This recipe for authentic English crumpets yields and amazing texture and fabulous flavor!  Delightfully crispy, chewy, and delicately spongy, you&#x27;re going to fall in love with these homemade crumpets!

Authentic English Crumpets Recipe

all-purpose flour ((can substitute half bread flour))

salt

milk

active dry yeast

cane sugar

water

baking soda

Stir the sugar and yeast into the warm milk and let it rest for 10 minutes until frothy.  In a large mixing bowl or the bowl of a stand mixer combine the flour and salt.

Add the liquid to the flour mixture and stir/knead until a thick dough forms.  If using a stand mixer, use the paddle attachment and beat the mixture for about 3 minutes until a thick dough forms. Cover the bowl loosely with plastic wrap and set it in a warm place for at least an hour or up to two to let the dough rise (it should nearly double in size).&nbsp;&nbsp;This stage is important for the formation of the bubbles that will later form the classic holes in the crumpets.&nbsp;

Dissolve the baking soda in the warm water and add it to the dough. If using a stand mixer, beat the batter for a minute or two. Or use an electric mixer to beat the batter. If some small lumps remain that's okay. Any remaining lumps will dissolve during the next resting stage.Cover the batter and let it rest in a warm place for at least 30 minutes (see note below). After 30 minutes the batter should be nice and bubbly.

Prepare the crumpet rings by greasing the inside of each rim. (I use and like Norpro&#039;s English Muffin/Crumpet Rings.) Lightly oil the frying pan. You can use a regular skillet or a cast iron pan (my preference).  I use my Lodge 12&quot; Cast Iron Pan.Place the rings in the frying pan over medium-high heat. 

Once the rings are hot, pour the batter into each ring until it&#039;s slightly more than half full. Cooking time will vary depending on your stovetop and frying pan but these will cook for approx. 10 minutes (**the time will vary according to the kind of cooktop and cookware you&#039;re using and may take longer.  Just be sure to keep an eye on them to ensure they don&#039;t burn on the bottom.  Lower the temp as needed to finish off the cooking). Turn the heat down as needed to prevent burning.  The batter will begin to rise and bubble on top. After several minutes when the tops are cooked and the classic pores/holes are present with the bottoms lightly browned, your crumpets are done. Note: You can either remove the rings and flip the crumpets over to cook the other side for another minute or two until golden or remove them from the rings and toast the crumpets. (See blog post for more info on this.)

Serve the crumpets immediately slathered with butter, jam, golden syrup or honey. To reheat later toast them in the toaster. Can also be frozen, thaw first before toasting.  (Crumpets are eaten whole/open-faced and are not sliced in half horizontally.)

NOTE:&nbsp; Regarding how long to let the batter sit before using:&nbsp; It's ready after 30 minutes but letting it rest a bit longer will give you an even higher rise and a lighter texture (see blog post for side-by-side comparison pics).&nbsp; And more bubbles means more of those classic holes in your crumpets.&nbsp; Try both and see which you prefer. Both are excellent.

Authentic Homemade English Crumpets

Crumpets are about as British (and delicious!) as it gets.

Topping options: Jam, honey

Place 1 cup bread flour, 1 cup all-purpose flour, 1 tablespoon active dry yeast, 1 teaspoon granulated sugar, 1 teaspoon kosher salt, and 1/2 teaspoon baking soda in a large bowl and whisk to combine. 

Heat 1 1/4 cups whole milk and 3/4 cup of the water in a small saucepan over medium heat until tepid to the touch (around 110ºF), about 1 1/2 minutes. Keep a close eye — overheating the mixture can kill the yeast. 

Make a well in the center of the flour mixture and pour in the warmed milk and water mixture. Whisk, starting from the edge of the well, until a batter has formed to a consistency that is slightly thicker than heavy cream. Add 1 teaspoon apple cider vinegar and the remaining 2 tablespoons water, and whisk to combine. 

Run a clean damp dishcloth under hot running water, then wring it out. Cover the bowl with the wet towel and let sit in a warm place until the mixture has risen significantly (at least doubled in size) and has a bubbly, foamy surface, about 1 hour. 

Give the mixture a quick stir with a large spoon. Place 1 tablespoon canola oil in a small bowl. Using a pastry brush dipped in the oil, lightly grease a griddle or large nonstick skillet, then wipe off any excess with a paper towel. Place the griddle over medium heat. Liberally grease 4 English muffin, pancake, or all-purpose baking rings if they are metal and not nonstick (the rings should be 3 to  3 1/2-inches diameter and about 1-inch tall). Place the rings on the griddle to heat for about 1 minute.

Pour 1/2 cup of the batter into each ring. Reduce the heat to medium-low and let cook slowly until bubbles form and pop around the edge to create small holes. After 6 to 7 minutes, the center bubbles should pop and the crumpets will pull away easily from the ring (the surface will still be a little tacky). Using tongs, carefully remove the rings. Using a spatula, flip the crumpets and until lightly golden in spots, about 1 minute more. 

Transfer to a cooling rack. Once rings are cool enough to handle, repeat the process for 2 more batches, greasing the rings before each batch. 

When ready to serve, toast the crumpets in a toaster or toaster oven until crisp and a deeper golden-brown on both sides, about 4 minutes. (Alternatively, you can toast the crumpets under a broiler for about 2 minutes per side.) Spread with 1 tablespoon of butter and a topping of your choice, if desired.

It doesn&#x27;t get much simpler than a no-knead, no-oven recipe and my No-Knead Homemade Crumpets recipe is just that.

No-Knead Homemade Crumpets Recipe (No Oven Needed)

(11 1/4 ounces 319 grams) all-purpose flour

yeast

(8floz/225 milliliters) milk, (warm)

(8floz/225 milliliters) water, (warm)

vegetable oil

In a large bowl, add the flour, yeast, baking soda, salt, and sugar. Add the yeast and salt on separate sides of the bowl then you can whisk together (salt directly on yeast can kill it).

In a separate jug, combine the warmed milk and water. (If you are using dried active yeast you sponge it in this liquid, stir it through and allow to stand for about 5 minutes.)

Make a well in the center of the dry ingredients and pour in the liquids. Whisk from the center outwards until the consistency of a thin batter and there are no lumps. Cover with cling wrap and a tea towel and set aside for a minimum of 1 hour, until bubbles form on the surface (the batter can be refrigerated now if you wish to cook the crumpets off later).

To cook the crumpets, grease 4 10cm metal rings with vegetable oil. Wipe a little oil around a large non-stick frying pan or iron skillet and place over medium-low heat. Arrange the rings in the frying pan. Once hot, spoon the batter into each ring until 1/2 way full.

Cook for 6-8 minutes, or until little bubbles appear on the surface. Once the bubbles have burst and the crumpets are dry on top, use tongs or a spatula to carefully lift off the rings and flip over the crumpets. Cook for 2-3 minutes on the other side.

Re-grease and reheat the rings and pan before cooking the next batch. Repeat the process until all of the batter has been used and you've made roughly 10 crumpets.&nbsp;

Serve the crumpets warm with butter.&nbsp;

Cover and store at room temperature in an airtight container for 3 days or in the freezer for up to 6 weeks.

No-Knead Homemade Crumpets (No Oven Needed!)

If you’ve ever wanted to know how to make crumpets, this is the recipe for you. Perfectly soft and spongey with all those signature holes to soak up all the butter, this recipe for homemade crumpets will become a breakfast favourite.

Homemade Crumpets

Dry ingredients: In a large bowl, without the yeast and salt touching directly, combine the flour, sugar, salt, yeast and bakind soda.

Make the batter: Add the water and use a handheld electric beater to beat the mixture for 1 full minute. Start on low-meidum so that it doesn&#039;t splatter, working up to medium-high.

Rest the batter: Cover the bowl with a clean tea towel or plate and sit it in a warm place for 30-45 minutes. It should look a little frothy on top by the end but won&#039;t rise much.

Prep the crumpet rings: Grease the inside of 3-4 crumpet rings with a little butter then dip them in flour and tap off any excess.

Heat the pan: Heat a large, non-stick, flat bottomed frying pan over med-high heat. Let it heat for a couple of minutes until it feels hot when you hover your hand over the top.

Cook (stage 1): Place 2-3 of the crumpet rings into the pan and tip about 1/4 cup of batter into each one. Let them cook for 5-6 minutes until there is a good ring of dry batter and bubbles all burst around the edge of the crumpets.

Cook (stage 2): Turn the heat to low-med and cook for a further 5-6 minutes until all the bubbles have popped and he crumpets look dry all over (once dry, no more bubbles will pop)

Flip &amp; finish: Remove the rings and flip the crumpets for 2-3 seconds - just enough to seal the top, not colour them. Remove them from the pan and allow to cool.

Clean the rings and re-grease and flour. Start again from step 7 for the remaining batter.

Toast &amp; serve: Always toast crumpets until golden before serving. If you&#39;re serving them immediately, just leave them in the pan after you&#39;ve flipped them until the tops are golden. If serving another time, I find a toaster is the easiest way to get them nice and golden on the top and bottom but a broiler (overhead grill) works too.

Make your own fluffy crumpets for breakfast or brunch. They're well worth the effort and go down a treat with a slathering of butter

2½ tsp dried yeast

tbsp unsalted butter, melted

2tsp sea salt

plain flour

½ tsp baking powder

vegetable oil, to grease

Stir together the yeast and 240ml warm water in a bowl and leave to stand for 5-10 mins. Add the warm milk, butter, salt and sugar, then tip in the flour and stir until smooth. Leave to stand for 30 mins.

Dissolve the baking powder in a little water, then leave to rise for 20-30 mins.

Oil a heavy-based frying pan with a little vegetable oil and heat over medium-low heat. Lightly oil four 9cm crumpet rings. Spoon batter into the rings so it comes halfway up the sides. Reduce heat to low, cover with a lid, or an upturned deep frying pan to give the crumpets space to rise. Cook until the tops look dry, about 10-12 mins.

Flip them over and cook for 5 mins until golden and firm. Repeat with the remaining batter. Serve toasted with butter or topped with cheese, melted under the grill.

Crumpets are small, round griddled breads that are thin with a spongy texture

1. Whisk together the milk, flour, yeast and sugar. Once combined add half the water and beat into the batter, continue to add more water until the batter is thick and smooth. Stop adding water once it reaches the consistency of thick cream. Cover with cling film and leave in a warm draft free place until foaming – about 1, up to 2 hours.

2. Whisk the salt and baking powder into the batter then heat a heavy based frying pan on the stove to hot but not smoking.

3. Dampen kitchen paper with a little oil and grease the base of the pan and a crumpet (or pastry) rings measuring 3″x 1 ½” (8 X 3.75cm) approx. If you don’t have any pastry or crumpet rings then use a small, washed food can to the same measurements.

4. Place one ring in the heated pan, add enough batter to fill just below the top of the ring. Cook for five minutes when there should be many tiny holes on the surface and the crumpet is setting. Flip the crumpet over and cook for another two – three minutes.

5. Repeat with the remaining batter until used up. Rest the crumpets on a wire rack until cool and reheat in a toaster or under the grill before serving. Serve with lots of butter and/or jam.

Creating a sweet and speedy brekky is possible! Better yet, it starts with the humble crumpet.

Air fryer custard-stuffed crumpets recipe

(2/3 cup) bought vanilla custard

square crumpets

Golden syrup, to serve

Step 1

Pour 2 tbsp vanilla custard onto the top of each crumpet. Use a knife to spread and slowly press the custard into the crumpet holes.

Step 2

Place 2 stuffed crumpets in the air fryer basket. Cook at 180C for 10 minutes or until the crumpets are golden. Repeat with the remaining crumpets and custard.

Step 3
