Pillsbury Crescent Rolls are the dough crescents sold in the refrigerator section of grocery stores. This Crescent roll recipe is the Copycat recipe for Pillsbury crescent rolls and is equivalent to two 8-count tubes of Pillsbury dough sheets. Learn how to make crescent rolls for quick and easy recipes using this convenient ready-to-use dough. 

Crescent Rolls (Pillsbury Copycat)

all-purpose flour

Tbsp sugar

salt

tsp baking powder

Tbsp dry active yeast

Tbsp margarine or softened butter ((2/3 cup))

water

In a large bowl, combine the dry ingredients. Add the margarine and water and mix well. Let it rest for 30 minutes. (Dough will be slightly sticky.)

Divide the dough into two equal parts and roll out each piece to a 12x8 rectangle over parchment paper. Using a bench scraper cut each rectangle into 4 then each piece in half diagonally to make 8 triangles.

This recipe makes 2 tubes of Crescents. Use it in any recipe calling for bought crescents.

Crescent Rolls

whole milk ((236 milliliters))

water ((78 milliliters))

active dry yeast¹

unsalted butter (melted, but not very hot (85 grams))

sugar ((50 grams))

table salt

all-purpose

egg (any size)

Stir together milk and water in a microwave-safe dish and then heat in the microwave until  it reaches a temperature between 105-115F (40-46C). Always stir before checking the temperature as microwaves often heat unevenly.

Pour the liquid into a large mixing bowl and sprinkle yeast and a teaspoon of your sugar on top. Stir to combine and let sit for 5-10 minutes and a foamy cap has formed.

Once yeast is foamy, add melted butter, egg and egg yolk, remaining granulated sugar, salt, and about half of your flour. Stir well until all ingredients are thoroughly combined.

Gradually add additional flour. This can be done by hand or with a stand mixer and dough hook attachment on low-speed. Continue to stir and add more flour as needed (you may not use all of the flour called for or you may end up needing more) until the dough pulls away from the sides of the bowl and forms a ball that is still slightly tacky but not wet and sticky. If you touch it, none or only a small amount should stick to your fingertips.

Transfer to a clean, lightly floured surface (if using a stand mixer just continue to stir on medium/low speed) and knead until dough is smooth and elastic, about 5-8 minutes.

Form dough into a ball and place in a lightly oiled bowl, turning the dough so the entire surface is lightly coated with oil. Cover and place in a warm, draft-free place to rise until doubled in size (this usually takes 1-2 hours for me).

Once dough has risen, turn out onto a clean, lightly floured surface and gently deflate. Divide dough into 3 even parts and form each into a ball.

Roll the first ball into a 12” (30cm) circle and slice into 8 even wedges (a pizza cutter makes easy work of this!).

Starting with the wider end of each wedge, gently tug the bottom corners to slightly stretch them and then roll from the wider end to the tip. Place on a parchment paper lined baking sheep with the tip down against the baking sheet (otherwise it will pop up when baking) and gently shape into a crescent shape. Repeat with remaining wedges and remaining dough, spacing crescent rolls at least 2” apart on sheet.

Cover with a clean towel and place in a warm space to rise until puffed, about 30-60 minutes. Meanwhile, preheat oven to 350F (175C) and prepare egg wash by whisking together egg and 1 teaspoon of water.

Once crescent rolls have risen, use a pastry brush to gently brush the surface of each roll. Transfer to 350F (175C) preheated oven and bake 16-18 minutes until light golden brown (do not over-bake or rolls will be dry).

The Best Crescent Rolls Recipe

Fantastic soft and sweet dinner rolls, these crescent rolls are buttery and the perfect Thanksgiving side, or great with soups.

Cresent Rolls

milk

+ 1 Tablespoon Sugar

Tablespoons yeast

all purpose flour

butter

Heat 1 1/2 cups of milk, 3/4 cup sugar and 1/2 cup of butter, in a microwave safe bowl, for about 2 minutes. You want the milk hot!

Stir in 1-2 cups flour, 1 egg, 1 Tbs salt. Then just let it cool a couple of minutes.

Dissolve 2 Tbs yeast in 2 cups warm water, add in 1 Tbs of sugar.

Add yeast mixture to cooled down milk mixture, making sure it is not too hot, or it will kill the yeast. If your yeast does not foam, start over!

Using a wooden spoon, gradually stir in 7-8 cups of flour, adding 2 cups at time and stirring in between.

Mix by hand. With the final cups of flour the dough will be dense and sticky, and may be hard to stir, use your hands to incorporate the rest of the flour if needed.

Cover the bowl with plastic wrap. Let it rise until doubled in size

When about done rising, butter 2 cookie sheets and set aside.

Flour a work surface, and divide dough into 4 evenly sized balls.

Using one ball of dough at a time, roll out into a circle form that is not too thick, you want it to be about half a centimeter

Use 2 TBS of butter, and spread it over to the top of the dough.(You can use a butter spread if desired)

Use a pizza cutter to slice dough into 12 triangles. (Cut into quarters, then each quarter into 3 evenly sized pieces).

Roll the dough starting with the wide end of the triangle

Place on buttered or greased baking sheet.

Make 3 rows of 8 rolls.

Pre-heat oven to 350 degrees.

Mix water and egg to make egg wash.

Place the pans of rolls in a warm place to let rise.

Once they are touching and full in size, brush with egg wash mixture, and cook until golden brown. About 15 – 20 minutes (watch carefully, time depends on oven).

When fresh from oven, run a stick of butter over the top.
