Bacon Cream Cheese Baked Spaghetti

milk

(10.5 oz) can condensed cream of bacon soup

oz cream cheese, softened

garlic powder

onion powder

dry spaghetti

mozzarella cheese, grated and divided

bacon,

Fresh chives, snipped,

salt and black pepper,

In a large pot, stir together the milk, bacon soup, cream cheese, garlic powder and onion powder. Bring to a boil.

Once bubbling, break spaghetti in half and stir into pot. Reduce heat to medium low and let spaghetti cook 8 minutes, stirring occasionally.

Stir in 2 cups of the mozzarella and 1/2 of the bacon. Season to taste with salt and pepper and transfer to a 9x13-inch baking dish.

Top with remaining mozzarella and bacon and bake until cheese has melted and is starting to turn golden brown, about 15 minutes.

Let sit 5 minutes before serving. Garnish with fresh chives, if using. Enjoy!

Million Dollar Chicken Casserole

Preheat oven to 350°F and grease a 9-inch baking dish with nonstick spray.

In a medium bowl, beat cream cheese until smooth. Add cottage cheese, sour cream, garlic powder, onion powder, parsley, and cream of chicken soup and stir to combine.

Stir in chicken and pour into prepared baking dish. Stir together cracker crumbs and butter and sprinkle over the top.

Bake until bubbly and golden brown, 30-40 minutes.

This creamy garlic spaghetti squash casserole is so saucy and delicious! It has a creamy, Paleo, Whole30 + Dairy-Free sauce packed with garlicky goodness.

Creamy Garlic Spaghetti Squash Casserole (Paleo, Whole30, GF + Dairy-Free)

spaghetti squash

broccoli florets

sausage

mushrooms, sliced

arrowroot flour

tbsp minced garlic

coconut milk

Salt and pepper ((about 1 tsp each))

Preheat oven to 425° Fahrenheit.

Slice the spaghetti squash lengthwise and scoop out the seeds. Place the two halves face-down on a baking sheet and bake for 30 minutes.

While the squash is cooking, get the sausage going. Heat a large pan over medium heat and add in the sausage. Break it into pieces with a spatula and cook, stirring occasionally, until browned and cooked through, about 8 minutes. Remove from pan and set aside. Reserve at least 1 tbsp of fat in the pan for the sauce you'll make later.

Remove squash from oven after 30 minutes and set aside to cool. Keep the oven on at 425°.

While the squash is cooling, prepare the creamy garlic sauce. Whisk together coconut milk and arrowroot flour in a bowl or jar and set aside.

Heat the same pan you cooked the sausage in over medium heat. Once hot, add mushrooms and cook until they begin to soften, about 2 minutes. Add in minced garlic and mix well with the mushrooms, about 1-2 minutes, until fragrant.

Next, whisk up the coconut milk mixture again and add to pan, stirring constantly for 2 minutes. The sauce will bubble and thicken, keep stirring to prevent burning. After 2 minutes turn heat off and stir in salt and pepper. 

Now, put it all together. With a fork, scrape out the spaghetti squash "noodles" into a medium casserole dish. Add the cooked sausage, broccoli, and creamy garlic sauce. Mix everything together well.

Place back in the oven to bake for 15 more minutes. Remove and serve.

Creamy Garlic Spagheti Squash Casserole

Cheesy Poblano Rice Bake 

poblano peppers

olive oil

yellow onion, diced

salt

long grain white rice

vegetable stock

corn,

green onions, chopped

Optional garnishes: Cilantro, green onions, avocado, tomatoes

Cheesy Poblano Rice Bake

Place the whole poblanos on a baking sheet and broil for 6-8 minutes or until charred, flipping halfway through. Set aside to cool.

Adjust oven temperature to 375 degree F and grease a 8x8 baking dish.

In a large saucepan or dutch oven, heat the olive oil and then add onions and salt. Cook for 5 minutes or until fragrant and translucent.

Stir in rice and then vegetable stock. Bring mixture to a boil and then cover and reduce heat to low. Simmer for 10-12 minutes or until rice is fully cooked.

As the rice simmers, peel off the charred pepper skin and remove seeds, then dice.

Add the diced peppers, corn, sour cream, 1 cup of the cheese, and the green onions to the cooked rice. Stir until combined.

Transfer mixture to the the prepared baking dish and top with the remaining ½ cup cheese.

Bake for 25-30 minutes or until bubbling and the cheese is fully melted.
