Crockpot Tuscan Chicken

chicken breasts

Homemade Italian Seasoning

onion powder

salt and cracked black pepper

garlic (minced)

tomatoes

chicken broth

heavy cream

Parmesan cheese, (grated)

baby spinach chopped

Season the chicken breasts with Italian seasoning, onion powder, and salt and pepper. Season on both sides of the chicken.

Spray the inside of the crockpot with nonstick cooking spray. Layer the seasoned chicken in the bottom of the crockpot.

In a mixing bowl, whisk together the chicken broth, heavy cream, minced garlic, chopped sundried tomatoes, and parmesan cheese.

Pour the sauce over the chicken into the crock pot.

Cook on high for 3 hours, or low for 5 hours.

Right before serving, add the chopped spinach to the crockpot. Replace the lid and allow the spinach to wilt.

Season with additional salt and pepper if needed. Serve over cooked pasta, and enjoy!

An easy recipe made in the slow cooker, this chicken with sun-dried tomatoes, artichokes, and spinach is coated in a creamy sauce.

oz artichoke hearts, drained and rinsed

spinach leaves, packed

Season chicken on both sides with kosher salt and black pepper. Lightly spray or drizzle olive oil on the inside of the slow cooker. Add chicken to the slow cooker then top with broth, garlic, oregano, shallots, artichoke hearts, and sun-dried tomatoes.

Slow cook the chicken on low for 4-6 hours or on high for 2-3 hours, or until chicken reaches an internal temperature of 165 degrees Fahrenheit. About 30 minutes before serving, add the cream cheese and spinach on top.

Allow those to warm through and wilt, then stir everything together before serving.  Sometimes it&#39;s easier to remove the chicken breasts to make sure everything comes together evenly. Add more kosher salt and black pepper to taste. If you&#39;d like, you can shred the chicken using two forks to pull it apart, or serve as a whole chicken breast.

This is a great recipe and I’m so glad that we tried it. It’s super easy to throw everything in the crockpot and go about your day. We ended up shredding the chicken at the end and putting it over rice! This will be one of our workday go to meals!

The Best Crockpot Tuscan Chicken

lb chicken breasts (5 large)

heavy cream (double cream)

spinach (fresh)

parmesan cheese (grated)

sun dried tomatoes (2.5 oz)

Italian seasoning

paprika

tsp salt

tsp black pepper

Mix the cream, minced garlic, and cornstarch. Stir well to avoid any lumps.

Mix the spices and use them to completely coat the chicken breast (use your hands to make sure all the meat is coated).

Add the slurry, the cheese, and sundried tomatoes (cut into smaller pieces). Stir then close the lid.

Prepare the elements

Cook the chicken on LOW for 3 hours. Insert a meat thermometer into the thickest part of the breast to check for doneness. When cooked through, it should read 165°F / 75°C. Alternatively, press the breast to see if the juices run clear.

Remove the lid and stir in the spinach until it wilts. Serve.

Crock pot Tuscan Chicken Recipe

chicken breasts (or thigh)

onion

garlic

basil

parsley

thyme

baby spinach (fresh)

parmesan cheese (-grated (or Locatelli Romano))

lb rigatoni (optional (or your favorite pasta))

Place the chicken breasts in the crockpot.

Sprinkle the dried basil, parsley, thyme, and oregano over the breasts. 

Add the chopped onion, sundried tomatoes, and garlic to the slow cooker.

Pour chicken broth over all the ingredients.

Set the crockpot on the low setting and cook for 5-6 hours.

When the chicken has cooked to an internal temperature of 165 degrees F, remove the chicken breasts from the slow cooker and set them aside on a plate.

Add the parmesan cheese, heavy cream, and spinach to the crock pot.

Stir to combine the ingredients into the sauce.

Add the chicken breasts back to the crock pot.

Continue cooking for about 30 minutes to let the sauce thicken.For a thicker sauce, remove the sauce from the crockpot and place it in a saucepan over medium heat. Add a beurre manie to the sauce to thicken.

Serve the chicken over your favorite pasta, rice or grain.

Spray the insert of your slow cooker with cooking spray if desired and add the chicken. Season it with salt and pepper. Set aside momentarily. Chicken Tips - Chicken comes in all shapes and sizes. I use breasts that are of an even , normal thickness  and not &quot;thin-sliced&quot; which are NOT a great choice here nor are chicken tenders or small pieces of chicken because they will cook very quickly and can actually overcook before the sauce has thickened and reduced. If your chicken is very thick/big, slice it into 1/2-inch pieces; and/or pound with a meat tenderizing tool.

To a small bowl or 2-cup measuring cup, add the cream, broth, Parmesan, cornstarch, Dijon, Italian seasoning, smoked paprika, garlic, and whisk to combine. It will not be &quot;smooth&quot; due to the cheese and the garlic which is fine. Pour the mixture evenly over the chicken.

Evenly scatter the sun dried tomatoes over and around the chicken.

Place the lid on the slow cooker and slow cook for about 4-5 hours on LOW, OR about 2-3 hours on HIGH. Cooking Tips - If you have the time, I prefer low heat for this recipe because the cream is less likely to curdle or separate with low-and-slow heat. However, don&#39;t cook for more than 5 hours (unless chicken truly isn&#39;t done) because you will risk the sauce breaking or separating. Chicken is done when the internal temp reaches 165F.

In the final 10 minutes or so of cooking, give the sauce a good stir to make it cohesive. Add the spinach, nestle it into the sauce by stirring it in, place the cover back on, and cook for another 10 minutes or until the spinach wilts.

Taste the sauce, and make any necessary flavor adjustments such as more salt, pepper, paprika, etc. Optionally garnish the chicken with extra Parmesan and serve immediately with pasta, mashed potatoes, rice, or your favorite sides.

I made this recipe last week with the chicken and it is absolutely a slam dunk delicious meal.  I belong to several new blogs and I told everybody about it. I would like to make it tomorrow but use bone in pork chops.  I will monitor internal temperatures, but any thoughts on timing. chops are about a half inch thick. This recipe was restaurant quality.  I didn't have the time to use my slow cooker, so I used a Dutch oven at 325 -350 and it was tender and so delicious.  Everything else I followed to the letter.
