A simple recipe for slow cooked shredded chicken with a Carolina-style tangy bbq sauce. 

Carolina BBQ Crockpot Shredded Chicken

lbs Boneless Skinless Chicken Breast

C (60 grams) Yellow Mustard

C (60 grams) Apple Cider Vinegar

C (60 grams) Worcestershire Sauce

Tbsp (30 grams) Hot Sauce, I used Valentina's

C (96 grams) Swerve Brown Sugar, or light brown sugar

tsp Ground Mustard

tsp Black Pepper

tsp Onion Powder

Mix everything together in a bowl or crockpot...

Mix everything together in a bowl or crockpot before adding the chicken. Flip the chicken a few times to fully coat both sides.

Cover and cook on low for 1.5-2.5 hours...

Cover and cook on low for 1.5-2.5 hours or until the chicken reaches an internal temp of 165F. Be careful not to overcook or the chicken will be difficult to shred and rubbery. (You can cook on high, but the longer cook time will produce more flavorful chicken.)

Place all ingredients in crockpot (this is the slow cooker that I use).

Cover and cook on high for 2-3 hours or low for 4-6 hours, or until chicken is cooked through and shreds easily with a fork. You can use an instant read thermometer to check that the internal temperature of the chicken has reaches a safe 165 degrees F.

Remove the chicken from the slow cooker, leaving the broth in the pot. Let the chicken cool slightly and then shred the chicken. Stir in about 1/2 cup of the broth from the pot for flavor and moisture.
