The Ultimate Bacon Cheeseburger Soup Recipe - an easy, creamy soup made on the stovetop or in the crockpot that tastes just like a cheeseburger.

The Ultimate Bacon Cheeseburger Soup (Stovetop or Crockpot)

bacon (chopped)

onion

celery

garlic (minced)

beef

russet potatoes (peeled and chopped inch ½ inch cubes)

chicken broth

can diced tomatoes (drained)

cream cheese

thyme

parsley

cheddar cheese

Salt and pepper

Corn starch (to thicken the soup, if you like)

Garnishes: extra shredded cheese, bacon bits, chopped scallions

Set a large 6-8 quart saucepot over medium heat. Place the chopped bacon in the pot. Sauté the bacon until crisp, then scoop it out and reserve the bacon bits for the garnish. Leave the bacon grease in the pot.

Add the onions, celery, and garlic to the bacon grease. Sauté for 3-5 minute to soften. Move the veggies to the sides of the pot and add the ground. Brown the beef, breaking it into small pieces with a wooden spoon. Add 1 teaspoon dried thyme, ½ teaspoon salt, and ½ teaspoon pepper.

Once the beef is cooked, add in the chopped potatoes, chicken broth, diced tomatoes, and cream cheese. Bring to a simmer. Simmer for 20 minutes, until the potatoes are soft and the broth and cream cheese have thickened into a creamy soup base.

Once the potatoes are soft, stir in the parsely and shredded cheddar cheese. Taste, then salt and pepper as needed. (If the soup base seems thin, toss the shredded cheese with 1 tablespoon corn starch before stirring it into the soup. Simmer another 2-3 minutes to thicken.)

Stovetop Directions:

Cover and slow cook on HIGH for 4-5 hours or on LOW for 8-9 hours, until the potatoes are soft and the broth and cream cheese have thickened into a creamy soup base.

Once the potatoes are soft, stir in the parsley and shredded cheddar cheese. Taste, then salt and pepper as needed. (If the soup base seems thin, toss the shredded cheese with 1 tablespoon corn starch before stirring it into the soup. Simmer another 5-10 minutes to thicken.)

Crockpot Cheeseburger Soup is a hearty dinner full of flavor! This hamburger stew recipe is made with ground beef, bacon, potatoes &amp; a blend of savory seasonings everyone loves!

Crockpot Cheeseburger Soup

carrots (shredded)

potatoes

bacon (cooked & chopped)

tsp steak seasoning

salt

¼ tsp pepper

onion powder

garlic

beef broth

oz velveeta (cubed)

milk

cheddar cheese (for topping)

Prep: Brown the ground beef in a large skillet on the stove.

Chop the onion, carrots, potatoes into bite size chunks. The bacon needs to be cooked before adding to the slow cooker. Give this recipe for the easiest way to cook bacon a try.

Assemble: Transfer the browned and drained ground beef into the slow cooker. Add the chopped potatoes, carrots, all but 2 TBSP of bacon, chopped onion, garlic, all the seasonings, and the beef broth.

Cook: Stir everything to combine and proceed to cook on low for 6 hours or high for 4 hours or until potatoes are tender.

Add cheese: About 30 minutes before serving, add in the cubed Velveeta cheese and milk. Stir to combine well. Let cook for another 30 minutes to let the cheese fully melt, stir two times during this 30-minute period.

Serve: Top each individual serving bowl of soup with the remaining bacon, shredded cheese and scallions. Serve hot and enjoy!

I usually like BWASOB recipes, but this one was less than sub par for me... guess it was the carrots and no tomatoes that made it bland for me.
