Chicken Marsala

chicken breasts

kosher salt (divided)

black pepper

all-purpose flour

unsalted butter

mushrooms

garlic

marsala wine

chicken stock

heavy cream

parsley (for garnish, optional)

Working one at a time, place chicken on a cutting board; slice each in half horizontally to create four thin cutlets.

Sprinkle chicken evenly on both sides with 1½ teaspoons salt and ½ teaspoon pepper. Place in a shallow dish with flour; toss and pat to coat chicken with flour.

Heat ¼ cup olive oil over medium-high heat until shimmering. Add chicken to pan; cook until browned on both sides, 3 to 4 minutes per side. Place chicken on a wire rack to drain.

Wipe skillet clean, if needed. Reduce heat to medium. Add remaining 2 tablespoons oil and butter.

Add mushrooms; sprinkle with remaining ½ teaspoon each salt and pepper. Cook, stirring occasionally, until mushrooms are lightly browned, about 5 minutes.

Add garlic; cook, stirring often, about 1 minute.

Add flour; cook, stirring often, until flour is slightly toasted, about 1 minute.

Add marsala to pan; stir to release browned bits from bottom of pan. Add chicken stock.

Reduce heat to medium-low; simmer until slightly thickened, about 10 minutes.

Stir in cream; return chicken to pan. Cook until chicken is warmed through, about 2 minutes.

Remove from heat. Divide chicken and sauce among 4 plates. Sprinkle with parsley, and serve.

Creamy Chicken Marsala

Start by seasoning both sides of the chicken breasts generously on both sides with salt, pepper and the garlic powder.

Add the 1/2 cup of flour to a shallow plate or a resealable bag and coat the chicken completely, shaking off the excess flour.

Add the olive oil to a large skillet over medium heat then add the chicken breasts in a single layer to brown. Cook for 4-5 minutes on each side until nicely browned, then remove to a plate and cover with foil.

Add the butter to the same skillet, then add the mushrooms, seasoning with salt and pepper to taste. Stir to and cook for 7-8 minutes until nicely browned.

Add the onions, garlic and rosemary to the mushrooms, cooking for 3-4 minutes longer until the onions have softened. Sprinkle in the remaining tablespoon of flour and stir into the mushrooms for 1 minute.

Carefully pour in the marsala wine to deglaze the pan, scraping up any brown bits from the bottom of the skillet. Bring to a boil while whisking to prevent lumps from the flour, then let the marsala reduce for 1-2 minutes until it&#8217;s almost evaporated.

Pour in the chicken broth and cream then stir or whisk to combine.

Add the chicken breasts and any juices from the plate to the skillet, bring to a simmer and cook for 10 minutes.

Taste the sauce for seasonings, adjust with more salt and pepper if needed and serve with chopped parsley for garnish.

I’m making it now and the broth is really runny. Should it be thicker like gravy?

This recipe is absolutely amazing and we used it for our wedding reception. We made 16 batches of this ahead of time, let cool then vacuum sealed each bag and froze them. Followed the reheating directions to defrost in refrigerator and then reheat in an oven. Everyone LOVED it!!! Even my mother who doesn't like mushrooms. We did switch out the flour for gluten free 1:1 flour because we did a gluten free menu. Also we cut the chicken into smaller pieces to serve more people.

I made this recipe last night - my first time of making Chicken Marsala.  IT was a huge success and declared the most delicious chicken they had ever had.

I’ve made this a half dozen times for us, and with guests. When just the two of us I halve the chicken and broth but not the onion or mushrooms or Marsala...it’s perfect. You really do need plenty of salt and pepper on the chicken and though my wife scolds me every time she still eats every bite. Definitely a staple in our house!

Excellent recipe.  I made two "mistakes" (minor, but I'm picky).  I should have pounded the chicken thinner and cooked it at something less than "medium" on my electric (yeah, I know) stove.  My chicken was a bit tougher than I believe it should have been.  Next time I'll marinate in baking soda (velvet) for 30 minutes before the season and flour dredge and cook a little more gently.  My second mistake was thinking the sauce was going to be too thin after I added the chicken broth and cream so I added another tablespoon of flour.  Too thick after it reduced. I should have not added the extra flour.  Chicken Marsala should have a relatively thin sauce (like thin maple syrup maybe) but I over did it.  Other than my screw-ups, it was otherwise great and my wife loved it.

Easy Creamy Chicken Marsala

This chicken marsala recipe is an Italian-American classic! It has juicy pan-fried chicken smothered in a creamy wine and mushroom sauce. It&#039;s a 30-minute dish that&#039;s simple to master in your own kitchen.

Easy Chicken Marsala

chicken breasts (cut in half lengthwise)

Salt & pepper (to taste)

Flour (for dredging)

butter (divided)

cremini mushrooms (sliced fairly thin)

garlic (minced)

heavy/whipping cream

Cut the chicken breasts in half lengthwise and trim off any remaining fat. Season the chicken with the salt, pepper, and garlic powder. Coat each piece in flour.

Heat the olive oil and 1 tablespoon of the butter in a skillet over medium-high heat. Once the pan is hot, add the chicken and sear it for 4-5 minutes/side or until golden. Take the chicken out of the pan and set aside (it&#39;ll finish cooking in the sauce).

Add the remaining butter and mushrooms to the skillet and cook them for 3-5 minutes, stirring occasionally, until browned.

Add the minced garlic and marsala wine to the skillet and let it bubble for 2-3 minutes.

Add the cream to the skillet, and then add the chicken back in. Cook for another 4-5 minutes until the chicken is cooked through and the sauce has thickened up a bit. Season with extra salt &amp; pepper if needed. I added a little bit of chopped parsley to finish it off (optional).

In a large skillet over medium heat add 1 tablespoon olive oil to the pan. Add the chicken and lightly salt and pepper. Cook until lightly brown and cooked throughout. Remove chicken and set aside on plate.

Add 1 Tablespoon olive oil and sauté the mushrooms for 1-2 minutes. Add marsala wine and bring to a boil over medium high heat for 1-2 minutes. This allows the alcohol to burn out. Add the chicken broth, heavy whipping cream, ground mustard, and garlic powder.&nbsp;

Bring to a boil and reduce heat and simmer for about 10 minutes or until it starts to thicken. Place chicken back in the sauce and continue to simmer for about 1-2 minutes.

This Easy Slow Cooker Chicken Marsala takes minimal prep and has the most delicious creamy sauce. It&#39;s perfect for busy weeknights or a hands-off Sunday meal.

Easy and Creamy Slow Cooker Chicken Marsala

all purpose flour

onion powder

salt

yellow onion (sliced thinly)

marsala wine (dry

crimini mushrooms (or Baby Bella, sliced)

garlic (approximately 6 to 8 cloves)

Mix the flour, garlic powder, onion powder, salt, and pepper in a shallow dish bowl, large enough to fit a piece of chicken.

Dip each piece of chicken into the flour mixture to coat it completely, then shake off any excess.

Heat the olive oil in a skillet over medium heat on the stovetop. Sear the chicken, a couple of pieces at a time, for 2 minutes on each side until browned.

Add the sliced onions evenly to the bottom of the slow cooker and lay the seared chicken on top.

Next, add the chicken stock, marsala wine, mushrooms, and garlic on top. Cover and cook on high for 2-4 hours or on low for 4-6 hours until the chicken is tender.

Stir the heavy cream into the sauce, cover, and cook 15-30 minutes. The sauce should be heated through, but do not let it boil or the cream curdle.

So simple and delicious! Can't wait to make this again.

Slow Cooker Chicken Marsala

Lightly grease your slow cooker with nonstick spray. Season chicken with salt and pepper and place in the bottom of your slow cooker.

Top chicken with garlic, mushrooms, and marsala wine. Cover and cook for 5-6 hours on low.

Use a slotted spoon to transfer chicken to a plate. Whisk together water and cornstarch til dissolved, then pour into slow cooker and stir.

Add chicken back to slow cooker, switch heat to high, cover and cook another 20-30 minutes until sauce is thickened. Taste and add salt and pepper as needed. Sprinkle with parsley and serve.

I thought this recipe was delicious the only thing is, I had to add more seasoning like 10 minutes before putting it in the crock pot I seasoned the chicken with adobo, pepper, garlic and onion powder. And then I added some salt and pepper to the cornstarch slurry and it came out pretty good also I didn't have Marsala wine so I used one cup of chicken broth and a tablespoon of balsamic vinegar

Generously salted and peppered the chicken but this was still very bland, tasteless.

I had very think Chicken breasts cut in half and needed 3 hours on low to cook them through. I took them out at 3hrs, let the mushrooms and liquid run on high for 30min, added the cornstarch mixture and put the chicken back in for 20 min. The chicken was on the very edge of too dry. 

Great and simple recipe though, next time I will reduce the time.

This  is exceptional.  Super super easy too.  Made for first time yesterday.  Total home run.  My only changes, and this is specific to me and my family's tastes, is that we will increase the mm mushrooms to 2 cups and the water/corn starch by 50% bc we really loved the marsala sauce.    We ate it over spaghetti noodles and we all loved it including my daughter who doesn't not eat too many things.... Do yourself a favor and make this tonite!!!  You'll be so happy you did!

Eeeeek. I spent like over 30.00$ on this recipe because I doubled it and had high hopes. No flavor. Had to add a ton of salt and was like mushroom chicken soup
Not sure if I can salvage it

Had high hopes for this recipe but was disappointed.  Chicken dry and sauce tasteless.

Followed this recipe to a T, but it was practically inedible and I tossed it out.  The chicken was very overcooked after less than 5 hours on low and the sauce was tasteless and never thickened.

Looks delicious! Can you use thin sliced chicken breast? If so, would  you change cooking time?

We just had this and it was excellent. Delicious sauce.

Very good, but thickening the sauce at the end in the crockpot did not work, needs to be done on the stovetop.
