Red curry lentils is one of my favorites! This version is so simple - just toss everything in the crockpot. Easy, healthy, and full of flavor.

Crockpot Red Curry Lentils

regular brown lentils (I used maasor lentils this time)

onions, diced

garlic,

ginger

butter (optional)

red curry paste

garam masala

turmeric

sugar

cayenne pepper

tomato puree (29 ounces each)

salt

coconut milk

cilantro

rice

Rinse the lentils and place them in a large crockpot. Add the diced onions, garlic, ginger, butter, curry paste, garam masala, turmeric, sugar, and cayenne. Stir to combine.

Pour just 1 can of tomato puree over the lentils. Re-fill the can with water twice and add to the crockpot. Stir to make sure that the lentils are covered with liquid. Cover and cook on high for 4-5 hours or low for 7-8 hours.

Check once or twice during cooking to add more water or tomato puree if the lentils are soaking up all the liquid. The amount of water or tomato puree you add depends on how soupy your want your lentils to be. For me, 1 1/2 cans of tomato puree plus the two cans of water was perfect. Taste and season with salt. Lentils will be soft when they are done cooking.

Stir in the coconut milk and sprinkle with cilantro just before serving. Serve over rice or naan bread.

Crockpot Coconut Lentil Curry

brown lentils

ginger (chopped)

EACH: cumin, coriander, turmeric

cayenne powder

can of crushed tomatoes

garlic

onion (finely minced)

sea salt

cherry tomatoes

Add the dried brown lentils, ginger, cumin, coriander, turmeric, if using the cayenne, crushed tomatoes, garlic, onion, and 3 cups of water in your crockpot. Put the lid on and set the timer for 4 hours on high or 8 hours on low.

Slow Cooker Cauliflower Lentil Curry is healthy comfort food at its finest. Red lentils and cauliflower florets simmer in a rich, aromatic curry sauce for a feel-good, fill-you-up meal. Serve this slow cooker curry over rice or noodles with fresh herbs for an easy, hands-off dinner.

Slow Cooker Cauliflower Lentil Curry

Place the lentils in the bottom of a 4- to 6-quart slow cooker coated with cooking spray. Add the cauliflower, onions, curry paste, garlic, ginger, turmeric, garam masala, salt, and cayenne; stir to coat. Add broth and stir well to combine.Cover and cook on high for 4 to 5 hours or low for 7 to 8 hours, until the lentils are soft and cauliflower is tender.

Remove lid, turn slow cooker OFF, and stir in coconut milk and dates. Let sit, uncovered, for 10 minutes, before serving over rice or grain of choice.Garnish with fresh cilantro or parsley, and pomegranate arils (or pickled red onion), if desired.

Slow Cooker Chicken Curry is made with coconut milk, chicken breasts, an easy curry powder seasoning blend and sweet potatoes.  This Crock-Pot Indian curry is healthy, dairy-free, and gluten-free.  It makes a quick and easy weeknight dinner when served with rice.

Slow Cooker Chicken Curry with Coconut Milk

Whisk together curry powder, turmeric, coriander, salt and sugar in a small bowl.

Pour all but 1 cup of coconut milk into the bottom of a 6-quart Crock-Pot.  Reserve remaining coconut milk until after curry is done cooking.

Add butter, garlic, and the seasoning ingredients.  Stir to incorporate the seasonings.

Place chicken breasts into the slow cooker, making sure to submerge them in the liquid.

Add sweet potatoes and onions.  Stir to combine.

Cover slow cooker and set to Low for 5-6 hours, or High for 4-5 hours.

Check on curry during the last hour of cooking and stir the ingredients if the curry is starting to stick to the sides.

Shred chicken using two forks during the last 30 minutes of cooking.

Pour in reserved 1 cup of coconut milk.  Stir until well combined.

Turn off slow cooker and let rest for at least 20 minutes before serving.  This will help thicken up the sauce.  Serve chicken curry with basmati rice and additional cilantro, if desired, and enjoy!  See this recipe in Meal Plan #6.

Crockpot Chickpea Curry Recipe - Try this easy vegetarian slow cooker chickpea curry recipe that is gluten-free and can be prepared dairy-free, too!

Crockpot Chickpea Curry Recipe

ginger, (grated)

olive oil

heavy cream ((or 13 ounce can thick unsweetened coconut milk))

cumin

honey

1/4-1/2 teaspoon crushed red pepper ((optional))

chickpeas, (drained (2 cans))

Add the oil to a skillet and place over medium heat. Sautee the onions, garlic, and ginger until soft, 3-5 minutes, then remove from heat.

Place the onion mixture in the blender, along with the cream (or coconut milk,) all spices, honey, and 1 teaspoon salt. Cover and puree until smooth.

Pour the curry blend into the slow cooker, then add the chickpeas and chopped sweet potato. Mix well. Place the lid on the slow cooker, and turn on high for 4-5 hours or low for 6-8 hours.

Once the sweet potatoes are soft, serve warm over basmati rice or with Indian style flatbread (naan or chapatis.)
