Crockpot Tortellini Soup is a creamy and tasty soup filled with Italian sausage, vegetables, and cheese tortellini that is hearty enough to be a meal.

Crockpot Tortellini Soup

extra virgin olive oil

Italian sausage

red onion, (chopped (approximately 1½ cups))

garlic cloves, (minced (approximately 1½ teaspoons))

carrot, (diced (approximately 1 cup))

celery, (diced)

(14.5 ounces) diced tomatoes, (drained)

chicken stock

heavy cream

Italian seasoning

salt

pepper

½ cup parmesan cheese, (shredded)

cornstarch

water

spinach, (chopped)

(20 ounces) cheese tortellini

Heat oil in a large skillet.

In a large skillet, over medium heat, add oil.

Brown Italian sausage. Drain grease.

Once hot, add ground sausage and cook until browned, breaking it up in the pan as you go (about 5 minutes). Drain grease.

Add sausage to crockpot. Then, add onion, garlic, carrots, celery, tomatoes, chicken stock, heavy cream, Italian seasoning. Salt, pepper, and parmesan cheese.

Add the sausage to the crockpot and top with onion, garlic, carrots, celery, tomatoes, chicken stock, heavy cream, Italian seasoning, salt, pepper, and parmesan cheese.

In a small bowl, mix cornstarch and water.

In a small bowl, mix together cornstarch and water. Mix into the soup. Cook 3-4 hours on low.

When ready, add spinach and tortellini. Cook for 7-8 hours. Serve.

Roll your pound of lean ground beef into small meatballs.

In to your slow cooker add in the onions and pepper, garlic, beef stock, sugar, spaghetti sauce, sliced carrots, garlic salt and pepper.

Stir to combine and add in the meatballs.

Cook on low 4-6 hours or high 4 hours.

About 45 minutes before you are ready to serve add in the tortellini.

8-oz Block Cream Cheese,

18-oz Package Refrigerated Cheese Tortellini

Cups Spinach (packed)

Crumble and cook the sausage in a medium skillet over medium heat until brown then drain any excess grease from the pan and add it to a slow cooker.

Pour in the marinara sauce, garlic powder, onion powder,  Italian seasoning, salt and pepper and stir well to combine.

Pour in the chicken broth and stir then add the cream cheese pieces around on top.

Cover the pot with the lid and cook on high for 4 hours or on low for 7 hours then stir well until the cream cheese is broken down.

Stir in the tortellini, cover and cook on high for 30 minutes then stir in the spinach and cook for another 15-20 minute or until the spinach has reduced significantly and the pasta is cooked through.

Garnish with fresh basil leaves and parmesan cheese if desired.

In a large skillet, cook Italian sausage and onion over medium-high heat, stirring often, until browned and drain excess fat (if desired).

Add tomato paste, Italian seasoning, garlic and salt. Cook and stir 2 minutes.

Pour Italian sausage mixture into a 4-6 quart slow cooker and add in the broth, carrots, celery, and onion.

Cover and cook on low for 5-6 hours or on high for 2-3 hours, until the vegetables are tender.

Stir in tortellini, spinach (if using), cream and Parmesan. Cover and let cook for 10-15 minutes until tortellini are al dente.

Taste, adjust seasonings as desired, and serve.
