This shrimp recipe is loaded with veggies and Cajun spice (you can make your own if you don't have a jar already!). We went with bell peppers, onions, and corn, but any stir-fry vegetable would work here. 

Cajun Shrimp with Bell Peppers & Corn

extra-virgin olive oil, divided

onion, chopped (about 1 cup)

garlic,

bell peppers, chopped

c. corn (frozen

lb. shrimp, peeled and deveined

Cajun seasoning

Kosher salt

black pepper

lemon juice

tbsp. parsley

What type of shrimp do you prefer to cook with?

In a large skillet, heat 1 tablespoon olive oil over medium heat. Add onion and bell peppers and sauté until tender, about 5  minutes. Stir in garlic and corn and cook for 1 minute more. Transfer vegetables to a bowl.

Add remaining 1 tablespoon&nbsp;oil to pan. Add shrimp in a single layer and season with salt, pepper and Cajun seasoning. Cook until pink, about 1 to&nbsp;2 minutes per side.

Add vegetables and lemon juice and toss until combined. Garnish with parsley before serving.

I used frozen black tiger shrimp, a simple Cajun spice recipe, added a jalapeño for extra heat and a can of diced tomatoes. I opted out on the corn because those extra carbohydrates are not needed for a diabetic. This turned out amazing!

Would you be able to tell me the calories or nutritional info for this recipe? I just made it and it was delicious!!!! And super easy.  Will def make this again.

Decent recipe and was easily modified for South Beach diet by omitting corn and adding chopped tomato.  Only advice: don't add salt until you have added and tasted it with your Cajun Seasoning.  Mine had plenty of salt in it and I ended up over-salting the dish...other flavors were good.  Could use a couple of dashes of hot sauce if you want to kick up the heat!  Thanks for the recipe!

Okay I am currently eating this and it is incredible! I did without the corn. I did onions, green peppers, and red peppers. I also added a little bit of onion powder and paprika. I already can’t wait to make this again! Delicious!

Loved this recipe ! I used a Cajun spice on the shrimp , Fire roasted frozen corn , and added jalapeño. I initially ate over rice but had the leftovers as a salad over spring mix with a lemon garlic dressing and tomatoes and it was amazing !!!!

This was amazing! This has alot of flavor and it was so easy to make. I highly recommend this recipe!

I can't wait to try this I make up a lot of my own stir fry recipes using mostly shrimp or chicken love this kind of cooking.

Terrible recipe! I'm a big shrimp fan and I love Cajun but this recipe leaves a lot to be desired. Don't waste your time or food.

Delicious. Added some cherry tomatoes I had in the fridge. Served over rice. Clean plates all around.
