These crispy potatoes are such a hit that we make them at least once a week for breakfast, and sometimes for dinner as well!

Instant Pot Crispy Potatoes

Yukon golds,

ghee, potatoes

Sea salt and black pepper

green onions

Your choice of main dish,

Place the cleaned potatoes onto the wire rack, making sure not to go over the &#8216;fill line&#8217; on the side of the Instant Pot, (I use the 6-quart). Check to make sure the potatoes aren&#8217;t touching the sides. Then pour 1 cup of water into the bottom.

Set the Instant Pot to sealing and pressure cook for about 10 minutes for small potatoes, 18 for medium, and 30 for very large potatoes. When the cooking time is done, do a quick release. Then carefully lift out the potatoes to cool.

When you can easily handle the potatoes, cut them into bite sized pieces. Then place them into containers and store in the refrigerator for up to 4 days.

To serve the potatoes, heat a large (15&#8243;) non-stick skillet over medium high heat. When the pan is hot but not smoking, add the ghee or butter and half of the prepped potatoes. Turn the heat down to medium and sprinkle the potatoes with sea salt and pepper.

Cook until browned before turning them to brown the other side, this takes about 6-8 minutes per side.

At the end of the cooking time, add the green onions and toss to combine. Cook and additional 2 minutes, then serve as desired.

Delicious, crispy breakfast potatoes roasted to perfection in the oven. These easy roasted breakfast potatoes are heavily flavored with warming spices like turmeric, garlic and cumin, and are wonderful served with eggs, avocado, sausage or bacon! A must-make for breakfast or brunch.

Perfectly Crispy Roasted Breakfast Potatoes

For the potatoes:

russet potatoes,

olive oil

For the spice mix:

garlic powder

cumin

coriander

turmeric

paprika

red cayenne pepper

salt

black pepper

Preheat oven to 425 degrees F. Coat large baking sheet with nonstick cooking spray to prevent sticking.

Add potatoes to a large bowl, drizzle with 2 tablespoons olive oil, then add the following spices: garlic powder, cumin, coriandr, paprika, ground turmeric, red cayenne pepper, salt and pepper. Use clean hands to toss potatoes to coat the the potatoes in oil and spices. Add potatoes to the baking sheet and spread out evenly.

Bake for 20 minutes, then use a metal spatula to toss potatoes, increase heat to 475 degrees F and cook potatoes for another 15-20 minutes until they are golden brown and slightly crisp to your liking.

Serve with ketchup or hot sauce! Serves 6-8.

Make Ahead Breakfast Potatoes

yellow or red potatoes (about 2-2½ pounds worth)

black pepper (adjust to taste)

Preheat oven to 400°F. Scrub and rinse the potatoes. Cut them into slightly smaller than bite-size pieces, about ½-inch. Place them on a large baking sheet and drizzle a couple of tablespoons of olive oil over them. Toss with your hands to thoroughly coat the pieces. Spread them across the baking sheet.

Roast for 40-45 minutes, stirring once after 20 minutes. Check them again around 40 minutes and stir or turn as needed. Let them get soft and then a bit crispy before removing them from the oven.

Serve hot or allow the potatoes cool completely and then store them in an airtight container in the refrigerator until ready to use.

This is definitely one of those breakfast staples we all love but man alive on a school day when we have to be out the door early, I dont want to spend 15-20 minutes cutting potatoes and 45+ minutes baking them.  I wish they could cook faster!  LOL  I know good things are worth waiting for but they're also one of those things that just aren't as good reheated so havign them fresh is SO worth it!
