Crumbl S'mores Cookies

unsalted butter (4 ounces)

light brown sugar, packed (3.5 ounces)

sugar (2.3 ounces)

vanilla extract

all-purpose flour (6.65 ounces)

graham crackers (full sheets (about 66 grams))

baking soda

salt

milk chocolate chips

marshmallows ((cut in half the long way))

unsalted butter

graham cracker

Melt a stick of butter slowly on medium low heat in a saucepan or skillet. Once melted, turn the heat up a bit and watch the butter closely and stir frequently using a wooden spoon. The butter will be bubbling and popping as the water is evaporating out. Once this slows down you need to keep a close eye as the next step is the browning of the milk solids.

Once the milk solids are beginning to toast, you'll start to notice tiny bits of brown forming in the pan. Swirl the spoon around the pan a few times more and remove it promptly from the heat. The butter should have swirls of browned bits in the bottom of the pan and is now ready to use.Note: Butter can go from toasted to burnt quickly, so watch closely.

Brown Butter

Pour the browned butter (every bit!) into a large bowl and allow to cool for ten minutes. Meanwhile: Line a large baking sheet with parchment paper and set oven to 350°F. Place graham crackers in a zip top bag and crush with a rolling pin until they are finely ground.

Add the brown sugar and granulated sugar to the slightly cooled brown butter mixture and use a wooden spoon to stir well until fully combined (1-2 minutes).Mix in the egg and vanilla extract until combined.

Add the flour, graham cracker crumbs, baking soda, and salt to the butter mixture and mix well until combined. Add in the milk chocolate chips and mix to incorporate (they can be a little tricky to incorporate into the dough, so don't worry too much about perfection here).

Use a 1/3 cup cookie scoop to measure out 8 cookies (or just divide up the dough into 8 round cookie dough balls) place on a baking tray and bake for 10 minutes until cookies are set, but not quite golden brown on the edges. Immediately after removing the cookies from the oven, press two marshmallow halves into the top of each cookie, overlapping them a bit.Turn off the oven and turn on the broiler setting to high.

Broil cookies, watching very closely, for about 1-2 minutes or until marshmallows are lightly golden. You may need to rotate the pan to evenly brown all the marshmallows. After browning marshmallows, allow cookies to cool for 10-15 minutes before adding the optional chocolate drizzle and graham cracker crumbles.

Graham Cracker Cookies

For the chocolate drizzle, melt 1 tablespoon of butter in the microwave until fully melted and hot. Stir in 2 tablespoons of milk chocolate chips until totally melted. Set aside.

Melt 2 teaspoons of butter and mix in one finely ground graham cracker until combined.

Drizzle the chocolate over the still-warm cookies with a spoon and sprinkle pinches of the buttered graham crackers over each cookie. Enjoy!

Chocolate Drizzle & Graham Cracker Crumbles

Thick, crispy and chewy S'mores cookies with a graham cracker base topped with giant toasted marshmallows and melted chocolate drizzle

Thick And Chewy S'mores Cookies Recipe

tbsp unsalted butter, room temperature (170 grams)

sugar (67 grams)

light brown sugar, packed (133 grams)

1 egg yolk

vanilla

graham crackers (50 grams)

all purpose flour (227 grams)

tsp baking powder

tsp baking soda

tsp salt

dark chocolate chips chocolate (80 grams)

mini marshmallows (40 grams)

giant marshmallows

dark chocolate

Add the butter, brown sugar and granulated sugar to a bowl and whisk on medium high speed for 2-3 minutes until the mixture turns fluffy and light in color. Keep scraping the bowl along the way

Add the egg, egg yolk and vanilla. Whisk for another minute until a creamy mixture forms

Add the crushed graham crackers and whisk until just combined

Now sift the flour, baking powder, baking soda and salt in a separate bowl and mix to combine. Add the dry ingredients to the cookie dough in 2 additions, and use a rubber spatula to gently fold until the flour is almost mixed into the dough

Add the dark chocolate chips and mini marshmallows, and continue folding until no more streaks of flour remain and the add ins are evenly dispersed. Don’t overmix

The cookie dough should be soft and easy to work with. If it feels too sticky, refrigerate it for 10-15 minutes until it becomes easier to shape with your hands

Divide the cookie dough into 5 portions, each should be ~5.5oz in weight. Working one piece at a time, gently shape into a ball, then lightly flatten so they form a 2.5-3″ disc. Repeat with all portions

Place the cookie dough balls on a plate/tray and refrigerate overnight (minimum 6 hours, overnight recommended)

When you’re ready to bake after chilling, pre-heat the oven to 375F (conventional / no fan) and line a large light colored baking sheet with parchment paper

Place the chilled cookie dough balls on the baking sheet, keeping at least 3″ between each

Transfer to the oven and bake at 375F for 8 minutes, then drop the temperature to 350F and bake for another 7 minutes.

Remove the tray from the oven, and use the back of a measuring spoon to press down the middles of the cookies and create a pocket / indent. Place one giant marshmallow into the pocket on each cookie, and quickly return the cookie tray to the oven. Try to do this step as quickly as you can so the cookies remain hot

Bake for another 2-4 minutes until the cookies are golden, look set on the edges but still soft in the middle, and the marshmallows on top have started to get a light golden color on them

Remove the cookies from the oven, and let them cool at room temperature for 20 minutes

In the meanwhile, melt the 50g dark chocolate in the microwave in 20 second increments, stirring in between. Transfer it to a piping bag and snip a small hole at the tip

Once the cookies have rested, take a blowtorch and quickly torch the marshmallows so they become warm and toasted. Then drizzle the chocolate on top of the cookies generously

Delicious cookies. Easy instructions. Will make again.
