These Crumbl S&#039;mores Cookies are irresistible. They are made with browned butter, milk chocolate chips, plenty of graham cracker crumbs and of course, toasted marshmallows. Indulge in a Crumbl style s&#039;mores cookie anytime with this easy recipe!

Crumbl S'mores Cookies

unsalted butter (4 ounces)

light brown sugar, packed (3.5 ounces)

sugar (2.3 ounces)

vanilla extract

all-purpose flour (6.65 ounces)

graham crackers (full sheets (about 66 grams))

baking soda

salt

milk chocolate chips

marshmallows ((cut in half the long way))

unsalted butter

graham cracker

Melt a stick of butter slowly on medium low heat in a saucepan or skillet. Once melted, turn the heat up a bit and watch the butter closely and stir frequently using a wooden spoon. The butter will be bubbling and popping as the water is evaporating out. Once this slows down you need to keep a close eye as the next step is the browning of the milk solids.

Once the milk solids are beginning to toast, you&#39;ll start to notice tiny bits of brown forming in the pan. Swirl the spoon around the pan a few times more and remove it promptly from the heat. The butter should have swirls of browned bits in the bottom of the pan and is now ready to use.Note: Butter can go from toasted to burnt quickly, so watch closely.

Brown Butter

Pour the browned butter (every bit!) into a large bowl and allow to cool for ten minutes. Meanwhile: Line a large baking sheet with parchment paper and set oven to 350°F. Place graham crackers in a zip top bag and crush with a rolling pin until they are finely ground.

Add the brown sugar and granulated sugar to the slightly cooled brown butter mixture and use a wooden spoon to stir well until fully combined (1-2 minutes).Mix in the egg and vanilla extract until combined.

Add the flour, graham cracker crumbs, baking soda, and salt to the butter mixture and mix well until combined. Add in the milk chocolate chips and mix to incorporate (they can be a little tricky to incorporate into the dough, so don&#39;t worry too much about perfection here).

Use a 1/3 cup cookie scoop to measure out 8 cookies (or just divide up the dough into 8 round cookie dough balls) place on a baking tray and bake for 10 minutes until cookies are set, but not quite golden brown on the edges. Immediately after removing the cookies from the oven, press two marshmallow halves into the top of each cookie, overlapping them a bit.Turn off the oven and turn on the broiler setting to high.

Broil cookies, watching very closely, for about 1-2 minutes or until marshmallows are lightly golden. You may need to rotate the pan to evenly brown all the marshmallows.After browning marshmallows, allow cookies to cool for 10-15 minutes before adding the optional chocolate drizzle and graham cracker crumbles.

Graham Cracker Cookies

For the chocolate drizzle, melt 1 tablespoon of butter in the microwave until fully melted and hot. Stir in 2 tablespoons of milk chocolate chips until totally melted. Set aside.

Melt 2 teaspoons of butter and mix in one finely ground graham cracker until combined.

Drizzle the chocolate over the still-warm cookies with a spoon and sprinkle pinches of the buttered graham crackers over each cookie. Enjoy!

Chocolate Drizzle &amp; Graham Cracker Crumbles

These copycat Crumbl carrot cake cookies are fluffy and kissed with a bit of spice. Then topped wit a creamy cream cheese frosting , just like a cake but in cookie form. 

Crumbl Carrot Cake Cookies

unsalted butter (room temp)

eggs (room temp)

sugar

brown sugar

vanilla extracts

all purpose flour

Tablespoons corn starch

baking powder

cinnamon

ginger

All spice

carrots (Shred you own **see notes)

pecans (coarsly chopped)

oz cream cheese (room temp)

pecans (finely chopped)

Peel and shred two cups of carrots and chop pecans and set aside.

Beat with a mixer the room temperature butter and both sugars until it is nice and fluffy .

Add One Egg at a time and the vanilla extracts. Stopping to scrap down the sides a few times beat for about 3-4 minutes

Sift together the dry ingredients . Do Not skip this step

Add a little of the flour mixture at a time to the creamed mixture.

Add prepared carrots and pecans , mix until just combined.

Divide dough into 12 portions . I used a large ice cream scoop and mine weighed about 3.6 oz each.

Place dough on a cookie sheet lined with wax paper and chill for 6-8 hours

Once dough is chilled preheat oven to 350 degrees on line cookie sheets with parchment paper.

Place 3-4 dough balls on prepared cookie sheet allowing plenty of room to spread. Do not over crowd, it will take baking several batches

Bake for approximently 20 minutes. You want the edges to be golden brown and the center to be cooked.

Allow cookies to cool on the sheet for 10 minutes and transfer them to a cooling rack.

Once all of the cookies are cool make the cream cheese frosting . Start by beatng the cream cheese and butter together until nice and fluffy.

Add the vanilla and beat until combined

Add a little powdered sugar at a time , beat until fluffy .

Pipe or spread frosting on to cookies and top with a little bit of pecans .

Since these have cream cheese frosting they need to be stored in the fridge but check out my notes for tips.

SO DELICIOUS! Not sure if my photo is attaching. I went exactly by the recipe but added a cup of shredded coconut. 

I used a silpat instead of parchment. I think I will use parchment next time. My oven is baking a little low so I will increase the temp next time (I had to bake 22-23 minutes for the centers to be done, and the rest was only slightly dry).

I made little carrot transfers with royal icing to go on top. I measured 3.6 ounce cookie balls but actually got 13 cookies instead of 12.

I made these for Easter as party favors for each guest to take home. They were a huge hit and are absolutely delicious! Also, in case it helps anyone, I only chilled the cookies for an hour before baking and they still came out perfect. Thanks a bunch for this recipe, it’s going right in my recipe box!

Is the 6-8 hour chill necessary for good results? I'm impatient!😆
