milky sauce. It is easy to make and a real crowd-pleaser.

Chinese Creamy Butter Chicken (Lai Yao Kei)

500 gr boneless chicken thighs

oyster sauce

salt

tsp sugar

tsp white pepper

gr butter

garlic (grated

Thai chili

curry leaves

200 ml evaporated milk

Tbsp condensed milk

chicken powder

Salt

80 gr tapioca starch

gr rice flour

Cooking oil

Combine ingredients for the marinade. Add the chicken and coat chicken pieces in the marinade. Cover and let it marinate for at least 30 minutes to one hour

Marinate the chicken:

Preheat about 2 inches of oil for frying. Combine the tapioca starch, rice flour, chicken powder in a bowl and whisk to combine

Coat the chicken pieces in the flour mixture. When you put a skewer into the oil, there will be lots of bubbles around it. The oil is ready. Fry the chicken pieces in batches until they are crispy and golden brown over medium heat. Remove from the oil and put an absorbent paper towel and continue frying the rest in batches

If you want extra crispy, go for second frying. Start from the chicken pieces that you first fried. This time around will be faster. Fry until the chicken really crisp up, about 1 minute or less

Frying the chicken:

Melt the butter in a pan over medium heat. Saute the garlic, chili, and curry leaves until the leaves are crispy and aromatic

Add the evaporated milk and bring it to a simmer. Add condensed milk, chicken powder, salt, and sugar and let it cook until the sauce reduce slightly. Have a taste and adjust to your liking. Add the chicken pieces and toss in the sauce to make sure the sauce coats the chicken evenly. Serve immediately
