This creamy Tuscan sausage pasta is a super easy and incredibly comforting and flavorful weeknight dinner recipe!

Tuscan Sausage Pasta

pasta

Italian sausages (crumbled)

garlic (minced)

chicken broth

Dijon mustard

flour

lemon juice

sun-dried tomatoes

heavy/whipping cream

baby spinach (loosely packed)

basil (chopped finely)

Salt & pepper (to taste)

parmesan cheese (to taste)

Boil a salted pot of water and cook pasta al dente according to package directions.

Take the sausages out of their casings and crumble the meat into a skillet. Sauté over medium-high heat for 5 minutes, stirring occasionally, until it's nicely browned on the outside.

Remove the sausage from the pan and set aside. If there's a lot of fat, discard most of it.&nbsp;

Add the garlic, chicken broth, Dijon mustard, flour, and lemon juice to the pan. Stir until well combined (be sure to scrape up any brown bits from the bottom of the pan) and let it bubble for a minute or two.

Add the sun-dried tomatoes and cream to the pan. Let it cook for 2-3 minutes.&nbsp;

Add the sausage back into the pan. Cook for another few minutes until the sauce has thickened up a bit. 

Stir in the basil and spinach. Let it cook for a minute or so until it wilts. Give the sauce a taste and season with extra salt &amp; pepper if needed. 

Drain the pasta and toss it with the sauce. Serve immediately with some freshly grated parmesan if desired.&nbsp;

Salt

Start browning the Italian Sausage in a large skillet over medium heat. After 3-4 minutes add the onion and continue cooking until the sausage is browned and the onions are soft. Reduce the heat to low.  Add the garlic, marjoram, black pepper, rosemary, thyme leaves, and crushed red pepper cooking for 1 minute while stirring constantly. Plate the sausage mixture and cover with foil.

Meanwhile cook the pasta according to package instructions and drain well.

Add the chicken broth to the skillet working to deglaze the bottom and collect all the brown bits. Add the heavy cream to the skillet. Bring to a boil and then reduce to a simmer. Let it reduce by about half.

Turn the heat to low and stir in the parmesan cheese, sundried tomatoes and spinach. Continue cooking until the cheese is melted and the spinach is wilted. Add the sausage mixture and pasta to the skillet. Stir to coat. Season with salt and pepper to taste. Continue cooking over low heat until the pasta dish is heated through.

This was DELICIOUS!!! Only change was I  used half and half since I had a full container. Great substitute but since it’s not as fatty/thick as heavy cream has to add some corn starch so FYI if you sub in half and half! So flavorful and easy. And made a lot for leftovers for lunches! Love that the spinach is in the pasta so no need for a side salad right?! 😂

My wife picked this recipe and I made it tonight.  I followed the recipe almost exactly and we loved it!

This was so tasty!!! I made some vegan modifications to your recipe. I used 1.5 cups of vegan Italian sausage crumbles, 1.5 cups of veg broth, 1 cup of almond milk with a tablespoon of cornstarch. I replace the parm with half a cup of shredded vegan cheese and served it with vegan parm.  I gave it 5 stars!!!

First time I made this meal. My daughter came across it. Only change I did was omit tomatoes. Tomatoes don't agree with us. Highly recommend this meal, you won't be disappointed.

Heat the oil in a large skillet over medium-high heat and saute the peppers and onions until they start to soften, about 8 minutes. Stir in the garlic, fennel, red pepper flakes, and a good pinch of salt and a few cranks of black pepper. Crumble the sausage into the skillet and cook with the peppers and onions until browned. Pour the wine into the skillet and scrape up the bits on the bottom of the pan. Pour the sauce and 3 cups of water into the skillet and then stir the pasta into the mixture until well-combined.

Bring the liquid to a boil, reduce the heat to medium-low, and cover. Allow the liquid to simmer, stirring occasionally at first and more frequently towards the end to prevent the pasta from sticking, for about 15 to 17 minutes. Every 5 minutes or so, stir in a little of the remaining cup of water. If the liquid starts boiling over, reduce the heat to low.

One Pot Creamy Sausage Pasta Recipe Video

This Creamy Sausage Pasta is a quick and easy one pot recipe. It makes a brilliant midweek dinner, where the pasta is cooked in a super tasty the sauce, all in a single pan. 

Creamy Sausage Pasta

Olive oil

Cloves garlic (Peeled and crushed.)

pork sausages

peppers

250 g Dry pasta

Fennel seeds

tsp Italian herbs

0.5 tsp Dried chilli flakes

Salt and black pepper

750 ml Vegetable stock (See notes.)

250 g Cream cheese

g Parmesan cheese (Grated.)

g basil (Chopped, optional.)

Heat the olive oil in a large saucepan or frying pan (one which has a lid) over a medium heat. Add the onions and garlic and fry gently until softened (about 4 - 5 minutes).

Remove the sausages from their skins and plop into the pan in small chunks, add the pepper slices, turn up the heat and let everything fry for 5 minutes until the sausage chunks are golden and the peppers are just starting to blacken at the edges.

Add the dry pasta, chopped tomatoes, fennel seeds, Italian herbs, chilli flakes, salt and pepper and about 500ml of the stock. Give everything a good stir, pop the lid on and cook for 13 - 15 minutes until the pasta is ALMOST cooked through and most of the liquid has been absorbed.

* Note! I always make up 750ml of stock and then check on the pasta as it cooks and add more if needed, if it&#x27;s looking dry. If you like very &#x27;wet&#x27; saucy pasta, go ahead and add it all at the start.

When the pasta is JUST ALMOST cooked, add the cream cheese, parmesan cheese and fresh basil (if using). Give everything a good stir and leave on the heat for a minute or two just to warm through.

Serve immediately.

Best Creamy Sausage Pasta Recipe

butter (divided)

brown onion

sausages (about 3 sausages

sage leaves (roughly chopped)

fennel seeds (optional, see notes)

cream

parmesan (finely grated)

Lemon

Pasta of your choice (see notes)

Cook your pasta in a large pot of well salted water according to package instructions (I undercook dried pasta by a minute so it can bubble away in the sauce at the end and not overcook).

In a large skillet melt 1 tablespoon of butter over medium heat and gently fry the onions for 5 - 6 minutes, adding a pinch of salt half way through. Cook until soft and glassy. You don't want lots of colour on them so lower the heat if you need and keep moving round.

Set them aside on a plate.

Melt the remaining 1 tablespoon of butter over a medium-high heat and when sizzling add the sausage meat. Break up with a wooden spoon but don't move around too much as you want some nice colour on it. 

Cook for 3 - 4 minutes until cooked through.

Add the sage and fennel seeds if using and cook for a 30 seconds - 1 minute.

Lower the heat, push the meat to one side of the pan and add the cream, you only want a very gentle simmer, it shouldn't ever be boiling. (see video below!)

Don't worry if the cream looks a bit dodgy with the butter and sausage fat at top, it will come together once you whisk the cheese in.

Add the parmesan to the cream, in a two seperate lots, letting it melt into the cream before adding the next lot. I like to use a whisk.

Add the black pepper and lemon juice and mix quickly with a whisk.

Add your cooked pasta straight into the sauce along with the onions, toss well and let it all bubble away gently for a minute or two.

Taste for seasoning and add a pinch or two of sea salt if it needs it.

Add a splash of pasta water to loosen if you need.

Serve with extra parmesan and lemon zest on top.

This was absolutely delicious.  Personal preference only, I doubled (and a bit more) the lemon juice.  I added fresh diced garlic to the onions and so pleased I included the fennel seeds.

Absolutely delicious recipe. I added some chopped garlic and spinach, and left out the lemon (forgot to buy one!) and it was lovely. I used double cream (leftover from Christmas), but I can definitely see why the recipe recommends single cream because the sauce ended up quite thick once the parmesan was added. However, nothing an extra cup of pasta water couldn't fix! :)

Start a pot of water to a boil, adding about 1 Tablespoon of Kosher salt to the pot. Add pasta and cook until al dente. Drain, reserving 1 cup of the pasta water. If your sauce isn't completed by the time the pasta is done, toss it with a drizzle of oil to prevent it from sticking.

Meanwhile, heat olive oil in a large skillet over medium heat. Add sausage and onion and cook until sausage is browned and onion is softened, about 7 minutes. Drain any excess fat from the pan.

Add half and half to the skillet, scraping up any browned bits at the bottom. Bring to a simmer and let cook down until reduced by about half, or approximately 3-4 minutes.

Add kale to the sausage mixture and let wilt. Add lemon juice, red pepper flakes, and cheese, stirring until the cheese is melted.

Add the cooked pasta to the skillet, stirring to combine. If sauce is too thick, add splashes of pasta water to get it to thin and thoroughly coat the pasta. Serve warm with good crusty bread and a side salad!
