Easy Crustless Spinach and Feta Pie is savory and delicious filled with spinach, Feta and Asiago cheese, dill and scallions. Perfect to bring to a potluck!

Easy Crust-less Spinach and Feta Pie

spinach

scallions (chopped)

tbsp chopped fresh dill

parsley

reduced fat crumbled Feta

tbsp grated Asiago cheese (or Parmesan, Romano)

white whole wheat flour (Bob's Red Mill)

tsp baking powder

fat free milk

olive oil

eggs (beaten)

tsp kosher salt

pepper

cooking spray

Preheat oven to 400F°.

Lightly spray a pie dish with oil.

Mix spinach, scallions, dill, parsley, feta cheese, and spoon into the pie dish.

Sift flour and baking powder in a medium bowl.

Add remaining ingredients to the bowl and blend well. Pour into pie dish.

Bake 28 to 33 minutes or until knife comes out clean from the center. Let it stand at least 5 minutes before serving. Cut into 6 slices.

This is my go to recipe for spinach pie. I confess, I often use more eggs (to use them up) and it's delicious every time!

It was delicious &amp; so healthy. I used 1/2 of the salt &amp; of all things, forgot to put in the asiago cheese! I shredded it put it on top &amp; stuck back in the oven for a minute. Thank you this recipe, I’ll be making it again :0)

I made the spinach and feta pie and based on the comments, I added a little seasoning in the spinach mix to my preference(garlic powder, onion powder, a little extra salt and pepper). Also, I only had 10oz of fresh spinach vs the 10oz frozen spinach this recipe calls for so I wilted it in a skillet first.

All in all, I think I could have put a little more seasoning and maybe even some crushed red pepper. It was good just missing a little oomph.

We were DELIGHTED!  Delicious and VERSATILE.  We ate it as a main but plan to serve as an appetizer in squares or thin wedges as part of a mezze. This one came together quickly at the end of a long day; we used the baking time to get the sides ready: a tomato, cucumber, and red onion salad and bulgar for the starch.  BRILLANT! I love spinach pie, and wish to NEVER bring phyllo dough into  my home. 

This recipe is a SUPER lightened up no fail version! 
I did substitute self rising flour as I don't bake and had that on hand to make a recipe for a guest, worked wonderfully!

I was disappointed in this. I made it with the alternate cheese suggestion of Parmesan, Romano, and found it to be very bland. The taste of the scallions didn’t even come through, and the dill was a bit over powering. I likes the premise so may try this with other cheeses and herbs, such as smoked Gouda or smoked Mozzarella, and maybe basil rather than dill.

This simple recipe is full of fantastic flavors! I especially like the fresh dill! I definitely will be making it again!

I love this! I used to make a great spinach pie but it was so heavy with the full crust and so much cheese. This is perfect. I also used to make a pepper pie. I think I'm going to try substituting peppers next time. Thanks again for all of your great recipes.

Tasteless slop. Followed the instructions to the T, it's disgusting, a sloppy tasteless nightmare. Will quickly make a salad to salvage my dinner.
