This creamy spinach rice makes the perfect side dish using fresh spinach! A three cheese melody, cream and broth make it extra creamy and it&#x27;s all cooked in one-pot!

Creamy Spinach Rice

Jasmine Rice

Tbsp Canola oil

chicken broth

heavy cream

oz cream cheese

salt & pepper

oz fresh spinach (coarsely chopped)

parmesan cheese (grated)

Monterey Jack Cheese (grated)

Saute rice in oil for 2 minutes. Add the broth, heavy cream, cream cheese, spices and bring to a boil. Simmer for 10 minutes.

Stir in the spinach, parmesan cheese and simmer for 10 more minutes.

Stir in the Monterey Jack cheese and serve.
