Crock Pot Creamy Ranch Chicken a seriously addicting comfort food chicken dinner.

Crock Pot Creamy Ranch Chicken

chicken breasts (1 ½ to 2 pounds)

oz block of cream cheese, softened

dry ranch seasoning mix

condensed cream of chicken soup

milk

parmesan cheese

red bell pepper, diced

bacon,

oz penne pasta,

parsley

Spray a 5 or 6-quart slow cooker insert with non-stick cooking spray.

Place raw chicken breasts in slow cooker. 

In a large bowl, mix together softened cream cheese, ranch seasoning, cream of chicken soup and milk. Beat on low until all ingredients are combined then beat on high for about a minute until most of the cream cheese is smooth. It’s okay if there are still a few small chunks of cream cheese in the mixture, these will melt during cooking.  

Stir parmesan cheese, red bell pepper and crumbled bacon into the sauce mixture.

Use a spatula to pour the mixture over raw chicken in slow cooker. 

Cook (lid on crockpot) on high 3-4 hours or on low 6-8 hours until chicken is thoroughly cooked. Internal temperature of chicken breasts should be at least 165 degrees F. 

Once chicken is fully cooked, remove chicken (leave the extra sauce in the slow cooker for now) and shred chicken either on a cutting board using two forks or with an electric hand mixer.

Stir the shredded chicken back into the sauce in the crockpot.

Cook and drain pasta and stir pasta into the crockpot mixture. Stir until all pasta is coated in sauce.

Cook (lid on crockpot) for an additional 30 minutes on high. 

Optional: top with chopped fresh parsley before serving.

Ranch seasoning mix

Season the chicken.

Season the chicken with salt, pepper, and a tablespoon of the Ranch dressing mix.

Add vegetables to slow cooker.

Add the washed baby potatoes and carrots to the slow cooker.

Top with chicken.

Blend sauce ingredients.

Blend the cream of chicken soup, chicken stock, chiles, and remaining Ranch dressing mix until smooth.

Pour over chicken.

Cook on low for 8 hours.

Cook on low for 8 hours or on high for 4 hours.

Serve.

Shred the chicken or break it into chunks with a fork before serving.

Follow instructions 1-5 above.

Place the lid on top of the Instant Pot and set the valve on top to seal.

Press the &quot;MANUAL&quot; button and set the timer for 16 minutes.

When the Instant Pot is finished cooking, do a &quot;quick release&quot; of the pressure.

Remove the chicken and vegetables to a serving dish.

Preheat the oven to 350F

Grease a 13x9-inch pan

Follow the instructions for seasoning the chicken.

Put chicken in a layer in the 13x9-inch pan.

Mix the sauce and pour over the chicken.

Bake for 35-40 minutes or until chicken registers 160F on an insta-read thermometer.

Cook the vegetables separately while the chicken is in the oven.

Let stand for 5 minutes to allow the temperature to come up to 165F.

Slow Cooker Ranch Chicken

Savor the creamy goodness of Ranch Chicken with this easy recipe. Juicy chicken in a rich ranch sauce, perfect for a comforting meal.

teaspoon Italian seasoning

Parmesan cheese

butter, melted

olive oil, or canola oil

Fresh parsley, finely chopped to garnish, optional

cream of mushroom soup

Cut the chicken into thinner slices, about 2 slices per breast. Use a meat tenderizer to gently flatten the chicken; it will expand more while cooking. Aim for slices that are approximately ½ inch thick.

Season the CHICKEN with SALT and PEPPER on both sides. In a shallow bowl, mix together the FLOUR, ITALIAN SEASONING, and PARMESAN CHEESE. Dredge the seasoned chicken in the flour mixture, shaking off any excess, and then set it aside.

In a large pan or well-seasoned cast-iron skillet, heat the OIL and BUTTER over medium-high heat until the butter has melted, and the pan is hot. Cook the chicken until it's golden on each side and fully cooked (approximately 4-5 minutes per side, depending on the thickness of your chicken). Then, transfer it to a plate.

Add the BACON to the pan and cook until crispy. Transfer to a plate and remove some of the excess fat, leaving about 1 teaspoon in the pan.

Add the ONION and GARLIC, and sauté until the onion becomes translucent (approximately 1 minute).

Reduce the heat to low and add the CREAM OF MUSHROOM SOUP, MILK, SOUR CREAM and RANCH SEASONING MIX. Stir to combine.  Bring to a gentle simmer and cook for 3 minutes, then return THE COOKED BACON and cook further for 2 minutes.

Place the chicken in the skillet and spoon the sauce over it.

Partially cover the skillet and allow the chicken to heat through and soak up the sauce's flavors, approximately 2 minutes.

Serve alongside mashed or baked potatoes!
