It doesn&#x27;t get any easier than these delicious keto cucumber appetizers! Fresh cucumber slices with cream cheese and everything bagel seasoning. The perfect low carb snack for hot summer days.

Everything Bagel Cucumber Bites

poppy seeds

sesame seeds

garlic

onion

tsp crushed caraway seeds

salt

cucumber

cream cheese (softened)

butter

tbsp Greek yogurt

garlic powder

tsp salt

In a small bowl, whisk all the ingredients together. Set aside.

Everything Bagel Seasoning:

Use a sharp knife to peel alternating strips of skin from the cucumber. Slice the cucumber crosswise into 1/4 inch thick slices and place on a platter.

In a medium bowl, beat the cream cheese, butter, yogurt, garlic powder, and salt until well combined and smooth.

Attach a star shaped tip to a piping bag and fill the bag with the cream cheese mixture. Pipe decoratively on top of the cucumber slices.

Sprinkle each slice with everything bagel seasoning and serve.

Cucumber Bites with Sun Dried Tomato Spread

hemp hearts ((optional, for garnish))

basil leaves ((optional, for garnish))

Make the Sun Dried Tomato Spread. This can be made in advance and kept in the fridge for up to several days.

When ready to serve, cut the cucumber into slices. Using a 1/4 tsp measuring spoon like a melon baller, take out the seeds of each slice. Don't scoop all the way through, you want the bottom of the slice to be intact so your filing will sit inside.

Fill each cucumber "cup" with the sun dried tomato spread (you can use a spoon or place the mixture into a pastry bag and pipe the filling in.

Garnish with hemp hearts, tiny basil leaves or both (optional)

Thank you for the cucumber bites recipe YUM! I made them for an outdoor party I attended and they were so crisp and refreshing! Many of the guests were vegan (I knew that ahead of time) so I was looking for something everyone could enjoy. When I had first arrived and added my plate to the table, I did hear some guests think it was a salmon spread, so I added a little tag to the plate with the the recipe name and ingredients. Anyone bringing these yummy treats somewhere might want to do the same in advance. :) Thanks again!
