Roasted chicken marinated in a fantastic Cuban Mojo marinade! it’s citrusy, garlicky, with fresh lime flavours and cilantro. Packs some serious flavours!

Baked Cuban Mojo Chicken

extra virgin olive oil

cilantro leaves (lightly packed)

orange zest

orange juice (fresh)

lime juice

oregano

cumin powder

mint leaves

garlic

salt

black pepper

orange

cilantro leaves (for garnish)

Place the marinade ingredients in a food processor. Blend until the cilantro is finely chopped.

Pour the marinade over chicken in a large bowl. Cover with cling wrap and marinade for 12 – 36 hours.

Preheat oven to 350°F.

Place chicken in a baking pan, and scrape in residual marinade in the bowl. Place thighs skin side DOWN. Add orange wedges, if using.

Bake chicken for 30 minutes. Remove and turn chicken. Spoon over pan juices.

Bake for a further 20 minutes or until the skin is nicely browned. Rest for 5 minutes then serve!

¼ pounds boneless skinless chicken (cut into 1 ½ inch pieces)

Add ¾ teaspoons of salt and ½ teaspoon of black pepper and stir. Add the chicken and allow it to marinate for at least 20 minutes and up to 1 hour.

Mango salsa: while the chicken is marinating, prepare the salsa. Combine the ingredients in a medium bowl and stir. If the mangoes aren't super sweet, you can drizzle a little honey in to amp up the flavor. Refrigerate until ready to serve.

Drain the chicken from the marinade and add ⅓ of the chicken to the skillet and let cook for 3-5 minutes or until the chicken is caramelized on the outside and cooked all the way through. Remove to a plate. Add additional oil if needed. Repeat with the remaining chicken.

Assemble: Place the quinoa or white rice in the bowls. Top with desired amount of mango salsa, black beans, and cooked chicken. Drizzle with lime juice and top with chopped cilantro if desired, serve immediately.

This Cuban butter roast chicken is tender, juicy, and super flavorful.  It comes out perfect every single time!

Cuban Butter Roast Chicken

Preheat your oven to 400 degrees F.

Tie the chicken legs together with kitchen twine and tuck the wings underneath the breast.

In a small bowl, combine the softened butter, garlic, cilantro, lemon, oregano, cumin, sazon, adobo, salt, and pepper. Mix until well combined.

Spread the butter mixture all over the chicken. Underneath the skin as well.

Sprinkle a little extra salt over the chicken and bake uncovered for 1 hour and 10 minutes or until a thermometer inserted into the thickest part of the thigh registers 165 degrees F.

Once the chicken is done cooking, allow it to sit for 8-10 minutes before slicing into it. Serve it with the pan drippings, and enjoy!
